BACON TOPPED SQUASH CASSEROLE

The squash have arrived!! My friend and I made this for her family last night (she had never cooked squash before!). They loved it!

1 squash, sliced
1 large onion, chopped (Vidalia is the best)
1 egg, slightly beaten
1 teaspoon salt
1 teaspoon pepper
1 1/4 cups breadcrumbs, divided
2 tablespoons butter
1 cup grated cheddar cheese
6 slices bacon, cooked crisp and crumbled

Steps:

  • Boil or Steam squash and onion until tender.
  • Mash, then add salt and pepper.
  • add butter, egg, 1 cup bread crumbs and cheese.
  • Mix and place into a greased 1 quart casserole dish.
  • Sprinkle with remaining bread crumbs and bacon.
  • Bake at 350 degrees for 20 to 25 minutes.

4 slices bacon, cooked and crumbled
32 ounces yellow squash, sliced
1/2 cup onion, chopped
1 tablespoon butter
4 eggs, beaten
salt and pepper
2/3 cup cheddar cheese, shredded

Steps:

  • Slice squash about 1/4-inch thick; cook in boiling salted water until tender.
  • Fry bacon until crisp; drain on paper towels. Crumble bacon and set aside.
  • In bacon drippings, brown onions. Add butter, squash, eggs, salt and pepper. Cook, stirring, until eggs are cooked.
  • In a 2-quart casserole dish, place half of the squash mixture. Sprinkle with half of the crumbled bacon and half of the shredded cheese. Top with remaining squash mixture, then bacon and cheese.
  • Bake at 350° until hot and cheese is melted.

1 small onion, chopped
1 teaspoon canola oil
3 cups mashed cooked delicata or butternut squash
12 bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup soft bread crumbs
1 tablespoon butter, melted

Steps:

  • In a large skillet, saute onion in oil until tender. Remove from the heat. Stir in the squash, bacon, cheese, sugar, salt and pepper. Transfer to a greased 8-in. square baking dish. Combine bread crumbs and butter; sprinkle over top., Bake, uncovered, at 350° for 20-25 minutes or until heated through and top is lightly browned.

BUTTERNUT SQUASH AND BACON RISOTTO



Butternut Squash and Bacon Risotto image

This risotto is very flavourful with the squash and bacon. Other winter squash varieties, hubbard, acorn, turban, can be substituted if you like.

1/3 cup hazelnuts or 1/3 cup pecans
1 (2 -3 lb) butternut squash
4 1/2 tablespoons olive oil
salt & freshly ground black pepper
4 1/2 cups chicken stock
4 1/2 cups water
3 slices bacon, finely chopped
1 yellow onion, finely chopped
1 1/2 teaspoons chopped fresh thyme
1 1/2 teaspoons chopped fresh sage
3/4 teaspoon chopped fresh rosemary
1 3/4 cups arborio rice
1 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 375°F (190°C) Spread the nuts on a baking sheet and toast until lightly browned and fragrant, 5 to 7 minutes.
  • Remove from the oven and let cool.
  • Chop coarsely and set aside.
  • Peel the squash and cut lengthwise into 8 wedges.
  • Scoop out the seeds and discard, then cut crosswise into thin slices.
  • In a large frying pan over medium heat, warm 1 1/2 TBS of the olive oil.
  • Add the squash, cover and cook, turning occasionally, until almost tender, 7 to 10 minutes.
  • Season to taste with salt and pepper and set aside.
  • In a saucepan, combine the water and stock and bring to a gentle simmer over medium heat.
  • In another large saucepan over medium heat, warm the remaining 3 TBS olive oil.
  • Add the bacon and onion and sauté until the onion is soft, about 10 minutes.
  • Add the thyme, sage, rosemary and rice and cook, stirring constantly, until the rice is translucent around the edges, about 2 to 3 minutes.
  • Add approximately 1/2 cup of the simmering stock mixture and stir to scrape the rice from the bottom and sides of the pan.
  • When the liquid has been almost completely absorbed, add another 1/2 cup liquid, stirring constantly.
  • Continue in this manner, stirring almost continuously and keeping the grains slightly moist at all times, until the rice is firm but tender and the kernels are no longer chalky at the center, 20 to 30 minutes.
  • When the risotto is done, stir in another 1/2 cup liquid, the squash, the toasted nuts and half of the Parmesan.
  • Season to taste with salt and pepper.
  • Transfer to a warmed serving dish and sprinkle with the remaining Parmesan and serve at once.

