WON TON WRAPPER APPETIZERS
Cheesy sausage-based filling in little cups made from baked won ton wrappers. The baked cups and filling may be prepared a day or two in advance (store covered in the refrigerator) and assembled shortly before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a miniature muffin pan with cooking spray.
- Insert wonton wrappers into the muffin pan so as to form small cups. Bake 5 minutes in the preheated oven. Allow the baked wrappers to cool. Remove from the pan.
- In a medium bowl, mix the sausage, Monterey Jack, Cheddar, black olives and Ranch-style dressing. Fill the baked wonton wrapper cups with the mixture.
- Bake the filled wonton wrappers 10 to 15 minutes, until the sausage mixture is bubbly and slightly brown. Watch closely so the wonton wrappers do not burn.

WON TON APPETIZER BITES
This is my friend Heather's recipe, I have changed it slightly as the variations are endless. I hope you will enjoy these, as much as we do. These can be made ahead, covered and refrigerate for several hours or overnight and baked when needed.

Steps:
- Preheat oven to 350 degrees.
- Spray 24 muffin cups with cooking spray.
- In each cup, gently place a wonton wrapper.
- The edges of the won ton wrapper should extend up the sides of the cups.
- Bake the wrappers 5 - 7 minutes or until they are golden brown. For best results do not over bake.
- Remove the wrappers from oven and cool until needed.
- Mix the cheeses, pepperoni, onion, olives, peppers and salad dressing together.
- Evenly fill all the won ton cups with the cheese mixture.
- Bake the filled won tons for 6 - 8 minutes or until the cheese is melted.

- 1. In a shallow dish, mix sugar and cinnamon. Set aside.
- 2. In a small bowl, whisk together the egg and the water for the egg wash.
- 3. Place one wonton wrapper on a clean, dry surface. With a small pastry brush or a spoon, paint the edges of the wonton wrapper with the egg wash. Then spoon 1 teaspoon of the pie filling in the middle. Fold over to form a triangle and seal very well. Repeat for remaining. Make sure you have a good, tight seal, otherwise the filling will leak out and cause oil splatters.
- 4. Heat oil to 375 degrees.
- 5. Carefully slide in a few wontons into the oil with a long-handled spoon. (Use a screen to protect you from the oil.)
- 6. Fry for 1 minute on each side, until golden brown. Drain on rack.
- 7. While still warm, sprinkle won ton on both sides with sugar/cinnamon mixture or powdered sugar and place back on rack to cool. (It's fun to have some of each for variety.)
- 8. Transfer to a serving tray or to individual serving dishes.
- 9. These are great served warm but are also very good at room temperature.
WONTON PEPPERONI PIZZA BITES

- Preheat oven to 375 degrees F.
- Carefully fit wonton wrappers into mini muffin tins; no need to grease the pan. Bake for 6 to 7 minutes; remove from oven to cool. Can be done ahead.
- If serving immediately, lower oven temperature to 350 degrees F.
- Fold each turkey pepperoni slice into fourths, place one in bottom of baked wonton cups. Cut tomatoes in half, use your index finger to remove as many seeds as possible then finely chop tomatoes, place in a small bowl with the scallion and black pepper. Add a small amount of salt, do not use too much, the meat is spicy; mix well and spoon on top the pepperoni. Add the grated Fontina cheese and sprinkle with dried Thyme. Place in 350 degree oven for 2 to 3 minutes or until cheese is melted and serve.
