- In a large bowl, beat cream cheese and 1/2 cup milk until smooth. Beat in dry pudding mix and remaining milk. Fold in the marshmallows. Pour into the crust. Refrigerate until serving.

MARCIA-MALLOW PIE

- Heat the marshmallows and 1 1/2 cups of the heavy cream in a pot over medium heat, stirring gently, until the marshmallows are completely melted, about 4 minutes. Set aside and allow the mixture to cool to the touch, about 20 minutes.
- Meanwhile, make the crust. Pulse the graham crackers in a food processor or crush using a rolling pin in a resealable plastic bag with the air taken out until they are evenly sized crumbs. Transfer the graham cracker crumbs to a bowl, add the sugar and mix until evenly combined. Next, pour in the melted butter and fold the mixture until the butter is distributed. It should be the texture of wet sand.
- Transfer the crumb mixture to a 9-inch pie pan, reserving a few pinches for garnishing the finished pie later. Press the crumbs into the bottom and sides of the pan to form a crust. Some will come up and over the top of the pan.
- When the marshmallow mixture has cooled, add the vanilla to the remaining heavy cream. Whip the cream by hand with a whisk or in a stand mixer with a whisk attachment to soft peaks. Gently fold the whipped cream into the cooled marshmallow mixture.
- Transfer the filling to the prepared crust and smooth out with a spatula. Sprinkle with the reserved graham crumb mixture and dot with the maraschino cherries, putting one directly in the center. Chill until set, about 3 hours.

- Microwave 2 cups marshmallows and 2 Tbsp. milk in microwaveable bowl on HIGH 45 sec.; stir. (Marshmallows will not be completely melted.) Refrigerate 15 min. or until cooled.
- Stir in 1 cup COOL WHIP with whisk until blended. Stir in remaining marshmallows. Spoon into crust.
- Beat pudding mixes and 2 cups milk in large bowl with whisk 2 min. or until well blended. (Mixture will be thick.) Gently stir in 1-1/2 cups COOL WHIP; spoon over marshmallow mixture. Top with remaining COOL WHIP. Drizzle with melted chocolate.
- Refrigerate 4 hours or until set.

- In a medium saucepan over low heat stir marshmallows and 1/2 cup of reserved pineapple syrup constantly until marshmallows are melted.
- Chill until thickened.
- In chilled bowl, beat whipping cream until stiff.
- Fold in marshmallow mixture until well blended.
- Add all but 1/2 cup crushed pineapple, along with vanilla and salt.
- Pour into prepared crust and garnish with remaining crushed pineapple.
- Chill for at least 2 hours before serving.

APPLE MALLOW YAM BAKE
I found this in an old church cookbook. The only change I made is instead of using a can of yams, I cook 6 yams and use those instead as I prefer fresh over canned yams.

- Combine brown sugar and cinnamon.
- Toss apples and nuts with the brown sugar mix.
- Alternate layers of apples and yams in a 2 quart casserole dish.
- Dot with butter between each layer.
- Cover and bake at 325 degrees for 30 minutes.
- Uncover and bake for an additional 30 minutes.
- Remove and sprinkle top with marshmallows.
- Place back in oven on "broil" until marshmallows are lightly browned.

- Preheat heat oven to 375°F. Mix wafer crumbs, pecans and butter; press firmly onto bottom and up side of 9-inch pie plate. Bake 5 min.; cool.
