10 Minute Peanut Brittle image

This 10 Minute Peanut Brittle is buttery and crunchy and takes only 10 minutes to make in the microwave. It's so delicious and it's a great candy to make for the holidays. I make several batches of this easy candy and gift it.

Provided by Cindy Gibbs at My Country Table

Time 10m

Number Of Ingredients 7

1 cup granulated sugar
1/2 cup light Karo, or other corn syrup
1/2 teaspoon salt
1 to 1 1/2 cups raw Spanish Peanuts
1 tablespoon real butter
1 teaspoon pure vanilla extract
1 teaspoon baking soda

Steps:

  • Lay a piece of parchment paper on a small cookie sheet or other small pan.
  • Combine sugar, salt and syrup in a large microwavable bowl. Make sure you mix both together so that all of the sugar is wet. Microwave on high for 5 minutes.
  • Remove bowl from microwave. Stir in the peanuts and mix to cover all of the peanuts with the syrup mixture.
  • Microwave on high for 2 minutes. Remove from microwave and mix well for about 30 seconds until the mixture is syrupy and the nuts start to turn slightly brown.
  • Microwave on high for 1 minute. Remove from microwave and add the butter and vanilla. Mix to combine. Add the baking soda and mix until the mixture becomes foamy.
  • Using a large spatula, work quickly, and spread the mixture onto one end of the parchment lined pan. Stop and immediately place the bowl in a sink and fill with hot water to soak.
  • Place pan in a cold place for approximately 10 minutes until candy has completely cooled. Slide the slab of candy into a storage bag and securely close bag. Using a knife handle, break the candy into pieces.
  • Store candy in a plastic bag or airtight container. Candy keeps well for a couple of weeks.

This candy is quick to make and works best if you know what wattage your microwave is set. If you don't know, do the cook top method but use a candy thermometer. You will love this recipe!

Number Of Ingredients 7

1 cup granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1-1/2 cups dry roasted peanuts or Spanish peanuts, shelled
2 tablespoons butter, cut into cubes
1 teaspoon baking soda
2 teaspoons vanilla extract

Steps:

  • Microwave Method: Spray baking sheet with cooking spray, set aside. Measure baking soda and place in small cup, add cubed butter and have vanilla ready. Lightly spray large glass mixing bowl and add first three ingredients, stir to combine. Microwave on high for 3 minutes, add peanuts and microwave 2 minutes more. Color of brittle should be a light amber. Stir in remaining ingredients. Mixture will expand when adding baking soda and butter/vanilla. Immediately spread mixture in greased baking sheet rotating sheet to smooth and spread mixture. Allow to harden 5 minutes. Break into pieces.
  • Cooktop Method: Lightly spray medium saucepan with cooking spray, cook first 3 ingredients over medium heat, stirring constantly until mixture starts to boil. Boil without stirring for 5 minutes until a candy thermometer reaches 310 degrees. Add peanuts and cook 2 minutes more or to 280 degrees. Mixture will be amber in color. Do not allow the mixture to burn. Remove from heat and add butter, baking soda and vanilla, stir to combine. Mixture will expand and change color. Pour mixture into greased baking sheet. Rotate baking pan to spread hot mixture to even layer. Allow to stand 5 minutes or until hardened. Break into pieces.

1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1/8 teaspoon salt
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Butter a rimmed baking sheet. Combine the sugar, corn syrup, peanuts, and salt in a 2-quart size microwave-safe mixing bowl. Place in microwave and cook on high for 8 minutes, stirring halfway through the cooking time. Stir the butter into the mixture and microwave on high for 2 more minutes or until the mixture just begins to brown. Remove the bowl from the microwave and stir in the vanilla extract and baking soda until the mixture is light and foamy. Spread the brittle on the baking sheet as thin as possible. Let cool then break into pieces. cook's notes Microwaves cook at different wattages. Adjust cooking time as needed based on your make and model.

Steps:

  • Coat a cookie sheet with nonstick cooking spray. Set aside.
  • Place the caramels in a bowl, and heat in the microwave for about 2 minutes, or until melted and bubbly. Some microwaves may take longer. Stir in the peanuts, and pour out onto the prepared baking sheet. Press as thinly as you can. Cool completely, then break into pieces.

This is a wonderful peanut brittle that is easy to make and wows everyone! Have all the ingredients for this recipe measured out and ready. This recipe requires that you react quickly. You do not have time to measure ingredients in between steps.

1 cup white sugar
½ cup light corn syrup
¼ teaspoon salt
¼ cup water
1 cup peanuts
2 tablespoons butter, softened
1 teaspoon baking soda

Steps:

  • Grease a large cookie sheet. Set aside.
  • In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
  • Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

This is a recipe I got a couple years back from Sandra Lee on Food Network. I use it every year and we love it. I use a 1000 watt microwave--if yours is slower or faster, adjust time.

24 individually wraped caramels (unwrapped)
1 cup dry roasted peanuts

Steps:

  • In microwave safe bowl, microwave about 2 minutes or till caramels are melted.
  • Stir till smooth
  • Fold in nuts.
  • Pour on a sprayed cookie sheet and with back of spoon spread as thin as possible.
  • Cool; break into pieces.
