A healthy, tasty muffin your family is sure to love. For the Greek yogurt, I highly recommend Oikos or Chobani. It lends a very delicate texture to the end product. The blueberry flavor doesn't come through on its own, but adds a nice depth of flavor.

3/4 cup all-purpose flour
3/4 cup whole wheat flour
2/3 cup brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons ground flax seeds
1 cup rolled old fashioned oats
1 1/2 cups mashed ripe bananas
4 ounces blueberry Greek yogurt
2 eggs, beaten
1/4 cup canola oil
2 teaspoons vanilla
oats

Steps:

  • Preheat oven to 350 degrees.
  • Combine all dry ingredients and set aside.
  • In a separate bowl, combine all wet ingredients.
  • Slowly mix in the dry mixture until well combined.
  • Spray your muffin pans with nonstick spray.
  • Fill each muffin cup 3/4 full and sprinkle with oats.
  • Bake at 350 for 18-20 minutes, depending on how moist you like your muffins.

Yogurt Banana Oat Muffin Serves 8

⅔ cup rolled oats
¼ cup plain, non fat yogurt
¼ cup 1% milk
¾ cup whole wheat pastry flour
¼ cup light brown sugar
⅛ teaspoon salt
½ teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon baking soda
1 teaspoon baking powder
1 large, ripened & mashed banana
2-1/2 tbsp canola oil
1 beaten egg
5 tablespoon unsweetened carob chips (or chocolate chips)
Cooking Spray

Steps:

  • Preheat your oven to 410F and spray a muffin tin.
  • Mix the rolled oats and yogurt together; add the milk and let the mixture sit for 10-12 minutes.
  • In a medium bowl, gently mix the flour, sugar, salt, cinnamon, nutmeg, baking soda and baking powder until evenly combined.
  • In a large bowl, mash the bananas then wisk in the egg and oil. Using a spatula, mix in the oat-yogurt-milk mixture until combined. Gradually add the flour mixture until combined - do not overmix!! If desired, add the carob chips (you could also use chocolate chips, nuts or dried fruit!). Fill the muffin cup about ⅔ of the way full and bake for about 14-16 minutes, or until a toothpick comes out clean! Enjoy!

1 cup whole wheat flour
¼ cup ground flax seeds
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2 ripe bananas
1 cup white sugar
½ cup light brown sugar
½ cup margarine
3 eggs
½ teaspoon vanilla extract
1 cup vanilla yogurt
1 ripe pear, chopped

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a muffin tin with paper liners.
  • Sift all-purpose flour, whole wheat flour, ground flax seeds, baking soda, baking powder, and salt together in a large bowl.
  • Combine bananas, white sugar, brown sugar, and margarine in a separate bowl; beat with an electric mixer until creamy and fluffy. Beat in eggs one at a time. Stir in vanilla extract. Beat in vanilla yogurt gradually. Beat in flour mixture until well blended. Fold pear into the batter.
  • Fill muffin cups 1/3 of the way with batter.
  • Bake in the preheated oven until tops are browned and a toothpick inserted into the center comes out clean, 15 to 20 minutes. Transfer to a cooling rack to cool.

2 bananas
2 eggs
⅓ cup maple syrup
¼ teaspoon salt
2 teaspoons baking powder
2 teaspoons vanilla extract
1 tablespoon cinnamon
1 cup greek yogurt
3 cups oats
1 cup whole milk
topping of your choice, as desired

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, maple syrup, salt, baking powder, vanilla extract, cinnamon, and Greek yogurt into mixture.
  • Add oats and milk, and mix. Let the mixture sit for a few minutes, so the oats soak up the liquid and the consistency is like oatmeal.
  • Line muffin tins with muffin liners. Pour the mixture into each muffin cup about ¾ full. Add your preferred toppings and gently push your toppings into each muffin cup.
  • Bake for 30 minutes.
  • Let cool for 5 minutes before eating. Once cool, you can also store in an airtight container or freeze in a storage bag.
  • Enjoy!

1 cup mashed bananas

Steps:

  • Combine flour, oats, sugar, baking powder, soda, and salt.
  • In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
  • Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.
