1 1/2 cups flour
1 1/2 cups chapati flour
1 teaspoon sugar
1 teaspoon salt
4 -5 tablespoons ghee
2 teaspoons kalonji, seeds
1 1/2 teaspoons yeast
1 1/2-2 cups warm water
oil (for frying)

Steps:

  • Mix sugar, 1 1/2 c warm water, and yeast.
  • Leave aside.
  • Mix dry ingredients plus ghee and add sugar/yeast mixture.
  • Knead 5-10 minutes into a semi-soft dough.
  • Cover and keep warm until double in size.
  • Divide into 18-20 and roll into rounds, or roll the whole piece of dough flat and cut out with a biscuit cutter.
  • Deep fry until golden brown on both sides, turn if necessary.

Delicious Homemade Puri! image

Great, easy to make, soft puri that go well w/Aloo or Chanae or even Charisma's amazing Semolina Halwa (I think by the name Heavenly and Sinfully divine Semolina Halwa-if I'm correct). I've never made puri in my life, and I've sneaked this recipe from a professional cook, you cannot possibly go wrong with this one. Trust me!

2 cups sifted whole wheat flour (Atta)
1 cup sifted flour
1 1/2 teaspoons sugar
2 tablespoons oil
2 tablespoons yogurt
1/2 cup milk

Steps:

  • In a large mixing bowl combine the whole wheat and regular flours.
  • Make a well in the middle of the mixture, and add the liquid ingredients, and combine everything together using your hands to make a firm dough.
  • Divide the dough into 20 small balls approximately.
  • The balls should be small enough to make small sized tortillas.
  • Roll out each ball on a floured surface.
  • Deep fry, keeping the top side of the puri on top, until lightly golden.
  • Ready to be served,enjoy!

  • Add flour, rava, sugar, and salt to a mixing bowl and mix well. Then slowly add the water a little bit at a time and mix it in with the flour using the fingertips of your dominant hand. Keep adding water and knead until firm dough starts to form.
  • Attach the spiral dough hook to the stand mixer. Add flour, semolina, sugar, and salt then mix by starting the mixer at speed
  • Knead the dough once more for a minute and make small round balls from it. With 4 cups of dough you can make roughly 25-30 balls. Add oil in a frying pan and preheat on low to medium heat.
  • Turn the heat for the frying pan to medium high. Allow it to heat up and then carefully slide in rolled puri in the hot oil.
