My overnight Fruit Salad recipe is jam-packed with fruit and sweetened up with marshmallows and a luscious creamy lemon custard sauce. Get a jump on meal prep; this make-ahead salad recipe gets better as it sets!

2 eggs
1/4 cup fresh lemon juice ((from 2-3 lemons, see note 1))
1/4 cup granulated sugar
1 cup heavy cream
1 cup red seedless grapes (halved)
1 cup canned cherries (drained (see note 2))
1 cup canned pineapple (chunks, drained and cut into bite-sized pieces)
1 cup mandarin oranges (drained)
1 cup mini marshmallows ((see note 3))
1 banana (sliced)

Steps:

  • In the bottom of a double boiler, bring 1 inch water to simmer. Combine eggs, lemon juice, and sugar in top of double boiler and cook until thickened, about 10 to 12 minutes. Remove from heat and cool completely.
  • Using a standing mixer or electric hand mixer, whip heavy cream until stiff peaks form. Fold in cooled custard sauce until combined.
  • In a large bowl, add grapes, pineapple, oranges, cherries, marshmallows, and banana. Pour cream sauce over and stir to combine. Refrigerate at least 8 hours or up to 24 hours before serving.

Family Favorite 24 Hour Fruit Salad image

This old-fashioned fruit salad can be made any time of year. Cool, creamy, and fluffy, you'd never guess it's made with canned fruit. The combination of fruit gives it a tropical feel. Sweet and creamy, the homemade custard is the perfect base for this fruit salad. Marshmallows soak all the goodness from the custard sauce....

Number Of Ingredients 14

1 can(s) Dole pineapple chunks in 100% pineapple juice drain and reserve 4 tablespoons of syrup (20 oz)
6 slightly beaten egg yolks (remember to separate egg yolk from whites) beat yolks with a fork
4 Tbsp sugar
4 Tbsp apple cider vinegar
2 Tbsp butter or margarine (I always use Blue Bonnet margarine)
2 dash(es) salt
1 can(s) Delmonte 100% juice fruit cocktail, drained (15 oz)
1 can(s) Dole tropical mixed fruit in passion fruit, drained (15.25 oz)
4 c tiny marshmallows
2 c prepared Dream Whip topping (1 packet makes 2 cups see directions below)
INGREDIENTS FOR WHIPPED TOPPING
1 pkg Dream Whip
1/2 c cold milk
1/2 tsp vanilla extract

Steps:

  • 1. Drain pineapple chunks in a colander over a small bowl and reserve 4 tablespoons of pineapple syrup.
  • 2. To make custard for fruit salad: In a small heavy saucepan, combine reserved pineapple syrup, egg yolks, sugar, vinegar, butter or margarine, and salt. *Note: as a rule, I used apple cider vinegar*
  • 3. Cook and stir over low heat, whisking or stirring constantly, for about 6 minutes or until the mixture thickens slightly and coats a metal spoon. It may take a little longer than 6 minutes, but when it coats the spoon it is ready. (Yes you will smell the vinegar, but don't worry, the custard will taste delicious). Cool to room temperature.
  • 4. In a 3 quart bowl, combine pineapple chunks, fruit cocktail, mixed fruit, and marshmallows.
  • 5. Pour custard over; mix fruit mixture gently. (I generally make this up in a glass rectangular baking pan.)
  • 6. In a large bowl, to make the whipped cream do the following: Mix 1 envelope of Dream Whip, 1/2 cup cold milk, and 1/2 teaspoon vanilla. Beat on low speed until blended. Then beat on high speed for 4 minutes until topping thickens and form peaks.
  • 7. Fold whipped cream into fruit mixture. Cover with some Saran Wrap and refrigerate 24 hours or overnight. Makes 10 to 12 servings.

This fabulous smooth and velvety sweet fruit salad is a must on any holiday table.

