Tossed with extra virgin olive oil and Middle Eastern spice blend, these Za'atar Spiced Crispy Chickpeas may become your new favorite snack.

2 (15-ounce) cans chickpeas, drained, rinsed, and dried
¼ cup extra virgin olive oil
3 tablespoons Jamie Geller Za'atar
1 teaspoon garlic powder
Pinch of cayenne
1 tablespoon sumac
1 teaspoon kosher salt

Steps:

  • 1. Preheat oven to 350°F, line a baking sheet with parchment paper. 2. In a medium bowl, toss chickpeas with evoo, za'atar, garlic powder, cayenne, sumac, and salt. 3. Spread chickpeas on lined sheet, and bake for 1 hour, stirring occasionally, until browned and crunchy. 4. Transfer to a serving bowl. Store chickpeas, covered, at room temperature for up to 3 days. Serve as a snack or as part of our Over the Top Hummus Bar.

Crunchy Roasted Za'atar Chickpeas image

Za'atar, a Middle Eastern spice mix made from dried thyme, sumac, and sesame seeds, gives these roasted chickpeas a fragrant, herbal, tangy bite. Unlike other similar recipes, the chickpeas are roasted without any oil, which is added after they come out of the oven. This allows the peas to crisp up without turning greasy. Do make sure to dry them out for an hour as directed, which adds to their crunchy texture. It's hard to stop eating these once you start, so if you're serving these to a group, consider making a double batch.

2 cups cooked chickpeas, rinsed if canned
1 tablespoon extra-virgin olive oil
2 tablespoons za'atar
1/2 teaspoon kosher salt

Steps:

  • Spread out chickpeas on a paper towel. Pat dry, then let dry for about an hour.
  • Heat oven to 400 degrees. Line a heavy rimmed sheet pan with parchment paper, and spread chickpeas evenly on the pan. Bake in the center of the oven until crunchy, about 30 minutes, stirring and rotating every 10 minutes. (The chickpeas will continue to get crunchy as they cool.)
  • Place hot chickpeas in a bowl and drizzle with olive oil, za'atar and salt. Store any cooled leftovers in an airtight container for up to a week.

Number Of Ingredients 4

2 tbsp cumin
2 tbsp sesame seeds
2 tbsp dried oregano
2 tbsp sumac

Steps:

  • Lightly toast the cumin seeds in a dry pan, just until they start to release their aroma. Grind them to a fine powder using a pestle and mortar then stir in all the other ingredients plus 2 tsp salt and 1 tsp freshly ground black pepper. It is now ready to use in your recipes, but will keep in a clean jar or airtight container for a month.
