ULTIMATE FRIED EGG SANDWICH

- In a small bowl, mix together mayonnaise, hot sauce, and smoked paprika. (Or substitute Special Sauce or Russian Dressing for Big Mac-style flavors.)
- Slice the tomato into large slices and sprinkle with a little kosher salt. Tear the romaine leaves in half. Toast the bread.
- In a large skillet, melt the butter over medium low heat. Add the eggs and sprinkle with a pinch of kosher salt and a few grinds black pepper. Cook for 2 to 3 minutes, until the whites are firm but the yolk is still runny (do not flip).
- To serve, top one bread slice with lettuce, tomato, a pinch of kosher salt, avocado, and egg. Slather the top slice of bread with smoky mayo and place it on top of the sandwich.

- Place a small pan on a burner.
- Add the butter and heat on medium high heat. (Make sure not to heat the pan on high, or else the egg will turn rubbery.).
- After the butter has melted, crack the egg in the pan.
- Let sit for about a minute.
- Pop the yolk.
- Sprinkle with salt and pepper.
- When egg is set, flip over and cook other side.
- Cook egg to your liking.
- Meanwhile, spread mayonaise on bread and place cheese.
- Place the cooked egg on top of the cheese, so it will melt.
- Top with other slice of bread.

My daughter really likes this sandwich. She usually has 2 at a time. The mustard used in this recipe can only be found in Ontario, Canada as far as I know. So some Canadians will know it. You can substitute though. Just don't use the regular kind unless you want to of course.

- Heat oil in fry pan over medium heat.
- Crack egg in pan trying not to break yolk.
- While egg is frying spread cheez whiz on one slice of bread and miracle whip on the other.
- Add the hot sauce to the miracle whip slice and spread.
- Flip egg when underside is starting to brown nicely.
- Poke yolk after a couple seconds so the yolk runs a little.
- Season with salt and pepper.
- Remove egg when finished cooking and make sandwich.
- Add sandwich back to dry pan and brown on both sides.
- Enjoy!

- Combine the ketchup and chipotle and spread on the inside of each piece of bread. Place the cheese between the bread at an angle so that the edges hangover the sides of the bread. Butter the outside of one bread slice with half the butter. Heat a skillet over medium heat. Press the sandwich on, buttered-side down. Press until the bread is golden brown and the cheese has started to melt. Butter the other side (which is facing up) with the remaining butter and flip. Cook until golden brown and the cheese is gooey, this should all take 3 to 4 minutes. Remove the sandwich from the heat and hold.
- Meanwhile, in a pan over medium heat, cook the bacon until barely crisp, about 5 minutes. Flip the bacon, pushing the two pieces next to each other to form a square. Crack the egg on top, cooking into the bacon. Continue cooking until the egg is set, about 5 minutes. Open up the sandwich (use a spoon to help pull apart the bread) and slide in the eggs and bacon. Close up, slice and enjoy.

- Heat the drippings in a wide flat-bottomed skillet until they spit and smoke. Break in the eggs. They will immediately bubble around the edges, making then crisp. RIDICULOUSLY EASY, UTTERLY DELICIOUS EGG SANDWICH
I like breakfast food. But I HATE cooking before breakfast. This egg sandwich is easy enough for a half-asleep cook on his/her first cup of coffee to make and tasty enough to be worth cooking before breakfast. Note -- Because this is so simple the choice of bread will make a big difference. I suggest a good rye, an Italian, an artisan or homemade white, an artisan or homemade wheat, or other preferred, flavorful variety rather then ordinary, sandwich white. Kids love this. Diabetics love this if you use low-carb bread.

- Melt 1/2 tsp butter in small, heavy skillet over medium-low heat.
- Break 2 eggs into skillet one atop the other so that they form one mass of egg. Use a pancake turner to break yolks so that they run over the surface of the whites.
- Season with a dash black pepper and a dash herb-seasoned salt to taste.
- While eggs cook, spread butter or mayonnaise lightly on one slice of bread.
- Cook about 2/3 done then flip with pancake turner. Scrunch into a bread-shaped mass. Top with cheese.
- When eggs are cooked and cheese is melting make your sandwich. Add sausage or bacon and pickles if desired.
- If cooking for more than one, make one sandwich at a time unless you can use multiple, small skillets. It looses something if the eggs are cooked in a big mass then separated -- the first eggs get overdone and some people get too much white while others get too much yolk.
- Note: I like them done so that the whites are fully cooked and the yolk is almost but not quite hard. Cook to your preferred doneness.
- Note: Don't overdo the butter. Use just enough to keep the eggs from sticking to the pan and just enough to carry the flavor on the bread.
- Note: My herb-seasoned salt is one of those fancy sea salt grinders. Use any such product that suits your taste or mix salt with some of your favorite herbs (finely crushed) in an empty salt shaker.
- Note: Cooked sausage links can be split lengthwise or cooked sausage patties can be crumbled to spread them more evenly on the sandwich.

- Toast the bread.
- Spread the mayonnaise on both pieces of toast.
- Heat the pan and use butter or light extra virgin olive oil to fry the egg.
- I love the yolk so I cook mine over easy so the yolk is runny on the sandwich, yum!
- For mine, since I like the runny yolk, there isn't enough time to put the cheese on when I flip over the egg so it goes on after the egg is on the toast.
- Toss the slice of ham into the pan to heat through real fast; add on top of the cheese.
- That is all I do for the basic sandwich.
- Extras I like to add on depending on what I have on hand are 1/4 of an avocado sliced, or tomato slices.
- I have to say if you like your yolks runny then the avocado is a must, the two go together perfectly. Hubby likes to put some chalula hot sauce on his sandwich also.

POP'S TEXAS FRIED EGG SANDWICH
This is my dad's fried egg sandwich "recipe". He used to make these for us (all 4 kids and my mom) on Sunday nights after church. I recently introduced my DH to these sandwiches and he has declared them "The BEST" sandwich on earth. ;) *Note, you can use whatever type of lunch meat you have on hand, or bacon, or sausage, etc. It's a personal preference kind of thing.* These directions are for 1 sandwich. You can, of course, increase the number as needed. I hope you love these as much as we do. I lovingly refer to these as a heart attack on bread.