Number Of Ingredients 10

can pineapple tidbits: 1 (20 ounce) can
mandarin oranges: 2 (15 ounce) cans
eggs: 3
flour: 3 tablespoons
sugar: 3/4 cup
lemon juice: 1 tablespoon
miniature marshmallows: 2 cups
halved red grapes: 1 cup
heavy cream: 1 cup
powdered sugar: 2 tablespoons

Steps:

  • Drain the juices from the pineapple tidbits and the mandarin oranges. Measure to make 1-1/3 cups; discard remaining juice. If you need to add more liquid to get to 1-1/3 cups, add some water.
  • Combine the eggs, flour, sugar, and the 1-1/3 cups juice in a heavy saucepan. Cook over medium heat, stirring constantly with a wire whisk, until thick and boiling. This should take about 10 minutes.
  • Remove the saucepan from the heat and whisk in the lemon juice and 1/2 cup of the mini marshmallows until the marshmallows are melted. Cover the pan and chill in the fridge until cold, about 4 hours. I whisk the custard once while it's chilling to make sure it's completely smooth.
  • When the custard is cold, fold in the pineapple tidbits, remaining marshmallows, and grapes, if using.
  • Then beat the cream with the powdered sugar until stiff. Fold into the salad. Then fold in the mandarin oranges.
  • Spoon the salad into a serving bowl, cover, and chill for 24 hours before serving.

This is a wonderful salad that is easily adaptable, and can be served as a salad with a holiday meal or as a dessert. The original recipe called for canned fruit cocktail, but I have modified it from that. I'm also allergic to pineapple, so I either pick it out or substitute more of the other fruits instead. All the fruits are really to taste. I could eat myself sick on this stuff, it is so good.

1 cup whipping cream, whipped
1 (3 ounce) box instant vanilla pudding
1 3/4 cups milk
1 (8 ounce) can mandarin oranges, drained DRY (very important)
1 (20 ounce) can pineapple chunks, drained DRY
1 cup green grape, halved
1 cup red grapes, halved
1/2 cup maraschino cherry
1/2 cup marshmallows

Steps:

  • The canned fruit needs to be completely dry, so recommend starting this 2 days in advance - draining the fruit overnight on the first day.
  • On the day before you need the salad, whip the cream. You can sweeten it with a bit of sugar if desired, but it's not needed.
  • Mix the pudding mix and milk together until thick.
  • Fold the whipped cream and pudding together.
  • Fold the fruits and marshmallows into the cream and pudding mixture.
  • Refrigerate overnight.

I found several 24 Hour Salad recipes, but none are exactly like the one I make. I'm posting it here for safekeeping...it's a family favorite. It has just the right amount of tangy, sweet, and savory. Enjoy!

1 large head of lettuce (rinse, dry well, and tear into bite size pieces)
1 large red onion, thinly sliced
1 lb cooked bacon, diced
1 large cauliflower, cut into bite size pieces
1/4 cup sugar
2 cups mayonnaise (NOT Miracle Whip style dressing)
1/2 cup parmesan cheese
salt and pepper, to taste
frozen peas

Steps:

  • Layer the first four ingredients in the order listed above, starting with lettuce on bottom.
  • Mix sugar, mayo, cheese, and salt/pepper.
  • Spoon mayo mixture on top of layered ingredients.
  • Refrigerate and then toss AFTER 24 hours.
  • I like to add frozen peas for color. *Prep time is mostly cutting veggies and cooking bacon, cooking time is refrigeration time.*.

This salad ends up with a wonderful custard like flavor to accent the fruit. Those cooked eggs and sugar is what gives it that flavoring.

1/2 cup(s) lemon juice, not concentrate
1/2 cup(s) water
1/4 teaspoon(s) salt
1 cup(s) whipped cream
3 cup(s) diced pineapple
2 cup(s) seeded cherries
1 1/2 cup(s) miniature marshmallows
2/3 cup(s) blanched almonds, chopped

Steps:

  • Beat eggs and add blended sugar and flour. Add juice, water and salt and cook until thick and creamy. Cool and add cream. Mix remaining ingredients and add dressing. Chill 24 hours. Several times during the 24 hours stir salad with a fork. Serve on lettuce leaf, topped with a cherry.
