1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 cup (1 stick) unsalted butter (, cut into pieces at room temperature)
1 cup powdered sugar
Zest of 1 lemon
Juice of 1/2 lemon (, add more if needed)
2 tablespoons honey or vanilla-flavored greek yogurt (, optional)
1/4 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Lightly butter an 8- or 9-inch square baking pan.
  • In a large bowl, cream together the butter and sugar. Add the egg, milk, baking powder, and salt. Use a hand mixer to mix well. Mix in half of the flour, then incorporate the remaining half. Fold in the blueberries. Pour the batter into the prepared pan and set it aside.
  • Make the topping. Combine the brown sugar, flour, cinnamon, and butter in a medium-sized bowl. Mix with a pastry cutter or your fingers until combined and crumbly. Sprinkle the topping evenly over the cake batter. Bake the buckle for 45-50 minute, or until a cake tester or toothpick comes out clean. Cool completely.
  • Make the lemon glaze. While the cake is baking, whisk the powdered sugar with the lemon zest, lemon juice and vanilla. Whisk in the greek yogurt if using, or add more lemon juice to desired consistency.
  • Cut the buckle into squares and drizzle with the lemon glaze.

¼ cup shortening
1 egg
½ cup milk
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2 cups fresh blueberries
½ cup white sugar
⅓ cup all-purpose flour

¼ cup butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 8x8 inch pan.
  • Cream together 3/4 cup sugar, shortening, and egg.
  • In a separate bowl mix together 2 cups flour, baking powder, and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased 8x8 inch pan.
  • To make topping: Combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter. Sprinkle over cake batter.

9 ounces cake flour, approximately 2 cups
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon ground ginger
2 ounces unsalted butter, room temperature
5 1/4 ounces sugar, approximately 3/4 cup
1 large egg
1/2 cup whole milk
15 ounces fresh whole blueberries, approximately 3 cups
3 1/2 ounces sugar, approximately 1/2 cup
1 1/2 ounces cake flour, approximately 1/3 cup
1/2 teaspoon freshly ground nutmeg
2 ounces unsalted butter, chilled and cubed

Steps:

  • For the cake: Preheat the oven to 375 degrees F.
  • Spray a 9 by 9-inch glass baking dish with nonstick spray and set aside.
  • In a medium mixing bowl whisk together the flour, baking powder, salt and ground ginger. Set aside.
  • In the bowl of a stand mixer, with the paddle attachment, beat together the butter and sugar on medium speed until light and fluffy, approximately 1 minute. Add the egg and beat until well incorporated, approximately 30 seconds. Add 1/3 of the flour mixture and beat on low speed just until incorporated and then add 1/3 of the milk and beat until incorporated. Repeat, alternating flour and milk until everything has combined. Gently stir in the blueberries and pour the mixture into the prepared baking dish.
  • For the topping: In a small bowl combine the sugar, flour and nutmeg. Add the butter and work into the dry ingredients using a fork to combine. Continue until the mixture has a crumb-like texture. Sprinkle the mixture on top of the cake. Bake on the middle rack of the oven for 35 minutes or until golden in color. Cool for at least 10 minutes before serving.

1/2 cup (50 grams) oats
3/4 cup (125 grams) packed light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
6 tablespoons chilled butter, cut into cubes
1/3 cup sliced almonds
1-1/2 cups (312 grams) all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
8 tablespoons butter, softened
2/3 cup (133 grams) sugar
2 teaspoons vanilla extract
Zest of one lemon
2 large eggs, room temperature
3 1/2 cups fresh blueberries (about 18 ounces)

Steps:

  • In a large bowl combine the brown sugar, flour, oats, cinnamon and salt. Using a pastry blender or clean hands, cut in the butter until the mixture has lumps the size of peas.
  • Preheat the oven to 350° and Spray an 8-inch square cake pan or a 9-inch round pan with nonstick cooking spray and line the bottom with parchment paper.
  • Sift flour, baking powder, and salt in small bowl and set aside. With an electric mixer, beat the butter and sugar on medium-high speed until light and fluffy, about 3-4 minutes. Scrape down the bowl with a spatula and beat in the vanilla and lemon zest until combined.
  • With mixer running at medium speed, add eggs one at a time; scraping down the bowl after each egg (at this stage the mixture might look curdled)
  • Add the flour mixture and stir the batter with a rubber spatula, scraping the bottom and sides of the bowl until the flour is fully blended. The batter will be very heavy and thick. Using a rubber spatula, gently fold in the blueberries.
  • Transfer the batter to the prepared pan and spread evenly. Pour the streusel over the top of the cake batter.
  • Bake until golden brown and a toothpick inserted into the center of the cake comes out clean, about 55-60 minutes. Remove from the oven and cool for 30 minutes before slicing (if you can't wait for it to cool, just dig in but it will be more delicate and crumbly while it is still hot).

Steps:

  • FOR THE CRUMB TOPPING: In a medium bowl, whisk together flour, sugar, salt & lemon zest.
  • Add butter, using a fork or your fingers to cut in the butter until it is reduced to pea-size, then loosely cover the bowl & place it in the freezer while mixing the cake batter.
  • Preheat oven to 350 degrees F & lightly grease a 9-inch square baking pan.
  • FOR THE CAKE: In a medium bowl, whisk together flour, baking powder, baking soda, salt & nutmeg.

  • FOR THE LEMON SYRUP: While the cake is baking, in a small saucepan, combine 1/3 cup of sugar & the lemon juice, whisking together until well blended. Heat the pan over medium-low heat & cook, stirring occasionally, for 6-8 minutes, or until the liquid thickens a bit.
  • Remove from heat & set aside to cool slightly.
  • When the cake has finished baking, drizzle the warm glaze over the hot cake, then cool to room temperature.
  • Any leftovers can be covered in plastic wrap & kept at room temperature for up to 3 days.
