Steps:
- Preheat oven to 350°.
- Cook penne in boiling salted water until al dente.
- Drain pasta and place in large bowl.
- Heat olive oil over medium heat and saute garlic for about 1 minute.
- Combine garlic, broccoli, Parmesan cheese and cream with penne.
- Spoon mixture into a large baking dish and top with mozzarella cheese.
- Bake, covered for 20 to 30 minutes.
- Note: Can be made up until baking point and refrigerated until dinner time.

GARLIC OIL SAUTEED PASTA WITH BROCCOLI

- In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
- Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
- Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
- Cook's Note: Use pasta water if the pasta was made fresh.
- Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.
ZITI WITH CHICKEN AND BROCCOLI

- Place the chicken breasts one at a time on a flat surface. Using a sharp knife, cut the breasts in half, then lengthwise into thin strips, about 1/2-inch thick.
- Cut the broccoli into florets, peel the stems and cut them into thin slices.
- Bring 4 quarts of salted water to a boil and add the broccoli. Cook for 3 minutes. Do not overcook; the broccoli must remain crisp. Drain and reserve the cooking liquid.
- Bring the reserved cooking liquid to a boil and add the ziti. Stir and cook according to package directions. The pasta should be al dente. Drain and reserve 1/2 cup of the cooking liquid.
- Heat the oil in a large skillet. Add the chicken breasts, salt and pepper. Cook and stir over medium high heat for 1 minute. Add the garlic, stir and cook briefly; do not brown. Add the tomatoes, rosemary, oregano, pepper flakes and cook, stirring, for 1 minute. Add the cream, bring to a boil and simmer for 2 minutes.
- Add the broccoli and the pasta into the tomato mixture. Add the reserved 1/2 cup of cooking liquid, salt and pepper. Bring to a simmer, add the parsley and cheese and toss well for 1 minute while cooking. Serve immediately.

- Season chicken with salt and pepper.
- Melt 1 tbs butter in 12-inch skillet over medium heat. Add chicken and cook until it is lightly browned but not fully cooked, about 4 minutes. Transfer chicken to a bowl.
- Add 1 more tbs butter, onion, red pepper flakes, oregano, & 1/2 tsp salt to the skillet. Cook until the onion is softened, about 5 minutes. Stir in the garlic and cook until fragrant, about 15 seconds.
- Sprinkle the ziti evenly into the skillet. Pour the broth and milk over the ziti. Cover and bring to a simmer about 5-10 minutes or till al dente (original recipe advised to cook pasta for only two minutes, I found this to be not long enough).
- Reduce heat to medium low and stir in the broccoli and roasted red peppers. Cover and continue to simmer, stirring occasionally, until the past begins to soften and the broccoli turns bright green, about 8 minutes. (If the sauce reduces too much you could add more milk and broth).
- Stir in the chicken and any accumulated juice. Cover and continue to simmer until the chicken is cooked through, about 3 minutes longer.
- Stir in the remaining 1 tbs butter, Parmesan, and lemon juice. Season with salt and pepper to taste.

A nice meal made entirely on the stovetop. The kids liked it except that they thought the meat was a little spicy, so use less if cooking for the smalls. I use Bob Evans Italian sausage Instead of the Italian link sausage the recipe calls for. From Southern Living.

- Cut sausage diagonally into 1/2" thick slices (just crumble and brown if using a roll of ground sausage). Cook in a large non stick skillet over med-high heat until browned; remove sausage and set aside.
- Meanwhile, cook pasta according to package directions, adding broccoli during the last 5 minutes of cooking time. Drain.
- Cook garlic and red pepper in oil in skillet, stirring constantly, until lightly browned; add tomatoes and cook until thoroughly heated. Remove from heat and keep warm.

- Place garlic in heavy skillet; pour in enough oil to cover garlic.
- Cook over med heat until garlic begins to brown.
- Cook broccoli in small amount of boiling water until tender, drain; cool slightly. Puree broccoli in blender.

- In a large pot of salted boiling water, place pasta and cook for 8 to 10 minutes, until pasta is al dente. Drain.
- In a large skillet, saute garlic in butter over medium heat. Stir in the heavy cream, chicken broth, and bouillon. Add Parmesan cheese, salt, and pepper. Add cornstarch (adjust amount to thicken sauce to your liking). Simmer all together for about 20 minutes.
- Once sauce is cooked and thickens, add broccoli and artichoke hearts, stir all together and cook for another 2 to 3 minutes. Once sauce is done, put cooked ziti pasta in a large bowl, pour sauce over pasta and toss to coat and mix. Then add the chicken pieces and mix all together. Serve. Delicious!

- Heat 1/4 cup of oil in a large skillet over medium heat. Sauté the chicken with the garlic, salt, and pepper until lightly browned.
- Add the broccoli flowerets. Toss with the chicken. Cook and stir for 1 minute.
- Add milk and ONLY 1/4 of the grated Parmesan cheese. Using high heat, quickly toss all ingredients until a nice milky sauce has formed (1-2 min.).
- Cook ziti according to package directions. Drain, but do not rinse and reserve 1/4 cup of pasta water.
- Toss the ziti with the butter. Add ziti to the chicken and broccoli and toss gently. Add the reserve pasta water as needed and toss again. Sprinkle with remaining grated Parmesan cheese, and red flakes. Serve.

- Blanch the broccoli in plenty of boiling water for 3 minutes or so. Drain in a colander and refresh under ice-cold water to preserve its color. Drain again and roughly chop.
- Cook the pasta in plenty of boiling salted water for 10 to 12 minutes, or according to the package instructions, until al dente.
- Meanwhile, put the butter and garlic into a cold large frying pan, place over medium heat and cook for a minute or so, until the garlic is fragrant but not browned. Add the broccoli, cover with a lid or baking sheet and cook very gently for a few minutes. The broccoli should be very soft and yield easily to a wooden spoon pressed on it. Stir in the mascarpone, if using, and blue cheese and heat through to form a sauce. Season with salt and lots of pepper to taste. Stir in the pine nuts.
- Drain the pasta, but don’t be too precious about draining off every drop of water. Transfer the pasta straight into the broccoli pan and mix well. Serve in warmed bowls, with vegetarian Parmesan cheese grated over, if you like.

- Cook the pasta and broccoli in a large pot of salted water, according to directions on the package until al dente (or just slightly undercooked). Once done, drain pasta and broccoli and set aside for a few minutes while you make the sauce.
- In the same pot, melt butter over medium heat. Once butter is melted, add garlic and flour and stir until flour has browned, about one more minutes.
- Whisk in broth and almond milk until smooth, bring to a boil then reduce heat to medium low and simmer for 6-8 minutes until sauce thickens up. Season with salt and pepper.
- Once mixture thickens, reduce heat to low and whisk in parmesan cheese. Taste and adjust seasonings as necessary (more salt or pepper or whatever spices you like!). Gently stir in the pasta and broccoli. Serve immediately. Makes 4 servings.
