1 cup chopped green onions
1 cup chopped celery
1 small green or sweet red pepper, chopped
1/2 cup shredded carrots
2 garlic cloves, minced
2 tablespoons vegetable oil
2 cups cubed cooked chicken
1 cup shredded cheddar cheese
1 cup shredded part-skim mozzarella cheese
1/2 cup mayonnaise
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
14 slices day-old whole wheat bread, cubed
4 large eggs
2 cups whole milk
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 tablespoon Worcestershire sauce
Paprika

Steps:

  • In a skillet, saute onions, celery, green pepper, carrots and garlic in oil until crisp-tender. Transfer to a large bowl; add chicken, cheeses, mayonnaise and parsley. Place half of the bread cubes in a greased 13x9-in. baking dish. Top with chicken mixture and remaining bread. , In a bowl, beat eggs; add milk, soup and Worcestershire sauce. Pour over casserole. Sprinkle with paprika. Bake, uncovered, at 350° for 1 hour and 10 minutes or until a knife inserted in the center comes out clean.

1-1/2 cups cracker crumbs, divided
2 cups chicken broth
3 large eggs, lightly beaten

3 cups cubed cooked chicken
1 can (8 ounces) sliced mushroom, drained
1 tablespoon butter

Steps:

  • In a bowl, combine bread cubes and 1 cup cracker crumbs. Stir in broth, eggs, salt, celery, onion, chicken and mushrooms. Spoon into a greased 2-qt. casserole. In a saucepan, melt butter; brown remaining cracker crumbs. Sprinkle over casserole. Bake at 350° for 1 hour.

4 skinless, bone-in chicken breast halves
2 stalks celery, cut into thirds
½ teaspoon salt
⅛ teaspoon pepper
1 cup cooked rice
6 ounces sour cream
2 (10.5 ounce) cans condensed cream of chicken soup
¼ teaspoon celery salt
⅛ teaspoon onion powder
¼ teaspoon garlic powder
salt and pepper to taste
2 cups crushed buttery round crackers
½ cup butter or margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring to a boil the chicken breasts, celery, 1/2 teaspoon salt, 1/8 teaspoon pepper, and enough water to cover. Cover, reduce heat to medium low; simmer for 35 minutes. Drain, reserving 1 cup liquid. Cool chicken, remove meat from bones, and cut into bite-size pieces.
  • In a large bowl, stir together sour cream, soup, broth, celery salt, onion powder, garlic powder, and salt and pepper to taste. Mix in cooked rice and chicken. Spoon mixture into a 9x13 inch casserole dish. In a resealable bag, shake together crushed crackers and melted butter. Sprinkle crackers over the top.
  • Bake in preheated oven for 30 to 35 minutes.

This is another of my Mom's classic recipes. I have no idea where she got it but it is the ultimate comfort food for me! You can also add some frozen peas to this to make it a one-dish meal.

1 (4 lb) roasting chickens
2 cups shell macaroni
8 ounces shredded Velveeta cheese
1 teaspoon salt
1/2 teaspoon pepper
3 cups chicken broth
1 (10 3/4 ounce) can cream of chicken soup
1/4 cup flour
1/2 cup melted margarine
2 -3 cups fresh breadcrumbs

Steps:

  • Boil the chicken and shred meat off of bones (I always do this ahead of time).
  • Cook and drain macaroni shells.
  • In a large bowl combine broth and soup and mix flour into that mixture.
  • Add cooked macaroni, shredded chicken, cheese and seasonings to broth mixture and pour into a 9 x 13" pan.
  • Process 2-3 slices of white bread in a blender or food processor on crumb mode and mix with margarine. Sprinkle crumb mixture over the top of the casserole.
  • Bake at 325 degrees F for 30-35 minutes, until top is browned and cheese is melted.
  • *NOTE* I do not recommend using dried breadcrumbs as they make the dish too salty.
