Zucchini is so delicious when cooked in the air fryer. It comes out nice and browned in places without being too mushy in the middle, and it only takes 8 minutes.

Number Of Ingredients 4

2 small-to-medium zucchini
2 tsp. olive oil
1/4 tsp. salt
1/8 tsp. pepper

Steps:

  • Preheat air fryer to 400°F.
  • Trim the two ends off of each zucchini. Slice the zucchinis in half lengthwise, end to end. Slice into 3/4-inch slices.
  • Put zucchini slices in a medium bowl with the olive oil, salt, and pepper. Toss to coat.
  • Transfer to the air fryer basket and toss to get them into a single layer.
  • Cook for 5 minutes. Check and see if they're browned and slightly softened in the middle. If not, toss and then cook another 2-3 minutes.

Zucchini in the air fryer is a delicious way to enjoy the fresh summer veggie. The air fryer allows you to create crispy chips and fries that are perfect for dipping and sharing with your family and friends. Our easy, quick recipe makes the perfect snack or side dish that you can enjoy or serve any time!

• Zucchini 3 small to medium
• 2 tablespoon olive oil or cooking oil spray
• Pepper ¼ tsp
• Garlic powder ¼ tsp
• Salt ¼ tsp
• ½ lemon

Steps:

  • First, wash and cut the zucchini either into 1/8" thick slices or lengthwise into 1 inch strips. Both methods work fine. But if you want to dip into a chunkier sauce, we recommend making them into chips. Both can dip well into a smooth sauce.
  • In a large bowl, add the zucchini, oil, salt, and pepper and then mix well.
  • Once the zucchini is ready, preheat the air fryer to 400F or 200C.
  • Carefully transfer the zucchini into the air fryer basket and then air fry the zucchini for a total of 8 to 10 minutes.
  • If you make them into strips, they will take a bit longer. They should be browned and slightly crispy on the outside when done.
  • Once cooked carefully, remove the zucchini and place them in a bowl to sprinkle it with a freshly squeezed lemon juice. Serve with your favorite dips and sauces.

This version of bulgogi is made with a no-fuss sweet and salty marinade and cooked to perfection in your air fryer, for an ideal weeknight meal. The recipe calls for zucchini but you can make it your own by using other vegetables - like mushrooms and onions! - to switch it up.

1/4 cup soy sauce
1/4 cup sugar
2 tablespoons mirin
2 tablespoons toasted sesame oil
3 cloves garlic, grated
Kosher salt and freshly ground black pepper
1 large zucchini (about 10 ounces), halved lengthwise and cut on the bias into 1/2-inch pieces
1 pound thinly sliced ribeye or other thinly sliced beef (see Cook's Note)
Toasted sesame seeds and white rice, for serving

Steps:

  • Preheat a 6-quart air fryer to 400 degrees F.
  • Whisk the soy sauce, sugar, mirin, sesame oil, garlic, 1/2 teaspoon pepper and 2 tablespoons water together in a large bowl until most of the sugar is dissolved and the marinade is homogenous. Set aside 1 tablespoon of the marinade in a medium bowl, add the zucchini and 1/4 teaspoon salt and toss well until coated. Add the beef to the remaining marinade and toss until the beef is well coated.
  • Transfer the marinated beef to the air fryer basket and air fry until the ribeye is browned on top and cooked through, about 10 minutes. Carefully transfer the beef to a serving plate and without cleaning the basket transfer the marinated zucchini to the basket and air fry until the zucchini is browned on top and cooked through, 5 to 6 minutes.
  • While the zucchini is cooking, tear the beef into bite-size pieces. Transfer the zucchini to the same serving plate with the beef and pour the residual marinade from the bottom of the air fryer over the beef. Sprinkle with sesame seeds and serve with rice.

1 large zucchini
1 teaspoon kosher salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
¾ cup all purpose flour
2 large eggs
1 cup panko breadcrumbs
½ cup grated parmesan cheese
nonstick cooking spray, for greasing
ketchup, for serving

Steps:

  • On a cutting board, trim the ends off of the zucchini. Cut the zucchini into quarters lengthwise and crosswise for ½-inch-thick fries. Season with salt and pepper.
  • Add the flour, 1 teaspoon salt, and 1 teaspoon pepper to a shallow bowl and stir to combine. Beat the eggs in a second shallow bowl. In a third shallow bowl, mix together the panko and Parmesan.
  • Coat the zucchini fries in the flour, shaking off any excess. Then, dip in the eggs, letting any excess drip off. Coat in the panko mixture, making sure all sides are covered. Transfer the zucchini fries to a clean cutting board.
  • Preheat the air fryer to 400°F (200°C). Spray the air fryer basket with nonstick spray.
  • Working in batches, arrange the zucchini fries in the air fryer basket in a single layer, making sure they aren't touching. Cook until golden brown and crispy, about 10 minutes. Repeat with remaining zucchini fries. Season the fries with salt.
