Steps:
- Make 2 or 3 cuts in the chicken thighs.
- Place chicken in an ovenproof dish.
- Zest and juice the limes.
- Peel and grate ginger.
- Deseed and chop chili.
- Mix lime juice, lime zest, soy sauce, brown sugar, coriander, ginger, garlic, chili and oil.
- Pour over the chicken marinate for 2 to 3 hours.
- Preheat oven to 190 degrees Celsius/Gas 5.
- Cook skin side up for 20 minutes.
- Drain off liquid and discard.
- Increase temperature to 200 degrees Celsius/Gas6; cook for another 15 minutes.

ZINGY CHICKEN STIR-FRY

Steps:
- Boil the noodles according to pack instructions, then drain and toss with 1 tsp oil.
- Heat the remaining oil in a wok and add the chicken and carrots. Stir-fry for a few minutes. Add the honey, soy and lime juice, bubble for 30 secs, then add the noodles and sesame seeds. Mix well, heat through and sprinkle with the coriander to serve.

- Purée 2 garlic cloves, 1/2 cup chopped roasted red peppers from a jar (about 2), 1/2 cup unsalted, roasted almonds, and 2 tablespoons red wine vinegar in a food processor until smooth. With motor running, add 1/4 cup extra-virgin olive oil and process until smooth; season with kosher salt, freshly ground black pepper, and more vinegar, if desired.
- DO AHEAD: Sauce can be made 2 days ahead. Cover and chill.
ROASTED COD WITH ZINGY BEETROOT SALAD

- Heat the oven to 200C/180C fan/gas 6. Put a pan of water on a high heat. When it boils add the potatoes, then turn the heat down and simmer for 10-12 mins until tender.
- Meanwhile combine all of the salad ingredients, reserving a little coriander. Season lightly. Once the potatoes are cooked, drain and run under cold water to cool. Drain again and toss through the salad.
- Rub the oil over the cod fillets, then put on a non-stick baking tray and lay a few ginger and lime slices on top of each fillet. Put in the oven and cook for 6-9 mins, depending on thickness.
- Divide the salad between four plates, then top with the cod and remaining coriander.

- Preheat oven to 400°. Mix first 6 ingredients; stir in chicken to coat., Place bread crumbs in a shallow bowl; add chicken, 1 piece at a time, and toss to coat. Place 1 in. apart on a greased baking sheet., Bake until lightly browned and chicken is no longer pink, 18-20 minutes. If desired, serve with honey mustard.
