My husband and I live in the Dairy State of Wisconsin. So this soup is perfect, since we get to use our state's fantastic cheese and milk.

1/2 cup chopped onion
1/2 cup butter
2/3 cup all-purpose flour
1 teaspoon ground mustard
1 teaspoon paprika
1 teaspoon salt
4 cups whole milk
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
3 cups shredded cheddar cheese
3/4 to 1 cup chicken broth
Minced chives, optional

Steps:

  • In a large saucepan, saute onion in butter until tender. Combine the flour, mustard, paprika and salt; add to saucepan. Stir to make a smooth paste. , Gradually add milk and soup; cook and stir until thick, about 10 minutes. Add the cheese and chicken broth; stir until cheese is melted. Garnish with chives if desired.

1 (8 ounce) package cold pack wisconsin sharp cheddar cheese
2 teaspoons crushed red pepper flakes

Steps:

  • In a medium saucepan melt butter.
  • Add onion, carrots, and celery, cook until tender.
  • Stir in flour, cook and stir 2-3 minutes or until bubbly.
  • Stir in baking soda.
  • Gradually stir in milk, and broth, bring to a boil, reduce heat and simmer, stirring until mixture thickens slightly, about 10-15 minutes.
  • Add cheese, and red pepper, stirring until melted and well blended.
  • Garnish with parsley.

1 tablespoon olive oil
4 carrots, peeled and diced
2 green bell peppers, seeded and diced
3 tablespoons all-purpose flour
1/2 cup powdered milk
3 cups vegetable stock
1/2 cup sherry
2 cups grated cheddar cheese
1 1/2 cups milk
1/2 tablespoon paprika
1/2 cup finely chopped parsley
Salt and pepper

Steps:

  • Heat the butter and oil in a kettle and saute the carrots and green bell peppers for 5 minutes. Sprinkle the flour and powdered milk over, and gradually add the stock. Make sure that the consistency is smooth, at which time add the sherry, cheese, milk, paprika, parsley, and salt and pepper. Cook, stirring, for 3 minutes.

1/2 cup butter
3 small leeks, white part only, split in half and diced small
3 celery ribs, diced small
1 carrot, peeled and diced small
2 garlic cloves, minced
1/4 cup flour
4 cups chicken broth
1 cup heavy cream
1/2 lb white cheddar cheese, grated (plus 1/4 cup for garnish)
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
1/4 cup chopped crispy cooked bacon
2 tablespoons chopped chives

Steps:

  • In a saucepan, melt butter.
  • Add leeks, celery, and carrot and saute for about 3 minutes or until wilted. Stir in garlic and season with salt and pepper. Dust the vegetables with 1/4 cup of flour and stir for 3 minutes.
  • Whisk in the chicken broth, 1/2 cup at a time.
  • Bring the liquid up to a boil and reduce to simmer. Simmer soupf for 45 minutes. Remove from heat and puree until smooth. Strain soup into a clean saucepan. Bring soup back to a simmer. Whisk in cream, cheese, hot sauce, and Worcestershire sauce. Season with salt and pepper. Ladle into bowls. Garnish with bacon, grated cheese, and long chives.

As a Wisconsin native, I'm accustomed to a fantastic beer cheese soup. This is the recipe I've created, as a salute to my home state...America's Dairy land...and a state that brews a mighty fine beer! Serve with lots of popcorn floating on top!

1 ½ cups diced carrots
1 ½ cups diced onion
1 ½ cups diced celery
2 cloves garlic, minced
1 teaspoon hot pepper sauce
⅛ teaspoon cayenne pepper
½ teaspoon salt
¼ teaspoon black pepper
3 cups chicken broth
2 cups beer
⅓ cup butter
⅓ cup flour
4 cups milk or half and half
6 cups shredded sharp Cheddar cheese
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 teaspoon dry mustard
popped popcorn, for garnish

Steps:

  • In a large saucepan over medium heat, stir together carrots, onion, celery, and garlic. Stir in hot pepper sauce, cayenne pepper, salt, and pepper. Pour in chicken broth and beer; simmer until vegetables are tender, about 12 minutes. Remove from heat.
  • Meanwhile, heat butter in a large soup pot over medium-high heat. Stir in flour with a wire whisk; cook, stirring until the flour is light brown, about 3 or 4 minutes. Gradually stir in milk, whisking to prevent scorching, until thickened. Remove from heat, and gradually stir in cheese. Keep warm.
  • Stir beer mixture into cheese mixture. Stir in Dijon mustard, Worcestershire sauce, and dry mustard. Adjust for hot pepper sauce. Bring to a simmer, and cook 10 minutes. Serve topped with popcorn.

Found this recipe in the local newspaper. It is excellent and a little different than any other beer cheese soup recipe I have ever tried. The beer flavor is not overwhelming - It is just a good combination of flavors!

1 tablespoon bacon fat
1/2 white onion, chopped
1 large shallot, chopped
1 garlic clove, chopped
1 teaspoon pure chile powder
1 tablespoon chopped parsley
1/2 teaspoon ground cumin
1/2 cup beer
4 cups chicken broth
2 tablespoons butter
2 tablespoons flour
2 small poblano chiles, roasted, peeled, seeded and diced
5 oz. shredded cheddar cheese
salt
1/2 lime, juice of

Steps:

  • Heat bacon fat in large sauce or soup pan over medium heat.
  • Add onion, shallots, garlic and chili powder. Saute two minutes or until soft.
  • Add Parsley, cumin powder, beer and bring to a boil.
  • Boil five minutes or until liquid has reduced by half.
  • Add chicken broth and bring to a boil.
  • In a separate sauce pan, melt butter and add flour. Cook while stirring for a few minutes. Gradually add some of the boiling soup mixture into the flour/butter mixture, stirring well before adding more. When you have mixed in enough of the soup mixture to make the the flour mixture a little runnier, add it all back into the big pot of soup.
  • Lower heat and simmer, uncovered, about 40 minutes.
  • Remove soup from the heat and blend with hand blender, or pour into blender by batches and blend until smooth.
  • Add cheese and chilies. Season with salt and lime juice.
  • Serve immediately.

1 cup chicken broth
6 slices bacon, diced
1/4 cup red onion, diced
1/4 cup celery, diced
1/4 cup scallion, chopped
3 tablespoons flour
2 cups white cheddar cheese, shredded
1/2 teaspoon Tabasco sauce
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
fresh chives (to garnish)

Steps:

  • In a 2 quart saucepan, heat milk and chicken broth over med-low heat.
  • Meanwhile, in a 4 or 5 quart Dutch oven, cook the bacon, stirring over med heat for about 5 minutes or until lightly browned.
  • Add the red onion, celery and scallion and cook, stirring until the onion has softened, about 5 minutes.
  • Add the flour and cook, stirring constantly, for about 3 minutes.
  • Remove Dutch oven from heat, add the heated milk mixture, and whisk until well blended.
  • Return to heat and cook, whisking constantly, until the mixture comes to a boil.
  • Boil for 1 minute, or until thickened.
  • Remove the Dutch oven from heat and stir in cheese, Tabasco and Worcestershire sauces, salt and pepper until the cheese is melted and the soup is smooth.
  • Serve soup hot, garnished with chives.

Hudson's was a department store in Michigan which is now owned by Marshall Fields. Hudson's had darling little cafes inside their stores, and one of their specialties was this amazing cheddar cheese soup. It's the best I've ever had, and I think you will agree! Angostura bitters is a surprise secret ingredient that really adds to the flavor. Be sure to use good quality, sharp aged (12 months or more) cheddar. It is absolutely KEY to the success of this recipe.

1 1/2 cups onions, finely chopped
1 cup celery, finely diced
1 1/2 cups carrots, finely diced

3 cups chicken stock
2 lbs sharp aged cheddar cheese, shredded

Steps:

  • Heat the butter in a stockpot over medium high heat until foamy.
  • Add the onion, celery, and carrot.
  • Saute until the onion is softened and translucent.
  • Sprinkle the flour, cornstarch, paprika & baking soda over the vegetables.
  • Cook, stirring constantly, for 2 minutes.
  • Add the milk & chicken stock.
  • Whisk until smooth.
  • Heat, stirring often to prevent milk from burning on bottom of pot.
  • When the carrot is soft, remove the pot from the heat.
  • (At this point, if you prefer a smooth soup, you may blend all with an immersion blender).
  • Add the cheddar cheese, stirring to thoroughly combine.
  • The heat of the soup will melt the cheese.
  • Stir until the cheese is fully integrated and no distinct bits remain.
  • Add salt and pepper to taste.
  • Ladle into bowls.
  • Top each bowl with a dash of Bitters and a sprinkle of parsley.

Steps:

  • Soup Method: In a steam kettle, sweat mirepoix in butter until tender, add garlic to aroma, add flour and cook for 10 minutes. Add stock 1/3 at a time until smooth, simmer for 30 minutes. Add cheese. Combine beer, mustard, Worcestershire, tobasco to the soup. Add cream and puree with blender. Slice chives and garnish with cheese balls. Cheese Ball Method: Mix flour and cheddar to a firm paste. Whip egg whites until stiff. Fold the whites into the cheese mixture. Place cracker crumbs onto 1/2 sheet pan and mold the cheese mixture into small spoon size balls. Roll in crumbs and refrigerate to set. Using swimming method, deep fry until golden brown. Serve warm with soup.
