1 1/2 pounds Yukon Gold Potatoes, cut* into 1/4-inch-thick slices
1/2 cup grated Gruyere cheese
1/2 cup Parmesan cheese
1/4 cup chicken stock
1/2 cup heavy cream
1 tsp. kosher salt
1/2 tsp black pepper
A mandoline makes slicing the potatoes much easier. I also soak the potatoes in water, while doing my prep work, so that they don't turn brown.

Steps:

  • Preheat the oven to 350°F. Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter. Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes. In a small bowl, whisk the cream and chicken stock with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

1 tablespoon butter
3 large shallots, minced
2 1/3 cups whipping cream
2 large fresh thyme sprigs
1 bay leaf
1 1/2 cups coarsely grated peeled Yukon Gold potatoes (about 9 1/2 ounces)
1 medium Fuji apple, peeled, cored, finely diced (about 1 1/4 cups)
Chopped fresh chives

Steps:

  • Preheat oven to 375°F. Lightly butter six 3/4-cup soufflé dishes or custard cups. Place on baking sheet. Melt 1 tablespoon butter in heavy medium saucepan over medium-low heat. Add shallots; sauté until beginning to soften, about 3 minutes. Add cream, thyme, and bay leaf; increase heat to medium. Simmer 3 minutes. Add potatoes; simmer until partially cooked and mixture is thick and creamy, about 4 minutes. Discard thyme sprigs and bay leaf. Season with salt and pepper.
  • Sprinkle diced apple over bottom of prepared soufflé dishes, dividing equally. Spoon potato mixture over. Cover dishes tightly with foil. Bake until potato mixture and apples are tender, about 30 minutes (tops will not be brown). Remove from oven; let stand 10 minutes. Uncover; sprinkle with chives and serve.

Made with petite new potatoes, crisp red apple, and fresh garden herbs! A lovely alternative to regular potato salad, with the addition of tarragon and lovage! Lovage is a wonderful old-fashioned herb, very similar to celery, but a little stronger in taste and with a hint of anise -- a new addition to my herb garden and it is quickly becoming one of my favorites! You may substitute celery for the lovage, if you wish.

2 lbs petite yukon gold potatoes, washed and scrubbed, but not peeled
1/3 cup mayonnaise
2 tablespoons onions, finely chopped
1 small red apple, chopped
4 tablespoons fresh lovage, chopped (stems and leaves, or use celery)
1/2 teaspoon celery seed (or lovage seeds)
2 teaspoons finely minced fresh tarragon (or 1 teaspoon dried tarragon)
1 tablespoon tarragon vinegar
2 hardboiled egg, chopped
salt and pepper, to taste
fresh tarragon, to garnish (optional, or fresh lovage)

Steps:

  • Bring unpeeled scrubbed potatoes to a boil in enough salted water to cover. Lower heat to a simmer and cook until potatoes test done with a fork, about 15 minutes.
  • Drain potatoes in a colander, and allow to cool. When cool, slice potatoes lengthwise and then into 1/4-inch slices.
  • Mix together the remaining ingredients in a large bowl. Add the sliced potatoes, stirring gently to combine. Garnish with a sprig of fresh tarragon or lovage.
  • Serve immediately, or cover and chill until serving time.

1 1/2 lbs medium yukon gold potatoes
1 1/2 lbs medium sweet potatoes (yams)
2 cups heavy whipping cream
1/4 cup butter
2 garlic cloves, minced
1 tablespoon minced fresh Italian parsley
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh sage
1 tablespoon minced fresh thyme
1 1/2 teaspoons fine salt
3/4 teaspoon fresh ground black pepper
1 1/4 cups coarsely grated gruyere cheese (you can substitute with any strong cheese asiago or parmesan)

Steps:

