WONDERFUL SMOKEY OVEN-BARBECUED BRISKET

Make this brisket on a day when you have a bit of time, slow cooking at a low oven temperature for 6 hours is the only way to go for this recipe. Plan ahead the meat must be refrigerated for 8 hours before cooking. Recipe#186700 and recipe#69020 both go wonderful with this brisket...this is delicious!

1 (5 -6 lb) beef brisket
1 (5 ounce) bottle liquid smoke
2 medium onions (chopped or sliced)
2 tablespoons fresh minced garlic (or to taste)
2 teaspoons garlic salt
2 teaspoons white salt
1 teaspoon black pepper
1/4 teaspoon cayenne pepper (or to taste)
1/3 cup Worcestershire sauce
1 (18 ounce) bottle barbecue sauce (can use a 12-ounce bottle)

Steps:

  • Place the brisket in a glass shallow dish; pour the liquid smoke over the brisket then rub all over with fresh garlic.
  • Place the onions on and around the brisket.
  • In a small bowl mix together the garlic salt, white salt, cayenne pepper and black pepper, then sprinkle the meat all over with the spice mixture.
  • Cover and refrigerate for 8 hours.
  • Remove the brisket and place on a large piece of heavy-duty foil, then discard the liquid smoke mixture.
  • Place the foil with the brisket on it in a large roasting pan, then pour the Worcestershire sauce evenly over the brisket.
  • Fold the foil up to seal tightly (prick a few small holes with a fork in the foil to allow the steam to escape).
  • Set oven to 275 degrees.
  • Bake for 5 hours.
  • Remove from oven and unfold the foil; pour the barbecue sauce evenly over the roast, return to oven UNCOVERED and cook for another hour at 275 degrees.
  • Delicious!

This Oven-Barbecued Beef Brisket is so smokey, tender, and juicy. No one will ever guess it wasn't cooked on the grill.

1 1/2 tablespoons packed light brown sugar
1 1/2 tablespoons paprika
2 teaspoons dry mustard
2 teaspoons ground black pepper
2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 (4-5 pounds) brisket roast - if there is a thick layer of fat (trim it down to 1/4 inch)
1 pound bacon
reserved bacon from cooked brisket
1 onion, (finely chopped)
1/2 cup cider vinegar
1/3 cup packed dark brown sugar
1-2 cups chicken broth
1/2 cup ketchup
4 teaspoons canned chipotle peppers in adobo sauce, (minced)

Steps:

  • Make the rub. Mix all ingredients well in a small bowl and set aside.
  • Place oven rack in upper-middle position and heat oven to 275 degrees. Rub dry rub all over brisket and poke holes all over with a fork. Place half of bacon going crosswise in a broiler safe 9 by 13-inch pan (it's best not to use glass). Put brisket fat side down on top of bacon. Lay the rest of the bacon crosswise on top of brisket, wrapping it down around the sides, and tucking any excess under. Cover pan with foil and place in oven for 4 hours.
  • Take pan out of oven. Carefully flip brisket over, fat side up. Replace foil and return to oven. Turn off heat and leave brisket in oven 1 additional hour.
  • Pour accumulated juices from brisket into large measuring cup or a bowl. Remove bacon from brisket and chop into pieces. Cook bacon in medium saucepan over medium heat for about 5 minutes, until fat has rendered. Add onion and cook until softened, 4-5 minutes. Take off heat and add vinegar and dark brown sugar. Return to heat and simmer until reduced to a syrupy consistency, about 5 minutes.
  • Skim fat from accumulated juices and add chicken broth to make a total of 3 cups. Add to mixture in saucepan and reduce until about 3 cups in volume, 8-10 minutes. Take off heat and add ketchup. Mix well and strain if desired. (I like to strain about half the solid pieces out and leave the rest). After straining, add chipotle peppers.
  • Turn oven to broil. Brush brisket with 1 cup sauce and broil until top is lightly browned and fat starts to crisp. Cut brisket against the grain into 1/4-inch slices and serve with extra sauce.

2 tablespoons ground coriander seed
2 cloves garlic, finely chopped
1/2 cup dark brown sugar
1 tablespoon cayenne pepper
1 teaspoon salt
1 tablespoon ground black pepper
1/4 teaspoon ground cinnamon
3 to 4 pounds fresh beef brisket

Steps:

  • Preheat oven to 300 degrees.
  • Combine all of the seasoning ingredients in a bowl and rub the mix into the beef. Place the brisket in a roasting pan. Slowly cook the beef for 1 hour, turn the beef and cook one hour more before covering with a tight fitting lid. Continue to cook with the lid tightly in place for 2 1/2 to 3 hours more. This will render most of the fat. Carefully pour off and discard the fat. Allow the beef to rest for 20 to 30 minutes before serving.

1 teaspoon garlic powder
1 cup barbecue sauce
1 cup water

Steps:

  • Preheat oven to 325 degrees F (160 degrees).
  • Sprinkle both sides of brisket with salt, pepper and garlic powder. Place in a large covered roasting pan.
  • Cook covered with no water at 325 degrees F (160 degrees C) allowing 1 hour per pound.
  • Before last hour of cooking, remove brisket and slice. Return slices to pan and add barbecue sauce mixed with water. Cover meat with sauce, cover, and cook 1 hour longer.

Fire up the smoker for this flavourful slow-cooked brisket. Serve on a board with charred greens and salsa rossa so everyone can help themselves

2.5kg piece beef brisket
1 tsp cumin seeds
½ tsp red chilli flakes
1 tsp black whole peppercorns
1 tsp fennel seeds
1 tsp dried thyme
2 tsp demerara sugar
2 tsp caster sugar
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp mustard powder
1 tsp salt

Steps:

  • Gently toast the cumin, chilli flakes, peppercorns, fennel seeds and thyme in a pan over a low heat until aromatic. Grind to a fine dust with the demerara sugar using a spice blender or pestle and mortar. Tip into a bowl and mix in the remaining rub ingredients.
  • Season the brisket generously with the rub and leave to stand at room temperature for up to an hour. Prepare the smoker for indirect cooking at 120-130C. Once ready, place the seasoned brisket on the smoker, fat-side up. Leave for 10 hrs or until the outside is a dark, mahogany colour. Top up the smoker as needed.
  • Remove the brisket and wrap in butcher paper. Return to the smoker and continue to cook for 2-3 hrs until the meat reaches 93-94C when probed with a thermometer. Allow to rest for 40 mins before slicing and serving with charred greens and salsa rossa.

3 lbs beef brisket
1 (4 ounce) bottle liquid smoke
1 (20 ounce) bottle barbecue sauce, your favorite brand

Steps:

  • Marinate the brisket in the liquid smoke for 24 hours in the refrigerator; turning several times.
  • Pour off the unabsorbed marinade. Place meat in a roasting pan and cover meat with the bottle of barbecue sauce.
  • Bake in a 325 degree F. oven for 2 1/2 hours or move until tender.
  • Remove meat and slice diagonally against the grain in thin slices. Put back the meat back in the sauce and reheat when ready to use.

  • Starting the night before, line a baking sheet with heavy duty aluminum foil, enough to wrap and make a "pouch" around the brisket, lay your brisket in the middle of the foil.
  • In a small bowl mix together your spices to make a rub, sprinkle evenly over meat and rub into both sides of the meat. Pour the Worcestershire sauce and liquid smoke evenly over the meat, lifting the meat as it drips to the sides so that you get this good stuff under the meat as well as on top.
