POSSUM'S SOUTHERN COMFORT CAKE

Possum's Southern Comfort Cake image

Add another 1/4 cup of Southern Comfort if you'd like -- you're the chef, you deserve a drink after making this treat for your friends or family! :) Try substituting pecans or almonds instead of the walnuts; instead of yellow cake mix and chocolate chips, try chocolate cake mix and pineapple chunks...mix and match, possibilities are endless! But here's the base recipe to start out with...

Provided by Poss824

Categories     Dessert

Time 1h25m

Yield 12 serving(s)

Number Of Ingredients 8

1 (18 1/4 ounce) package yellow cake mix
1 (3 ounce) package vanilla instant pudding mix
4 eggs
1 1/2 cups walnuts, chopped
1/2 cup semi-sweet chocolate chips
1/2 cup milk
1/2 cup oil
1/2 cup Southern Comfort

Steps:

  • Preheat your oven to 350 degrees.
  • Grease or spray a 13"x9" cake pan.
  • Mix all ingredients thoroughly in good-sized bowl.
  • Add batter into the pan.
  • Bake at 350° for 75 minutes (cooking time will vary from oven to oven).
  • Test with a toothpick poked in the center- if it comes out without batter clinging to it, it's done.
  • Enjoy!

SOUTHERN COMFORT JAMBALAYA

Southern Comfort Jambalaya image

Adapted from the Southern Comfort Recipe site, with a few changes. One pound chopped smoked ham can be substituted for sausage. For a stronger tomato taste, add 1 small can of low-sodium tomato paste with the chicken stock. You can also use boiled rather than raw shrimp to save some trouble. I'm somewhat guessing at preparation and cooking times. I almost always cook with low-sodium ingredients and let people add salt at the table, if desired; however, this need not be made with low-sodium ingredients if you prefer otherwise.

Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 21

1 lb smoked sausage, sliced
1/4 cup safflower oil or 1/4 cup canola oil
3/4 lb boneless chicken
1 cup chopped green bell pepper
1 cup chopped red bell pepper
1 cup chopped yellow bell pepper
1 1/2 cups chopped scallions
1 1/2 cups chopped red onions
1 cup chopped celery
3 garlic cloves, minced
1 (14 1/2 ounce) can no-salt-added whole tomatoes, with liquid
1 1/2 teaspoons thyme
1 teaspoon oregano
3/4 teaspoon salt
3/4 teaspoon black pepper
1 teaspoon hot pepper sauce
1 3/4 cups converted rice or 1 3/4 cups long-grain white rice
1 (15 3/4 ounce) fat-free low-sodium chicken broth or 2 cups low-sodium chicken bouillon
3/4 cup Southern Comfort
2 tablespoons Worcestershire sauce
3/4 lb shrimp, peeled and deveined

Steps:

  • In large pot, sauté sausage in oil until lightly browned.
  • Remove sausage from pot and sauté chicken until cooked.
  • Remove chicken and sauté bell peppers through garlic until tender.
  • Add tomatoes (with liquid) through hot pepper sauce and cook 5 minutes.
  • Stir in rice.
  • Add chicken stock through worcestershire sauce; bring to a boil, then reduce to a simmer and add sausage, chicken and shrimp.
  • Cook uncovered, stirring occasionally, 30-45 min until rice is done and shrimp is cooked. (If additional liquid is needed before rice is done, add a 50/50 mixture of water and Southern Comfort).

BLUEBERRY CORDIAL

Blueberry Cordial image

Simple. Cheap. No artificial anything. And Delicious! A wonderful cheap treat for your family's drink bottles. I created this after being unable to find a kid-friendly blueberry cordial recipe. I used frozen berries but fresh would do, of course! Time shown does not include the overnight steeping time, which is optional but advised to get the max flavour.

Provided by RubberDucky AU

Categories     Punch Beverage

Time 30m

Yield 1 3/4 litres

Number Of Ingredients 4

4 cups sugar
4 cups boiling water
3 cups blueberries, frozen
4 teaspoons citric acid

Steps:

  • In a large saucepan combine everything. Simmer over medium heat and stir with wooden spoon to dissolve the sugar. Mash the berries as they soften, with the spoon, or a potato masher. I tried an immersion blender which worked ok but the masher was the most effective.
  • Once dissolved, let cool, then steep overnight in the refrigerator. This will get the max flavour from the berries.
  • Next day, strain into a bottle (clean softdrink is perfect). I used a funnel with a wire mesh strainer over the top, and poured a little at a time. Squeeze the juice from the pulp through the strainer. Set pulp aside - delicious with icecream!
  • To reconstitute to a delicious drink, try 1 part cordial to 5 or 6 parts water. This will depend on how sweet you like your drinks.
  • KEEP IN REFRIGERATOR.
  • It makes 1.75 litres which will creat about 12 litres of drink.

PLANTATION PUNCH

Plantation Punch image

This punch has a tradition of being served in the South, and is best made with freshly squeezed lemon and lime juices and not-from-concentrate fresh orange juice. The prep is done the night before, so you can put the whole punch together in about 5 minutes the next day. (The cooking time is actually the time the punch needs to be in the fridge overnight.)

Provided by TasteTester

Categories     Low Protein

Time P1DT25m

Yield 12-16 serving(s)

Number Of Ingredients 8

3 cups fresh orange juice
3 cups canned unsweetened pineapple juice
1 1/2 cups fresh lemon juice
1 1/2 cups fresh lime juice
3/4 cup superfine sugar
3/4 cup grenadine
1 ripe pineapple, pared, cored, and cut into 1-inch cubes
1 1/2 cups rum (golden or dark)

Steps:

  • The night before serving, mix the orange, pineapple, lemon and lime juices with the sugar and grenadine to dissolve the sugar.
  • Place half of the chopped pineapple cubes in a 6-cup round ring mold or fluted tube cake pan.
  • Pour in about 5 cups of the punch.
  • Freeze until the punch is solid, at least overnight.
  • Separately cover the remaining punch and pineapple cubes and refrigerate.
  • When ready to serve, stir together the remaining punch, pineapple cubes and the rum.
  • Pour into a punch bowl.
  • Dip the outside of the ring mold in a large bowl of warm water until the frozen punch ring loosens from the mold, about 10 seconds.
  • Unmold the ice ring into the punch and serve immediately.
