- In a food processor or a blender, puree the tomato and onion. Transfer the mixture to a small saucepan. Stir in the vegetable juice and season to taste with salt and pepper. Bring to a boil and then let simmer for about 10 minutes. Serve hot topped with your favorite cheese or fresh bread.

BEST TOMATO SOUP EVER

- To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.
- Now dump in the diced tomatoes and stir to combine. Add the tomato juice.
- Next - and this is important - in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you'll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it's worth, and I realize it's not worth much, I use 6 tablespoons of sugar.)
- Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.
- Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.
- Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.
- Serve the soup warm!
SPICY TOMATO AND CHEDDAR SOUP
Steps:
- Preheat the broiler. Line a sheet pan with foil.
- Place the tomatoes on the prepared sheet pan and broil until charred, 4 minutes.
- Add the oil to a large pot set over high heat. Saute the garlic, onions and oregano. Reduce the heat to medium.
- Add the broiled tomatoes to the pot and mix into the sauteed onion mixture. Break up the tomatoes with the mixing spoon so they cook evenly. Add the broth, hot sauce and canned tomatoes to the pot. Season with salt and pepper. Sprinkle the cheese, reserving 2 tablespoons for garnish, into the soup. Use an immersion blender to blend the soup until smooth. Simmer the soup on low for 5 minutes.
- Divide the soup among four bowls, then garnish with the reserved cheese and some Croutons.
- Preheat the oven to 375 degrees F.
- Place the cubes on a sheet pan in a single layer and sprinkle the oil over the bread. Season with salt and pepper. Bake until crisp and golden, about 10 minutes.
SPICY TOMATO SOUP
A warming spicy soup made to your own taste

- Fry the chopped onion and bacon if using in a small knob of butter/oil for about 5 mins
- Add cubed potato and quatered tomatoes, sugar and water simmer gently with the lid on a pan until potato is well cooked. Allow to cool slightly
- Remove the bacon if using and pour the ingredients into a blender.
- Once blended add the seasonings and blend well and adjust to your taste.
- Pass through a sieve into a pan. At this point this soup is perfect for freezing. Add the milk and gently reheat and add fresh parsley is using. Serve with a chunk of fresh warm bread.

- Drain 1 can tomatoes, discarding juice, then purée with remaining can tomatoes (including juice) in a blender.
- Cook onion, garlic, chile, and ginger in oil in a 4- to 5-quart heavy nonreactive pot over moderate heat, stirring frequently, until onion is softened, about 8 minutes. Add cumin and cook, stirring, 1 minute. Stir in puréed tomatoes, broth, 1 tablespoon sugar, and 2 teaspoons salt and simmer, uncovered, stirring occasionally, 20 minutes. Working in 3 or 4 batches, blend soup in blender until smooth (use caution when blending hot liquids). Transfer soup as blended to a sieve set over a large bowl and force through sieve, discarding seeds.

- Heat the olive oil in a large saucepan over medium heat until shimmering. Add the onions and red pepper flakes and cook, stirring occasionally, until the onions are translucent and very tender, about 10 minutes.
- Stir in the tomatoes and their juices, plus the water, and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the flavors have melded, about 30 minutes. (If you're in a hurry, you can skip the simmer time -- just add a bit less water.)
- Add the basil, season with salt and pepper, remove from the heat, and let cool briefly, about 5 minutes.
- Set a fine-mesh strainer over a large, heatproof bowl.
- Using a blender, purée the soup in batches until smooth, removing the small cap from the blender lid (the pour lid) and covering the space with a kitchen towel (this allows steam from the hot soup to escape and prevents the blender lid from popping off).
- Pour the blended soup through the strainer, pressing on the solids with a rubber spatula or ladle; discard the solids. Taste the soup and season with additional salt and pepper as needed.

SPICY FRESH TOMATO SOUP
I attempted to make spicy tomato sauce out of fresh tomatoes and this soup is the result. We think it is a winner. If you simmer this for an additional 45 minutes, not covered, you will get a thick spicy sauce. This soup tastes great frozen and reheated.

- Heat oil in a large stockpot over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic; cook and stir until fragrant but not brown, about 2 minutes. ZESTY MEXICAN TOMATO SOUP
This soup is modeled after the Traditional Sopa de Tortilla of Mexican cooking, but the beans and corn are new. This was my first published recipe also.

- Saute' all the veggies with the spices in the olive oil until the peppers have brightened and started to wilt, then add the cilantro and the tomato puree.
- When the puree begins to bubble, add 12 cups of water, and the beans and corn.
- Add the salsa of choice.
- Put in the lime juice after it has all boiled for 5 minutes.
- Season to taste with salt, pepper and ketchup.
- Serve if desired with grated cheddar cheese and corn chips.
- ENJOY!

- Wash and drain pinto beans.
- Peel and cut carrots into inch long pieces.
- Mince garlic, dice leek and onion.
- Saute leek, onion and garlic in the olive oil. When the leeks and onion become soft, add the carrots and beans, saute for about five minutes. Add the spices and salt. Then add the beans and the strained tomatoes. Mix well for about a minute, then add the broth and the water. Bring to boil.
- Simmer the soup for about 20 minutes or until the vegetables are cooked.
- Dice the tomato and the tofu. Add to the soup and simmer for about 5-10 minute.
- Take the soup of the heat. Add the lemon juice. Garnish with few sprigs of fresh cilantro. Serve hot and enjoy!

- Coat a large pan with cooking spray.
- Heat and add the leek and garlic, stirring until the leek is soft.
- Add the tomatoes, carrot, chili and chicken stock.
- Simmer for 20 minutes.
- Add the Worcestershire sauce, butter beans and green beans and cook for a further 3 minutes.
- Stir through the chopped parsley before serving.
