1 lb fresh mushrooms
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons sliced celery
1 tablespoon onion juice
1/8 teaspoon paprika
1 tablespoon flour
1 cup hot medium cream
1 tablespoon fresh orange juice
1 tablespoon grated orange rind
1 tablespoon white grape juice or 1 tablespoon sherry wine
salt
pepper
cayenne
ground nutmeg

Steps:

  • Wipe mushrooms with damp cloth; remove stems.
  • Melt butter in pan; add mushrooms, celery, onion juice, and paprika.
  • Cover; simmer until mushrooms are tender.
  • Stir in flour.
  • Add cream; cook for a moment more.
  • Add orange juice, rind, and grape juice.
  • Season to taste with salt, pepper, cayenne, and nutmeg.
  • Serve in individual dishes, on toast, or in croustades.
  • Makes 4 servings.

1 lb. fresh morels
3 tbs. butter
2 tbs. sliced celery
1 tbs. onion juice
1⁄8 tsp. paprika
1 tbs. all-purpose flour
1 cup hot medium cream
1 tbs. fresh orange juice
1 tbs. orange zest
1 tbs. white grape juice or sherry
Salt, pepper, cayenne, ground nutmeg

Steps:

  • Wipe mushrooms with damp cloth. Remove stems and chop. Melt butter in pan, add flour and stir as if making a roux. Add mushrooms, celery, onion juice and paprika. Cover and simmer until mushrooms are tender, about 8 minutes. Add cream and cook for 1 minute. Add orange juice, orange zest and grape juice or sherry, according to preference. Season to taste with salt, pepper, cayenne and nutmeg. Serve in individual dishes along with toasted French bread. Makes four 1-cup servings.

These mushrooms are the best! We like to serve them with steak, pasta, in omelettes, on hamburgers or just alone. The recipe I am posting makes alot so you might want to adjust for your needs. You can either slice, quarter or leave the mushrooms whole, whatever you prefer But they do freeze well. Enjoy!

6 (8 ounce) boxes button mushrooms, sliced (or quartered, or your choice of type)
2 (5/8 ounce) packages Good Seasonings Italian salad dressing mix (I use the Zesty type)
1 cup butter (do not use margarine)

Steps:

  • In large fry pan melt butter over medium heat add mushrooms and simmer until mushrooms are tender. Add packages of Zesty Italian Seasoning and let simmer until some of the moisture from the mushrooms has evaporated. Serve warm as desired!
