MEXICAN HOMEMADE SALSA
In the summertime, I love to make this easy, zippy homemade salsa recipe with fresh tomatoes from my garden. I even have a special pan for roasting the peppers. -Roger Stenman, Batavia, Illinois

Steps:
- Heat a small ungreased cast-iron skillet over high heat. With a small sharp knife, pierce jalapenos; add to hot skillet. Cook for 15-20 minutes or until peppers are blistered and blackened, turning occasionally., Immediately place jalapenos in a small bowl; cover and let stand for 20 minutes. Peel off and discard charred skins. Remove stems and seeds., Place onion and garlic in a food processor; cover and pulse 4 times. Add the tomatoes, cilantro, salt and jalapenos. Cover and process until salsa reaches desired consistency. Chill until serving. Serve with chips.

FRUIT SALSA WITH CINNAMON CHIPS
Make this Fruit Salsa with Cinnamon Chips in just 10 minutes! It's made with tons of fresh summer fruits plus crispy tortilla chips for dipping.

Steps:
- In a large bowl, combine the pineapple with mango, strawberries, blueberries, kiwi, apples, and lime juice.
- Give everything a good mix, cover and chill in the fridge as you make the cinnamon chips.
- Preheat the oven to 350°F/180°C.
- In a small bowl, combine the cinnamon with sugar.
- Place the tortilla wedges on a sheet pan and spray with cooking spray on both sides (or brush with melted butter or vegetable oil). Sprinkle with cinnamon sugar, and bake for 8-10 minutes or until crispy.
- Allow the cinnamon chips to cool down, serve with chilled fruit salsa.

- Dice the pineapple, strawberries and mango and place in bowl.
- Sprinkle with brown sugar.
- Add the hot pepper jelly and mix well. (I used Scotch Bonnet pepper jelly.)

SCALLOPS WITH FRUIT SALSA

- In bowl combine all salsa ingredients and mix well.
- The sweet vs tart balance can be adjusted to your taste by adding more sugar or lime juice.
- Sprinkle each side of the scallops with salt, pepper and sugar.
- In skillet, melt butter over medium high heat.
- Right when butter starts to turn color, add scallops and cook 1 1/2-2 minutes on each side or until they are lightly browned.
- (Make sure they do not overcook!) Transfer scallops to plate and serve with salsa.

- Place red pepper on a baking sheet under oven broiler; turn pepper over occasionally until skin is charred on all sides; place hot roasted pepper into sealed plastic bag for about 10 minutes to steam off skin; peel pepper under very small stream of running tap water; remove stem and seeds from pepper, then dice.
- Combine and toss together black beans, diced roasted red pepper, corn, olives, cilantro, and lime juice.
- Mince chipotle pepper until pureed; combine with salsa and spices; stir into bean mixture.
- Refrigerate at least 2 hours to allow flavors to meld; serve at room temperature.

ZIPPY CRANBERRY SALSA

In the cookbook, this is pictured in a canning jar and decorated to give as a gift. Sure hope this is the missing recipe!

- In a large resealable plastic bag, combine the first eight ingredients. Add the shrimp; seal bag and turn to coat. ZIPPY MANGO SALSA
Great salsa for corn chips or for chicken or fish. The Jalapeno pepper adds some heat, and the mango adds some sweet flavor. A very colorful dish to serve. I got the recipe from someone who brought it to a tennis group lunch. She served it with tortilla chips and it tasted delicious and looked beautiful.
