ROASTED VEGETABLE SALAD

Roasted Vegetable Salad image

This roasted vegetable salad features Brussels sprouts, butternut squash and cauliflower with a zesty horseradish dressing.

Provided by Brittany Mullins

Categories     Salad

Number Of Ingredients 16

2 cups cauliflower florets (bite-size)
2 cups butternut squash chunks
3 cups Brussels sprouts (halved)
1 15 oz. can cannellini beans (rinsed and drained)
1/4 cup fresh pomegranate arils or dried pomegranate seeds
3 Tablespoons dried mulberries
4 cups thinly sliced Lacinato (dinosaur kale)
Olive or avocado oil (or spray)
Dressing
3 Tablespoons champagne vinegar*
1 Tablespoon prepared horseradish
1 clove garlic (minced)
2 teaspoons minced scallions
1 pinch crushed red pepper flakes
1 teaspoon sea salt
⅓ cup extra virgin olive oil

Steps:

  • Roast veggies: Heat oven to 400°F. Place cauliflower, butternut squash and brussels sprouts on a large baking sheet, spray with a little avocado oil spray or drizzle with oil, sprinkle with salt and pepper and toss to combine. Roast for 30-40 minutes or until veggies are until well caramelized and softened with a few golden brown spots. Stir once mid-way through the cooking process and watch closely so the veggies don't burn.
  • Prep dressing: While veggies are cooking, make the dressing: Combine all ingredients except the olive oil and whisk to combine. Slowly drizzle in the olive oil while whisking, set aside. Taste and add more olive oil, if needed.
  • Prep salad: Remove vegetables from oven and allow to cool to room temperature, then combine in a large bowl with the beans, kale and pomegranate seeds. Toss in the dressing to evenly coat everything. You may find that you don't need to use all of the dressing.
  • Serve: Portion into bowls, top with mulberries and serve.
  • Store: Salad will keep marinated for up to 2 days in the fridge.

CUCUMBER SALAD WITH VINEGAR

Cucumber Salad with Vinegar image

Mom's recipe for Cucumber Salad with Vinegar is a healthy and easy side dish to pair with any summer meal!

Provided by Blair Lonergan

Categories     Side Dish

Time 1h10m

Number Of Ingredients 7

2 seedless English cucumbers (or about 3 regular cucumbers), peeled if desired ((about 1.75 lbs. or 6 cups total))
1/2 cup white vinegar or apple cider vinegar
1/2 cup water
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon pepper
Chopped fresh dill or chopped fresh parsley, to taste

Steps:

  • Slice cucumbers very thinly and place in a large bowl. I like to use a mandoline to keep the slices even and to make the process very fast, but you can just use a knife if you prefer.
  • In a separate small bowl or in a jar, whisk or shake together vinegar, water, sugar, salt, pepper and herbs. Pour over cucumbers. Cover; chill at least one hour or overnight. Drain cucumbers and serve!

  • Bring a large pot of well-salted water to a boil. When the salt dissolves the water should almost taste like seawater.
  • Blanch each type of vegetable separately in the boiling water until they’re easy to chew, but still snappyAl dente, if you will.. Pull a piece out every few seconds to check for doneness. The broccoli should only take about 45 seconds, but the cauliflower might take more than a minute. Do the carrots next to last as they’ll discolor the water. Finish with the beets. Do not blanch the onion.
  • As each vegetable is ready, scoop using a wire spider strainer and deliver to the ice water bath to halt the cooking process. If you skip this step, the vegetables will continue to cook from residual heat and the final dish will be too soft.

  • Start by preparing the vegetables. Feel free to use your favorites for this recipe, too. Wash the vegetables and pat them dry, then section into large pieces. Cut the zucchini and mushrooms in half, then section the bell pepper into larger chunks. The red onion can be cut into thick rings. Watch my video recipe to see how it's done.
  • Place the vegetables onto a large tray and drizzle a few tablespoons of olive oil over the top. Next, season the veggies generously with salt and ground black pepper. Sprinkle the paprika, thyme and rosemary evenly over the veggies.
  • Preheat an indoor grill pan over medium-high heat or an outdoor grill to 500F. Once the grill grates are super hot, add the vegetables in a single layer onto the hot grill. Grill the veggies for 3 to 4 minutes per side, turning once to cook on the other side for the same amount of time. Green zucchini takes a little longer, about 5 minutes per side. If using an outdoor grill, close the grill for faster cooking.
  • Once the vegetables are grilled, remove them from the grill and onto a large tray. Using a sharp knife, cut the grilled veggies into bit sized pieces. Place the chopped grilled veggies into a large mixing bowl.

  • Bring a large saucepan of water to a boil. Place a large bowl of ice water next to the stove. Cook carrot, cauliflower and green beans in the boiling water, one vegetable at a time, until just tender, 1 to 3 minutes. Transfer the vegetables to the ice water with a slotted spoon as they are done.
  • Drain the vegetables and place in a large, shallow nonreactive bowl (see Tip). Add fennel, bell peppers, hot peppers, celery and onion.
  • Combine cider vinegar, white vinegar, 1/2 cup water, sugar, salt, celery seed, basil and oregano in a nonreactive saucepan. Bring to a boil, then simmer for 2 minutes. Pour the hot liquid over the vegetables and gently stir to coat. Let cool to room temperature, stirring occasionally, then refrigerate until cold, at least 1 hour. The longer the vegetables marinate, the more flavorful the salad will be.
  • To serve, strain the vegetables (reserving the pickling liquid). Return the vegetables and 3 tablespoons of the pickling liquid to the bowl. (Reserve the remaining pickling liquid to pickle more vegetables or to use in a salad dressing, if desired.) Add garlic, olives, parsley, dill and oil to the vegetables; toss to combine. Season with pepper.
