This is an example of a typical 1950s meatloaf and was adapted from the recipe printed in the Betty Crocker's Picture Cook Book and featured on Foodtimeline.com. Combining meat and veal bound by eggs and breadcrumbs, this meatloaf is seasoned with sage and was usually served with mashed potatoes and canned green beans.

1 lb ground beef (or veal)
1/2 lb ground lean pork
2 cups bread crumbs
1 egg, beaten
1 ½ cups milk
4 tbsp minced onion
2 tsp salt
1/4 tsp pepper
1/4 tsp dry mustard
1/8 tsp sage

Steps:

  • Combine all the ingredients using your hands and preheat the oven to 350˚F.
  • Transfer them into a greased 9x5x3-inch loaf pan. If you wish, spread 3 tbsp of ketchup over the top.
  • Bake for 90 minutes. Cool slightly, then remove from the baking pan and slice. Serve hot or cold.

2 large eggs
1 medium yellow onion, cut into quarters
1 medium carrot, peeled and ends cut off, cut into large chunks
1 stalk celery, cut into large chunks
1 clove garlic, peeled
1 ½ pounds ground meat ( (preferably a combination of beef, pork, veal, or turkey 93/7))
¾ cup dried bread crumbs
¼ cup chopped fresh parsley, ( additional for garnish if desired)
¼ cup milk
¼ cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
½ teaspoon coarsely ground black pepper
¼ cup ketchup
2 tablespoons packed brown sugar
1 tablespoon red wine vinegar

Steps:

  • Preheat oven to 350ºF. Spray a 9" by 5" loaf pan with nonstick cooking spray.
  • In a large bowl, lightly beat two eggs.
  • Place onion, celery, carrot, and garlic in a food processor and pulse until finely chopped. Add to bowl with eggs.
  • Add ground meat, bread crumbs, parsley, milk, 1/4 cup ketchup, Worcestershire, salt, and pepper. Mix to combine. Go ahead and use your hands. Don't over mix; ingredients should be just combined. Press lightly into prepared pan.
  • In a small bowl, combine 1/4 cup ketchup, brown sugar, and red wine vinegar. Brush meatloaf with half of ketchup mixture and bake for 35 minutes.
  • Brush with remaining ketchup mixture; return to the oven and bake for another 55 minutes or until middle of the loaf reaches at least 165ºF when checked with an instant-read thermometer. Internal temperature will continue to rise as the meatloaf rests.
  • Let meatloaf rest 15 minutes before removing from pan or slicing.

1 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 garlic cloves, finely chopped or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup chili sauce or 1/2 cup barbecue sauce

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.
  • Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 160°F.

1 pound lean ground beef
1 clove garlic or 1/8 tsp garlic powder
1 small onion
2 slices of bread with crust
1/4 cup milk
2 teaspoons Worcestershire sauce
1 teaspoon fresh or 1/4 tsp dried sage leaves
1/4 teaspoon salt
1/4 teaspoon ground mustard (dry)
1/8 teaspoon pepper
1 egg
1/3 cup ketchup, chili sauce, or bbq sauce

Steps:

  • Heat oven to 350 degrees Fahrenheit. Break up the beef into small pieces in a large bowl, using a fork or spoon. Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tbsp. Wrap remaining piece of onion, and refrigerate for another use. add the garlic and onion to the beef. Tear the bread into small and add to beef mixture. Add the milk, Worcestershire sauce, sage, salt, mustard, pepper, and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed. Place the bee mixture in the ungreased baking pan. Almost any size pan with work; just be sure the pan has sides on it to catch the juices that will accumulate while the meatloaf bakes. Shape the mixture into an 8x4-inch loaf in the pan, and spread ketchup over the top. Bake uncovered 50-60 minutes or until beef in center of the loaf is no longer pink. A meat thermometer inserted in the center of the loaf should read 160 degrees. Let the loaf stand 5 minutes, so it will be easier to remove from the pan. cut the loaf into slices.

1/2 lb ground lean pork
2 cups breadcrumbs
1 egg, beaten
1 1/2 cups milk
4 tablespoons minced onions
2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon dry mustard
1/8 teaspoon ground sage

Steps:

  • Mix ingredients thoroughly.
  • Pack into greased 9x5x3" loaf pan.
  • Bake in 350 degree oven for 1 1/2 hours.
  • Serve hot or let cool and chill and serve cold.
  • Other suggestions: add 3 cloves minced garlic; spread bacon slices over the top before cooking and/or 3 Tbsp catsup or barbecue sauce; substitute 1 Tbsp horseradish and 1 Tbsp for the mustard and sage; substitute 1 cup sauerkraut for 1 cup breadcrumbs and add 1/2 tsp dill weed to taste; try it with other herbs/spices or combinations added such as curry powder, cayenne and cumin, or oregano and basil.

1 cup Progresso™ plain bread crumbs
1 teaspoon Italian seasoning
1/2 cup ketchup
1/2 cup milk
1/4 cup ketchup

Steps:

  • Heat oven to 350°F. In large bowl, mix Meatloaf ingredients well. Press mixture in ungreased 8x4-inch loaf pan. Bake 40 minutes.
  • Remove from oven. Spread 1/4 cup ketchup evenly over top. Bake an additional 15 to 20 minutes or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes before serving.