  • Fill large bowl with cold water. Working with 1 Yukon Gold potato at a time, peel, then cut into 1/8-inch-thick rounds and place in bowl with water. Repeat with sweet potatoes. Combine cream, butter, and garlic in medium saucepan; bring to simmer. Remove from heat. Mix all herbs in small bowl. Mix sea salt and black pepper in another small bowl.
  • Butter 13x9x2-inch glass baking dish. Drain potatoes, then pat dry with kitchen towels. Transfer half of potatoes to prepared baking dish. Use hands to distribute and spread evenly. Sprinkle with half of salt-pepper mixture, then half of herb mixture. Sprinkle with half of cheese. Repeat with remaining potatoes, salt-pepper mixture, herb mixture, and cheese. Pour cream mixture over gratin, pressing lightly to submerge potato mixture as much as possible. DO AHEAD: Can be made 6 hours ahead. Cover with plastic wrap and chill. Remove plastic wrap before baking.
  • Preheat oven to 400°F Cover gratin tightly with foil. Bake 30 minutes. Uncover; bake until top of gratin is golden and most of liquid is absorbed, about 25 minutes longer. Let stand 10 minutes; serve.

2 poblano chiles, roasted, peeled, seeded and diced
6 garlic cloves, peeled, finely chopped
2 lbs yukon gold potatoes, peeled and cut into 1/8-inch slices
1/2 cup chopped fresh cilantro, plus extra for garnish
1 cup chicken stock (if using canned, low sodium)
1 cup heavy cream
1 cup monterey jack cheese
1/2 cup Anejo cheese
butter, to butter the baking pan

Steps:

  • Preheat oven to 400 F degrees. Butter a 9-inch square pan and sprinkle the garlic over the bottom of the pan.
  • Arrange 1/4 of the potatoes in the dish. Sprinkle with salt and pepper, then sprinkle 1/3 of the chiles and 1/3 of the cilantro. Repeat the layers of potatoes, chiles & cilantro 2 more times, seasoning the potatoes with salt and pepper as you layer. Top with potatoes. Pour broth over, then cream. Sprinkle with salt and pepper. Cover the pan with foil. Bake until potatoes are tender, about 1 hour and 15 minutes. Uncover and sprikle with the cheeses over potatoes. Bake until the liquid thickens, about 15 minutes.
  • Cool. Sprinkle with rest of cilantro. Enjoy!

Years ago, one of the first meals I served my newlywed son and wife included this gratin. It's delicious without a lot of extra fat. There are some similar potato gratin recipes here, but none exactly the same. This is the one I know and love, the original, published by Martha Stewart in 1994.

1/2 tablespoon unsalted butter
1 lb yukon gold potatoes, Yellow Finn or 1 lb any medium-starch potato
2/3 cup grated gruyere cheese, a high quality brand
1 teaspoon olive oil
1 tablespoon fresh thyme leave (or, 1 teaspoon dried thyme leaves)
3/4 teaspoon salt
1/8 teaspoon fresh ground pepper, more if desired
1/3 cup low sodium chicken broth
fresh fresh thyme sprig, for garnish. (4 or 5) (optional)

Steps:

  • Heat oven to 400 degrees. Butter a 9-inch round or oval baking dish.
  • Using a mandoline, slicer or a very sharp knife, slice potatoes 1/8" thick and combine gently but thoroughly with 1/3 cup of the Gruyere, the olive oil, thyme leaves, salt, and pepper in a mixing bowl.
  • Arrange potatoes in a neat, overlapping pattern in the baking dish. Pour chicken stock over potatoes and sprinkle remaining cheese over top.
  • Bake until potatoes are tender and the cheese and potatoes are starting to brown, about 45 minutes. Garnish with thyme sprigs as desired.

Recipe calls for 13x9" baking dish, but I use the next larger size, since estimating amounts of potato slices is inexact ! Easy to prepare ahead and bake when you start the rest of the meal.

2 1/4 lbs yukon gold potatoes, rinsed
1 1/2 lbs red sweet potatoes, peeled

1 garlic clove, pressed

1 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
1 cup whipping cream

Steps:
