2 garlic cloves, minced
1 (28-oz.) can crushed tomatoes
1/2 teaspoon kosher salt
1 teaspoon sugar
1/8 teaspoon fresh black pepper
1/4 teaspoon crushed red pepper flakes (optional)

Steps:

  • Heat a medium saucepan over medium-low heat. Add the olive oil to the pan, allowing it to warm for 1 minute, then add the garlic and sauté it for 2 minutes, stirring constantly, until it's golden brown and fragrant.
  • Add the crushed tomatoes, salt, pepper, sugar and crushed red pepper flakes (optional), stirring to combine. Simmer the sauce for 7 minutes, stirring occasionally, then season it with additional salt, pepper or sugar, to taste.

One 28-ounce can crushed tomatoes (see Cook's Note)
1 teaspoon granulated sugar, plus more as needed
Kosher salt and freshly ground black pepper
1/4 teaspoon crushed red pepper flakes, optional

Steps:

  • Heat a medium saucepan over medium-low heat. Add the oil and allow it to warm for 1 minute, then add the garlic and cook, stirring constantly, until golden brown and fragrant, 2 minutes.
  • Stir in the crushed tomatoes, sugar, 1/2 teaspoon salt, 1/8 teaspoon pepper and crushed red pepper flakes if desired. Simmer, stirring occasionally, until the flavors meld, 7 minutes. Season with salt, pepper or sugar to taste.

If you've got a little extra time, you can stew the marinara sauce a little longer for a deeper flavour, but regardless this recipe packs a healthy Italian punch.

1 tablespoon olive oil
1 small yellow onion, diced
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon crushed chillies (optional)
1 28 oz can crushed tomatoes
1/4 teaspoon sea salt
1/8 teaspoon black pepper

Steps:

  • Heat oil in a saucepan on medium heat. Add diced onion and cook on a low heat for 3-5 minutes until onions are translucent.
  • Add minced garlic and heat for 1 minute ensuring it does not burn. Add dried oregano, dried basil and crushed chillies and allow to heat for about 30 seconds until fragrant.
  • Add can of crushed tomatoes to the saucepan and stir to combine. (You could use diced tomatoes, but you might want to puree the sauce at the end because it will provide a more watery texture.)
  • Simmer on a low heat for 10 minutes and season with salt and pepper to taste.
  • Enjoy!

Use either Muir Glenn or Tuttoroso crushed tomatoes because they use a lower processing temperature in the canning process and therefore are fresher tasting than other brands. Recipe Notes: According to the chefs, grating the onions instead of chopping allows them to carmelize more quickly. The butter is used because saturated fats helps the onions stay sweet. Olive oil contains unsaturated fats that react with an enzyme in the onion that can result in a bitter taste. Using crushed tomatoes is preferable to other forms.
