WOODLAND PLANTATION PUNCH
This recipe was published in the LCBO's Food and Drink Magazine. Have you ever wondered about the mansion on the label of Southern Comfort bottles? It's called Woodland, a real Louisiana plantation house and the last of its kind along the great effluvial delta of the Mississippi that juts far into the Gulf of Mexico. It has been restored and transformed into a beautiful, nine-bedroom inn, filled with period antiques, and looks across the gardens at another salvage project, a century-old wooden Baptist church rescued from a nearby town. The plantation's owners, the Creppel family, have turned the church into a restaurant and bar called Spirits and it comes as no surprise that house cocktails are based on Southern Comfort. The popular flavored whiskey was invented in New Orleans in 1875. This cocktail was created by the firm's ambassador, Lou Giglio, in honour of Woodland plantation.

PLANTATION PUNCH
This punch has a tradition of being served in the South, and is best made with freshly squeezed lemon and lime juices and not-from-concentrate fresh orange juice. The prep is done the night before, so you can put the whole punch together in about 5 minutes the next day. (The cooking time is actually the time the punch needs to be in the fridge overnight.)

Steps:
- The night before serving, mix the orange, pineapple, lemon and lime juices with the sugar and grenadine to dissolve the sugar.
- Place half of the chopped pineapple cubes in a 6-cup round ring mold or fluted tube cake pan.
- Pour in about 5 cups of the punch.
- Freeze until the punch is solid, at least overnight.
- Separately cover the remaining punch and pineapple cubes and refrigerate.
- When ready to serve, stir together the remaining punch, pineapple cubes and the rum.
- Pour into a punch bowl.
- Dip the outside of the ring mold in a large bowl of warm water until the frozen punch ring loosens from the mold, about 10 seconds.
- Unmold the ice ring into the punch and serve immediately.

STEAMED PORK DUMPLINGS
I love dumplings/pot stickers and these are seriously good. From Canadian LCBO's Food and Drink Magazine. I am sure that these would work with chicken or turkey instead of pork. You can freeze these dumplings for an easy plan-ahead appetizer / snack / dinner. Serve with Recipe #397489.

Steps:
- Mix together pork, green onions, cilantro, ginger, mushrooms, soy sauce, sesame oil, sugar, cornstarch and egg white in a large bowl until well combined.
- Working with 6 wrappers at a time, use fingertip to wet edges of each wrapper with water.
- Top each wrapper with 2 teaspoons pork mixture.
- Bring the 4 corners up towards the top of the filling, pleat the sides of the wrapper to form a cup, and press the wrapper snugly around the filling. The dumpling does not need to be fully enclosed at the top.
- Keep the dumplings covered with dampened tea towel while working.
- Place a bamboo steamer in a large pot and add enough water to come just below the base of the bottom steamer.
- Line each basket with a single layer of cabbage leaves to prevent the dumplings from sticking; important, do not omit or you will be eating of the steamer :).
- Place a single layer of dumplings on top of leaves.
- Cover and simmer for 8 minutes or until pork is cooked through; do not overcook.
- Serve warm with Recipe #397489 or other dip.
PLANTATION COFFEE PUNCH
If you like iced coffee or coffee ice cream and CHOCOLATE, this is the punch to make. It reminds me of Coffee Coolata from Dunkin' Donuts.
