Hearty Lamb Chops With Couscous Recipe by Tasty image

Here's what you need: kosher salt, McCormick® Hearty Spice Blend, freshly ground black pepper, lamb chop, canola oil, kosher salt, freshly ground black pepper, McCormick® Hearty Spice Blend, garlics, orange zests, oranges, orange zest, orange juice, fresh mint, full-fat yogurt, McCormick® Hearty Spice Blend, kosher salt, freshly ground black pepper, chicken broth, butter, kosher salt, couscous, pitted dates, olive oil, fresh parsley, chives, toasted pine nut

Provided by Tasty

Yield 4 servings

Number Of Ingredients 27

2 teaspoons kosher salt
2 tablespoons McCormick® Hearty Spice Blend
½ teaspoon freshly ground black pepper
2 lb lamb chop
2 teaspoons canola oil
kosher salt, to taste
freshly ground black pepper, to taste
1 teaspoon McCormick® Hearty Spice Blend
5 garlics, minced
2 orange zests
2 oranges
1 orange zest
1 orange juice
½ cup fresh mint, finely chopped
1 cup full-fat yogurt
1 teaspoon McCormick® Hearty Spice Blend
kosher salt, to taste
freshly ground black pepper, to taste
1 ¼ cups chicken broth
1 tablespoon butter, or olive oil
1 pinch of kosher salt
1 cup couscous
2 pitted dates, chopped
olive oil, to taste
¼ cup fresh parsley, finely chopped
2 tablespoons chives, thinly sliced
toasted pine nut, for serving

Steps:

  • Make the dry rub: In a small bowl, mix together the salt, Hearty spice blend, and pepper.
  • On a large plate, sprinkle the lamb chops evenly on both sides with the dry rub. Let sit for 5 minutes.
  • Make the marinade: In a medium bowl, mix together the Hearty spice blend, garlic, orange zest, and orange juice.
  • Place seasoned lamb chops in a glass baking dish and pour the marinade over. Let marinate for at least 1 hour in the refrigerator. If the marinade doesn't completely cover the lamb chops, flip halfway through.
  • While the lamb chops are marinating, make the yogurt sauce. In a medium bowl, whisk together the orange zest, orange juice, mint, yogurt, Hearty spice blend, salt, and pepper. Set aside.
  • Make the couscous: In a small saucepan over medium-high heat, combine the chicken stock, butter, and salt. Bring to a boil, then pour in the couscous, remove from heat, and let sit, covered, for 10 minutes, until the liquid is absorbed. Fluff with a fork, then stir in the dates, and cover again to keep warm. If the couscous seems dry, add 1-2 teaspoons of olive oil and mix. Set aside.
  • Cook the lamb chops: Heat the canola oil in a large cast iron skillet over medium heat.
  • Remove the lamb chops from marinade, set on a plate, and season on both sides with salt and pepper.
  • Carefully add a few of the lamb chops to the skillet, making sure not to crowd the pan. Cook for 3-5 minutes per side, or until desired doneness is achieved and the lamb chops have a nice brown sear on the outside but are still tender in the center. The internal temperature should read 145˚F (63˚C) for medium-rare. Remove the lamb chops from the pan and repeat with remaining lamb chops.
  • Just before serving, fold the parsley and chives into the couscous.
  • To serve, spoon the couscous onto plates and add a few lamb chops. Spoon the yogurt sauce the over lamb chops and top with toasted pine nuts.
  • Enjoy!

ZESTY LAMB CHOPS WITH COUSCOUS

Zesty lamb chops with couscous image

Lamb chops are quick to cook making them ideal for speedy weeknight cooking. We've served them here on a bed of minty couscous for a light and fresh meal.

Provided by delicious. magazine

Categories     Christmas leftover recipes

Yield Serves 4

Number Of Ingredients 9

2 tsp light olive oil
8 British lamb chops or cutlets
Grated zest 3 lemons, juice 2½, plus 4 slices
1 red onion, very thinly sliced
300g wholewheat couscous
35g currants
100g queen or nocellara olives, pitted and roughly chopped
130g baby leaf spinach
Handful mixed herbs (we used mint, coriander and parsley), finely chopped

Steps:

  • Heat the oven to 160°C/140°C fan/gas 3. Heat the oil a large heavy-based frying pan over a medium-high heat. Season the lamb with salt and pepper, then add to the pan along with the lemon slices and cook for 3-5 minutes on each side (longer if you like your meat well done). Put the onion in a glass or ceramic bowl with the juice from one lemon.
  • Meanwhile, cook the couscous according to the pack instructions. Once the lamb is cooked, transfer it to a tray and loosely cover it with foil. Turn off the oven and put the lamb in to keep warm and rest.
  • Add 60ml water to the lamb pan and bubble on a high heat, scraping the pan. Reduce the liquid by roughly half, then stir in the remaining lemon juice, most of the zest, the currants and olives. Take off the heat and stir in the couscous, spinach and most of the herbs, then taste and season.
  • Serve the chops and the couscous with any resting juices spooned over, sprinkled with the onion, the remaining herbs and lemon zest.

MOROCCAN LAMB WITH COUSCOUS

Moroccan Lamb With Couscous image

This is a really simple recipe to make it can be on the table in 30 Min's not including the marinating time. The marinade is easy to make and something you can do the night before or before work and it is ready to go when you walk through the door. I love couscous and I think it pairs very well with this dish. I use quick cooking couscous which comes in sachets of 100g each to serve 1-2 people depending on whether making as is or serving as an accompaniment like I did. The brand I buy only takes 2 Min's to cook and you place the sachet in boiling water, so when you get to the part where you add stock and hot mango chutney to the water, please note that this is just to flavour couscous and not to be mixed with it.

SPICY LAMB WITH GARLIC COUSCOUS

Spicy Lamb With Garlic Couscous image

A spicy Moroccan style dish. As the couscous has minimal cooking time the garlic flavour is quite strong, reduce the amount of garlic in the couscous or use some roasted garlic paste if you aren't keen on very garlicky food. This recipe came from the Home Beautiful magazine. The marinade also works well with chicken fillets.
