TWO-INGREDIENT PEANUT BUTTER FUDGE
There's no need to go through the complicated candy-making process to enjoy homemade fudge anymore! This fudge recipe uses just a can of peanut butter and a can of frosting to make a fudge-like treat in a snap.

- Line an 8x8-inch baking pan with foil, allowing foil to extend over edges of pan. Coat foil with nonstick cooking spray. In a medium microwave-safe bowl place peanut butter and frosting. Microwave on 100% power (high) for 45 to 60 seconds or until softened, stirring once. Stir until smooth. Spoon into prepared pan. Cover and chill at least 30 minutes or up to 24 hours. Use foil to lift uncut fudge from pan. Cut into 1-inch pieces. To store, place in an airtight container. Chill up to 2 weeks or freeze up to 2 months.

- LINE AN 8X8" BAKING PAN WITH ALUMINUM FOIL, WITH 3-4" OF FOIL HANGING OFF EITHER SIDE. AND SET ASIDE.
- PLACE THE ALMOND BARK, BROKEN INTO LARGE CHUNKS, INTO A LARGE MICROWAVABLE-SAFE BOWL. MELT BARK ON HIGH FOR 60 SECONDS, THEN STIR. MELT FOR ANOTHER 60 SECONDS AND STIR.
- CONTINUE TO DO THIS AT 30 SECOND INTERVALS UNTIL BARK IS SMOOTH AND COMPLETELY MELTED (IT TOOK ME ABOUT 3 MINUTES TOTAL, BUT IT WILL DEPEND ON YOUR MICROWAVE).
- SCOOP THE ENTIRE CONTAINER OF PEANUT BUTTER INTO THE BOWL OF MELTED BARK AND STIR UNTIL PEANUT BUTTER IS COMPLETELY INCORPORATED AND MIXTURE IS SMOOTH. POUR MIXTURE INTO PREPARED PAN AND PLACE IN THE FRIDGE FOR 1-2 HOURS OR UNTIL SET.
- REMOVE FUDGE FROM FRIDGE AND USING THE ALUMINUM FOIL HANGING OVER EACH EDGE, LIFT THE FUDGE OUT OF THE PAN.
- CUT FUDGE USING A SHARP KNIFE (FOR SMOOTH CUTS, RUN YOUR KNIFE THROUGH HOT WATER BEFORE EACH CUT) INTO 1X1" PIECES.

This easy peanut butter fudge is just 2 ingredients. No candy thermometer needed. The fudge comes out sweet, creamy and peanut buttery.

- Line an 8 x 4 inch loaf pan with parchment paper.
- In a large mixing bowl, add white chocolate chips. Heat chocolate and stir with a spatula until chocolate is completely melted, liquid and smooth. This can be done either with the microwave or on the stove using the double boiler method. If using microwave, heat at 1 minute intervals, stirring in between. I found it easier to melt the chocolate using the double boiler method but I was also able to do it in the microwave.
- If using double boiler method, turn off heat but keep your pot on the stove. Stir in the peanut butter and mix with a whisk until batter is smooth and uniform in color. If you are using the microwave method, add in the peanut butter and quickly whisk in while chocolate is hot. Whisk until batter is smooth and uniform. (If you make this recipe with regular peanut butter, put it into a bowl and heat it for about 30 seconds so it is soft and easy to mix before adding it to the chocolate. You don't need to do this if you are using natural peanut butter and you don't need to do this if you are cooking this on the stove.)
- Pour fudge batter into prepared loaf pan. Smooth the surface with spatula.
- Place pan into freezer for about 30 minutes to 1 hour to set.
- Once fudge is set, remove from freezer and it let it soften a few minutes at room temperature before cutting with a sharp knife. Cut fudge into approximately 1 inch squares. Store uneaten fudge in an airtight container.
