Sweet cream pancakes are what happens when you turn your basic pancake recipe into a rich, decadent and creamy bite of heaven!

3 cups all purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
2 cup heavy cream
1 cup milk (we recommend 2%)
1/2 cup sugar
1 tablespoon pure vanilla extract

Steps:

  • In a medium bowl, combine flour, baking powder, baking soda, salt. Set aside.
  • In a large mixing bowl, whisk egg, cream, milk, sugar, and vanilla until well combined.
  • Add dry ingredients to wet ingredients and mix only until just combined, do not overmix.
  • Heat a griddle over medium heat. If desired, grease with butter, oil, or nonstick cooking spray.
  • Add batter by about 1/4 cup scoops.
  • Cook for 2-3 minutes or until bubbles appear and don't disappear.
  • Flip and cook for another 2-3 minutes or until golden brown and cooked through.

1/2 cup buckwheat flour
1/2 cup whole wheat flour
1 egg, beaten
1/2 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup water
1/2 cup vegetable oil or 1/4 cup applesauce
1/2 teaspoon vanilla extract

Steps:

  • In a medium bowl, mix together first six ingredients.
  • Add in water, oil/applesauce and vanilla. Mix until smooth.
  • Pour ½ cup fulls onto medium heated skillet. When edges are set, slide spatula under and flip pancake. Continue to cook until set, about 2 minutes.
  • Serve with sugar-free syrup and fresh or frozen berries.

3/4 cup self-rising flour
3/4 cup whole wheat flour
3 tablespoons sugar (if using Splenda, 2 T.)
1/4 tablespoon salt
1 teaspoon baking soda
1 tablespoon maple syrup
1 egg
1 cup buttermilk
3/4 cup 2% low-fat milk (I use skim)
1 cup blueberries or 1 cup any chopped fruit

Steps:

  • In a large bowl, combine the dry ingredients.
  • In a medium bowl, combine remaining ingredients except berries.
  • Mix well.
  • Add wet ingredients to dry ingredients.
  • Mix until smooth.
  • Lightly coat a griddle with non-stick cooking spray.
  • Ladle approximately 1/4 cup batter on griddle.
  • Sprinkle with berries.
  • Cover berries with additional batter.
  • Cook until bubbles form.
  • Flip and cook other side until golden brown.
