CLASSIC CANDIED YAMS
With just the right amount of sweetness and spice, these sweet potatoes are cooked on the stovetop until they are tender, freeing up valuable oven space at your holiday meal.

Steps:
- Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
- Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl. Add the sugar mixture to the Dutch oven and whisk until it forms a paste. Add the potatoes and stir well, spooning the sugar mixture over the potatoes to coat evenly.
- Cover and cook the potatoes, stirring occasionally and gently to avoid breaking them up, until they are just tender when pierced with the tip of a knife and the sauce resembles a thin syrup, 25 to 30 minutes.
- Meanwhile, preheat the oven to 350 degrees F. Spread the pecans on a baking sheet and toast until dark brown with a light scent of roasted nuts, about 8 minutes. Season the pecans with some salt while warm, let them cool completely and coarsely chop.
- Transfer the potatoes with their sauce to a large serving platter and sprinkle the pecans over the top.
YAM CANDY (AKA) SWEET POTATO CANDY
I thought I would share some of my favorites, These are some that I have to make quite often. this is a hand me down recipe.

Steps:
- Bake sweet potato as you would a plain potato.
- When done use only insides of potato.
- Measure out 1 1/2 potato let cool completely.
- In a bowl Sift sugar, mix well with margarine, milk , cinnamon, almond extract, vanilla extract and cooled sweet potato.
- Knead until smooth with your hands until mixed well.
- Add coconut.
- Shape into balls about 1 1/2 inches round.
- Dust with powdered sugar.
- Refrigerate.
- makes around 25-30 balls.

PIONEER POTATO CANDY
The main ingredients for this old fashioned candy are mashed potato and confectioners' sugar. Salted peanuts can be substituted for shredded coconut for a different taste. Best to use left over chilled mash potatoes. This candy tastes just like a PeterPaul mound. You can put an Almond on top of each candy ball and it will taste like an Almond Joy.

Steps:
- In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth.
- In a mixing bowl, combine the potato, salt and vanilla and the coconut. Sift the confectioners sugar over potato, stirring and adding about 1 cup at a time. Mixture will liquefy when first sugar is added then gradually begin to thicken.
- When it becomes the consistency of stiff dough, knead it even though not all the sugar has been added.
- After kneading, cover with a damp cloth and chill until a small spoonful can be rolled into a ball. Shape in small 1/2 inch balls. Dip balls in melted chocolate then roll in peanuts or coconut.

GRANDMA SHUFELT'S POTATO CANDY
Potato candy is a treasured memory of Christmas past. Grandma Shufelt, and then Aunt Claris made this rich treat only once each year. Was Dad ever surprised when I made it for him after my aunt passed. I'm the only family member who thought to ask for this 'secret' recipe.

Steps:
- Cook and mash potatoes.
- While still warm, add the powdered sugar.
- Mix well.
- Add the coconut and nuts (I use peanuts).
- Add vanilla.
- Mix well.
- Form into small shapes or balls and leave for a while to cool and set.
- Melt dipping chocolate in a double boiler.
- Using a toothpick, roll each ball into the melted chocolate.
- Store in a cool place.

- Peel hot potato and smash it up real good with a fork, about 1/2 cup mashed.
- Add 1/4 teaspoon vanilla.
- Add enough powdered sugar to create a stiff dough. You may need more sugar.
- Roll out on powdered sugar, spread with peanut butter.
- Roll up from one end, pinwheel fashion, slice into 1/4 inch slices.

When Fred Harvey opened his first Harvey House restaurant in 1876 on the railway line in Topeka, Kan., his idea was radical for the time: Railroad passengers would be fed good food in a pleasant environment. His concept was so successful that it spawned 84 restaurants, a Hollywood movie and an official cookbook. And it was in "The Harvey House Cookbook" that we found this excellent recipe for sweet potatoes candied with confectioners' sugar and butter. It is best served warm rather than piping hot, which makes it convenient for big meals like Thanksgiving. Bake it before you roast your turkey, then reheat it briefly just before serving.

- In a large pot, boil sweet potatoes in their jackets in water to cover until fork-tender, 20 to 45 minutes depending upon their size. Drain and cool.
- Heat oven to 450 degrees. Peel potatoes and slice into 1/2-inch-thick rounds. Place in a 9-by-13-inch baking dish or 2-quart gratin dish, overlapping slices to fit in one layer.
- In a small saucepan, melt butter. Whisk in sugar and salt until smooth. Pour evenly over the potatoes. Bake until potatoes look shiny and glazed, 25 to 30 minutes. Serve hot or warm.

- Turn out ube mixture onto a work surface and roll into ½"-thick logs. Sprinkle sugar over surface; roll logs in sugar until generously coated. Cut into 1½" pieces.
