Earthy Oven Roasted Za'atar Zucchini is a perfect side dish for weekly dinners and for meal prep.

2 medium Zucchini (chopped into cubes about 1/2")
1 tsp Za'atar spice blend
1 tbsp olive oil (extra virgin)
salt, Kosher (optional (check your spice blend for salt))

Steps:

  • Preheat oven to 400°
  • Line a baking sheet with parchment or spray baking sheet with oil. Set aside.
  • Chop zucchini into large dice about 1/2 inch sizes
  • Place zucchini in bowl.
  • Add Za'atar spice blend.
  • Add extra virgin olive oil.
  • Toss well and until everything is coated. You can adjust both Za'atar and olive oil.
  • If you spice blend does not contain salt, add a good pinch. Toss evenly.
  • Place on baking sheet and roast for about 10 minutes.
  • Carefully take baking sheet out of the oven and toss zucchini so they roast evenly.
  • Place back in the oven for another 10 minutes.
  • Zucchini is done when tender and slightly roasted on edges.
  • Serve with your favorite protein or combine in bowl or salad as you wish.

Steps:

  • Heat a charcoal or gas grill; the fire should be medium-low and the rack about 4 inches from the heat.
  • Cut 1 1/2 pounds zucchini into 1/2-inch-thick slices.
  • Stir 1/4 cup za'atar and 2 tablespoons olive oil into a paste; season with salt and pepper.
  • Rub zucchini with za'atar and grill, turning once, until nicely browned and tender, 6 to 8 minutes. Garnish with parsley.

Za'atar, a Middle Eastern spice mix made from dried thyme, sumac, and sesame seeds, gives these roasted chickpeas a fragrant, herbal, tangy bite. Unlike other similar recipes, the chickpeas are roasted without any oil, which is added after they come out of the oven. This allows the peas to crisp up without turning greasy. Do make sure to dry them out for an hour as directed, which adds to their crunchy texture. It's hard to stop eating these once you start, so if you're serving these to a group, consider making a double batch.

2 cups cooked chickpeas, rinsed if canned
1 tablespoon extra-virgin olive oil
2 tablespoons za'atar
1/2 teaspoon kosher salt

Steps:

  • Spread out chickpeas on a paper towel. Pat dry, then let dry for about an hour.
  • Heat oven to 400 degrees. Line a heavy rimmed sheet pan with parchment paper, and spread chickpeas evenly on the pan. Bake in the center of the oven until crunchy, about 30 minutes, stirring and rotating every 10 minutes. (The chickpeas will continue to get crunchy as they cool.)
  • Place hot chickpeas in a bowl and drizzle with olive oil, za'atar and salt. Store any cooled leftovers in an airtight container for up to a week.

i threw this dish together when i wanted to do something extra special with zucchini. i was thinking of the delicious zucchini-feta balls the lady at a moroccan food truck in philly used to have me try with my regular falafel. with the addition of the zatar, the dish is very middle eastern, and the feta grounds and warms everything.

Steps:

  • chop onion and zucchini.
  • heat olive oil in pan on medium-high.
  • saute onions until translucent.
  • add zucchini, zatar, and pepper; saute over medium heat until onions are browned and zucchini is cooked through transfer to serving bowl and stir in feta cheese.

  • In a large bowl, combine the gluten-free flour, baking powder, za'atar, cumin, pepper, and feta cheese. Stir gently, then add the egg and milk and stir to combine. Batter with seem dry. Add the zucchini and onion and stir until thoroughly mixed.
  • Preheat Cuisinart 360 Griddle Cooking Center to high heat. Once hot, drizzle with olive oil. Once the olive oil is shimmering, add 2-3 tablespoons of batter and let cook for 5-10 seconds before taking a fork and spreading the batter out into a very thin patty. The thinner the patty, the crispier it will cook. Let cook for 3 minutes per side, or until golden brown and crisp, adding more oil to the griddle as needed.
