Time 40m

Number Of Ingredients 18

1 tbsp olive oil
2 large yukon gold potatoes (about 1 lb) (diced into 1/2" cubes)
1 lb ground beef
1 large yellow onion (diced to 1/2")
1 tbsp fresh ginger (grated or finely minced)
2 cloves garlic (minced)
1 tsp sea or kosher salt
1 tsp cracked black pepper
1 1/2 tbsp curry powder
1 tsp garam masala
1/2 tsp turmeric
1 tbsp tomato paste
1 14-oz can fire-roasted diced tomatoes
1 14-oz can full-fat unsweetened coconut milk
1 c frozen baby peas
2 tbsp cilantro (plus additional for serving)
lime juice (to taste, for serving)
steamed rice (or naan, for serving)

Steps:

  • Heat the oven to 425°F. Toss the potatoes with olive oil and spread onto a parchment lined baking sheet. Transfer the baking sheet to the oven and roast 25-30 minutes, flipping once halfway through, until tender and golden brown.
  • Heat a dutch oven over medium high heat. Add the ground beef and onion and cook, stirring frequently to break up the beef into smaller pieces. Cook until the ground beef is no longer pink and the onion is translucent, 6-7 minutes.
  • Add the ginger and garlic. Sautee, stirring constantly, for 1-2 minutes, until very fragrant.
  • Add the salt, pepper, curry powder, garam masala, turmeric, and tomato paste. Stir until the the tomato paste is worked into the beef, and the spices are fragrant, about 2 minutes.
  • Add the tomatoes and coconut milk and give everything a good stir. Bring the liquid to a boil, then reduce the heat to medium low. Simmer, stirring occasionally, until the curry thickens and the color turns a deep golden orange, about 10 minutes.
  • Stir in the frozen baby peas and roasted potatoes. Simmer until the peas are warmed through, 2-3 minutes. Remove from heat and stir in the cilantro.
  • Ladle into serving bowls over your base of choice (rice, naan or other, see post notes), sprinkle with lime juice and more fresh cilantro, and serve immediately.

GROUND BEEF CURRY (KIMA CURRY)

Ground Beef Curry (Kima Curry) image

This recipe is from one of my new favorite cookbooks, Extending the Table. The notes on this recipe say that this Swahili dish is served by a restaurant in the heart of Nairobi. I have only modified it to make the recipe fit into Zaar format, to preserve the authenticity of the recipe. This is a very mild, very easy to make curry.

WORTH IT GROUND BEEF CURRY

Worth It Ground Beef Curry image

This can be made with any meat. My husband prefers beef. He is a meat and potatoes man but this is for some reason one of his favorites anyway! It needs some simmer time and has many ingredients. I make a 4x batch and freeze.

Provided by Pabbit

Categories     Curries

Time 1h

Yield 4 serving(s)

Number Of Ingredients 21

1 lb ground beef
1 medium onion, chopped
4 tablespoons butter or 4 tablespoons margarine
6 whole cardamom seeds
4 whole cloves
1 garlic clove, chopped
3 tablespoons tomato paste
1/2 cup sour cream
2 tablespoons curry powder
1 teaspoon salt
1/8 teaspoon cayenne pepper (optional)
2 bay leaves
1 cinnamon stick
2 cups cooked rice, warm
peanuts, chopped
raisins
pineapple
banana
coconut
orange section
chutney (any flavor)

Steps:

  • Brown meat.
  • Drain and set aside.
  • In same skillet, melt butter.
  • Cook onions, seeds, cloves, garlic, bay leaf, and cinnamon stick for 10 minutes.
  • Add curry powder, salt, pepper and tomato paste and fry for 3 minutes.
  • Add browned meat and sour cream.
  • Stir to combine.
  • Cover and cook 30 minutes, stirring occasionally.
  • Remove seed, cloves, cinnamon stick and bay leaf (I have a friend who refuses to find the seeds and cloves. Her husband loves this so much he doesn't mind occasionally biting down on them!) Serve over rice.
  • Top as desired.
  • My husband loves the fruit chilled.
  • He tops with nuts and coconut, then whatever fruit we have chilled, then chutney.
  • He eats until he hurts!
  • I leave out the pepper.
  • This dish has a lot of flavor and does not need hot, but some people need chutney to be hot.
