1/3 - 1/2 cup beer
1 1-ounce packet ranch dip mix*
1 1/2 cups dairy free cheddar shreds
Pretzels, for serving

Steps:

  • In a small bowl, mix together the cream cheese, beer and ranch seasoning until smooth.
  • Spread mixture evenly over a plate or serving platter.
  • Top with shredded cheese. Serve with pretzels.

18 ounces cream cheese, softened
1/4 cup sour cream
1-1/2 tablespoons Dijon mustard
1 teaspoon garlic powder
1 cup amber beer or nonalcoholic beer
2 cups shredded cheddar cheese
1 pound bacon strips, cooked and crumbled, divided
1/4 cup heavy whipping cream
1 green onion, thinly sliced
Soft pretzel bites

Steps:

  • In a greased 3-qt. slow cooker, combine cream cheese, sour cream, mustard and garlic powder until smooth. Stir in beer, cheese and all but 2 tablespoons bacon. Cook, covered, on low, stirring occasionally, until heated through, 3-4 hours., In the last 30 minutes, stir in heavy cream. Top with onion and remaining bacon. Serve with soft pretzel bites.

1 cup flour
1/2 teaspoon seasoning salt (such as Lawry's)
1/2 teaspoon paprika
1/2 teaspoon garlic powder
0.5 (8 ounce) bottle light beer or 0.5 (8 ounce) can beer
1/4 cup water
1 1/2 lbs white fish (such as cod, haddock, halibut)
cornstarch, for dusting

Steps:

  • Put flour, seasoning salt, garlic powder and paprika into a large bowl and whisk to combine.
  • Add beer and 1/4 cup water and whisk to make a smooth batter.
  • Pour the oil into a large heavy pot to a depth of 2" and heat over medium high heat until temperature registers 350 F on a deep fry thermometer.
  • Working in batches, dust the fish with cornstarch lightly, dip the fish into the batter, shaking off some of the excess, and fry, turning occasionally, until cooked through and deep golden brown, about 5 minutes. Transfer the fried fish to a rack to drain.

1 units shredded cheddar cheese

Steps:

  • Let cream cheese soften for about 15 minutes.
  • Add 1 package of cream cheese to mixing bowl. With fork, mix cream cheese. Add 2nd package of cream cheese and mix with first.
  • Add ranch dip mix and mix with blender on low to medium speed. Slowly add the can of beer, putting about 4 Tbsp. in at a time. Mix and repeat.
  • Top with shredded cheddar cheese and serve with pretzels.
