Zucchini pasta with a simple garlic clam sauce. This delicious, easy, and healthy dinner comes together in less than 45 minutes! A lighter version of classic pasta with clam sauce.

2 tablespoons (30 mL) extra virgin olive oil
2 garlic cloves (minced)
2 medium shallots (minced)
pinch of red pepper flakes
2 (6-oz) cans minced clams, drained, with half the juice reserved
½ cup (120 mL) dry white wine (such as Sauvignon Blanc)
kosher salt
freshly ground black pepper
1½ lbs (0.7 kg) littleneck or manila clams (rinsed and scrubbed)
3 large zucchini (spiralized into thin noodles)
2 tablespoons finely chopped fresh parsley
2 lemons (quartered)

Steps:

  • Place a large saucepan over medium heat and add the olive oil. When the oil is simmering, add the garlic and shallots. Cook for 2 to 3 minutes or until the shallots are translucent. Add the red pepper flakes, reserved clam juice, and wine, and season with salt and pepper. Increase the heat to high, bring to a boil, then reduce the heat to low. Simmer until the sauce is reduced by about half.
  • Add the fresh clams to the sauce and cover. Steam for 7 to 10 minutes. Discard any clams that don't open after 10 minutes, then add the chopped clams. Stir in the zucchini noodles and 1 tablespoon of the parsley. Cook for 2 to 3 minutes or until the zucchini noodles are al dente.
  • Divide the pasta among bowls and garnish with the remaining parsley and lemon wedges.

I cannot order better white clam sauce in a restaurant. My boyfriend begs me to make this! Thanks Mom! Serve this dish with fresh garlic bread and a nice white wine. I promise this is a keeper and you won't like any other white clam sauce!

1 (16 ounce) package dry linguini
1 onion, chopped
6 cloves garlic, chopped
3 tablespoons olive oil
4 (6.5 ounce) cans minced clams
½ cup butter
salt and pepper to taste
2 tablespoons dry white wine

Steps:

  • Bring a large pot of salted water to a boil, add linguini and return water to a boil. Let linguini cook until al dente; drain well.
  • In a large skillet, saute the onion and garlic in olive oil until the onions are translucent. Drain the cans of minced clams, reserving half of the juice.
  • Stir the clams, reserved juice, butter, salt and pepper, and wine. Simmer the mixture for 20 minutes, until the sauce has reduced 1/3 and has thickened.
  • Spoon the clam sauce over the linguini and serve.

1 package (8 ounces) linguine
2 to 3 garlic cloves, minced
5 tablespoons butter
1/4 cup olive oil
1 tablespoon all-purpose flour
2 cans (6-1/2 ounces each) minced clams
1 cup shredded Monterey Jack cheese
1/4 cup minced fresh parsley

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet over medium heat, cook garlic in butter and oil until fragrant. Stir in flour until blended. Drain clams, reserving juice; set clams aside. , Gradually stir juice into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add the clams, cheese and parsley. Cook and stir until cheese is melted. Drain linguine; serve with clam sauce.

14 ounces dried linguine
12 littleneck clams, steamed
2 ounces crushed garlic
6 ounces garlic butter plus extra for bread, recipe follows
1/4 cup white wine
2 lemon wedges, juiced, plus 1 wedge, for garnish
1/2 ciabatta bread, toasted
1-ounce shredded Parmesan
Pinch minced fresh parsley leaves
1/2 teaspoon red pepper flakes
Melted unsalted butter
Lemon juice
Minced fresh garlic
Garlic powder
Onion powder
Crushed red pepper
White wine
Parsley

Steps:

  • Cook pasta in boiling water until al dente. Steam 12 littleneck clams and set aside. In a saute pan over medium heat, add crushed garlic and then add the garlic butter and wine. When butter starts to bubble, add clams and mix around until clams are coated. Add lemon juice, and toss to coat. Place pasta in a serving bowl, and top with the clam mixture.
  • Cut toasted bread into slices and brush with garlic butter. Garnish with Parmesan, parsley and crushed red pepper. Serve with a lemon wedge.
  • In a small bowl, combine all ingredients, to taste.

2 pounds clams in shell, scrubbed
1 (16 ounce) package spaghetti
2 tablespoons extra-virgin olive oil
1 clove garlic
¼ cup dry white wine
1 zucchini, cubed
10 zucchini blossoms, or more to taste
salt and freshly ground black pepper to taste
1 pinch red pepper flakes
1 bunch fresh parsley, chopped

Steps:

  • Soak clams in cold salted water for about 1 hour. Drain.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • While spaghetti is cooking, heat olive oil in a skillet and cook garlic for about 1 minute. Remove from the skillet. Add white wine and clams and cover. Cook until clams open, about 2 minutes. Remove clams from pot. Remove from shells, making sure to catch the liquid. Stir in zucchini and zucchini blossoms; season with salt and red pepper flakes and pour in clam juice. Cook until zucchini are soft, 7 to 10 minutes. When zucchini are almost soft, add clams and heat for 1 minute. Add drained spaghetti and parsley. Season with pepper.

I bought some zucchini at a farmers' market today. In the fridge, I had fresh mushrooms and decided on this recipe. It's a great way to enjoy garden vegetables of the summer season. This can easily be expanded for more servings.

2 tablespoons olive oil
1/2 tablespoon minced garlic
1/2 cup fresh mushrooms, sliced
1/2 cup zucchini, diced
1 teaspoon dried basil

1 cup cooked angel hair pasta (or pasta of choice)
salt and pepper

Steps:

  • -Saute minced garlic in 2 Tbsp olive oil for 2-3 min over med-high heat.
  • -Add mushrooms and zucchini, and saute for 5 minute.
  • -Add seasonings.
  • -Cook angel hair pasta according to package directions.
  • -Using tongs, add pasta to the vegetable mixture, and toss gently.

Steps:

  • Pile up 2 or 3 layers of paper towels on a work surface.