9 bacon slices, chopped
2 cups chopped onions
2 1/2 pounds butternut squash, peeled, seeded, cut into 1/3-inch pieces
1 1/2 6-ounce packages baby spinach leaves
1 16-ounce package frozen corn kernels, thawed
6 tablespoons chopped fresh basil

Steps:

  • Sauté bacon in large pot over medium heat until crisp, about 10 minutes. Add onions and squash. Sauté until squash is almost tender, about 12 minutes. Add spinach and corn. Toss until spinach wilts and corn is heated through, about 5 minutes. Stir in basil. Season with salt and pepper. Transfer to bowl and serve.

My family loves this buttery winter squash dish. It was an old time recipe I found in our small weekly paper. I have served at banquets and every dish comes back licked clean.

1/2 cup butter
1/2 cup chopped onion
1/2 cup chopped celery
3 cups winter squash puree (Hubbard works well)
2 eggs, beaten
1/3 cup evaporated milk
2 tablespoons flour
1 tablespoon baking powder

Steps:

  • Melt butter in sauce pan and sweat celery and onion until onion is clear.
  • Mix last five ingredients well then add saute` vegetables. Bake at 350' for 1 1/2- 2 hours in a buttered casserole dish or until a knife inserted in center comes out clean.

I did not, get this from any one ! This is a hand-me down recipe, my Mom, Grandma, her Mom Ect.... Like it love, "tweek" it to your own taste. I have never been told YUCK just where did you get this recipe? Simple, tasty, smokey and loved !

2 acorn squash
8 slices bacon, use your favorite
8 tablespoons butter
4 teaspoons cinnamon
salt & pepper
after much time i have looked at this recipe and realize my Mistake
there is no sweeteners add about 2 tablespoons per 1/2 brown sugar
use honey or syrup, at your discretion

Steps:

  • I like to buy the squash a month or two ahead of time to let it ripen, so that the squash turns yellow all the way around, not just on the bottom. That is when they are ripe. But if you didn't, don't let it stop you from making this recipe !
  • Cut squash in 1/2 with the grooves.
  • Remove the pulp with the seeds, and cut thin slice off back half, so the half lays steady-flat with out tipping, but try do not cut through the center.
  • Place squash in greased oven proof pan.
  • Place butter around edges of squash, and some in center, of each half.
  • You will use 1 tablespoon for each half, more or less. This depends on how buttery you want it.
  • Sprinkle with cinnamon, salt and pepper to taste, and then place bacon around edges of squash.
  • Cover entire dish with foil, bake at 350 degrees, 45 minutes, or until done.
  • To test for doneness, be careful when removing foil,steam will come out, fork test squash for tenderness, when done it will be soft all the way through, to skin.

1 large onion, chopped

2 cups cracker crumbs
2 1/2 cups cheddar cheese
1 cup milk
2 eggs, beaten
3 tablespoons butter

Steps:

  • Preheat oven to 350.
  • Cut squash into cubes and boil with onion until tender. Drain well and mash.
  • Add remaining ingredients, except for enough cheese and cracker crumbs to top, and mix well.
  • Pour into buttered casserole dish and top with remaining cheese and cracker crumbs.
  • Bake at 350 for 30 minutes or until brown and bubbly.
  • Let stand 5 minutes before serving.
