1 cup unsalted butter at room temperature
½ cup plus 2 Tbsp icing sugar
¼ cup cornstarch or rice flour
1 ½ cup all purpose flour
½ tsp salt
1 tsp vanilla extract
Chocolate nougat candy

Steps:

  • Preheat oven to 350 °F. Beat butter until light and fluffy. Sift in icing sugar and beat again until fluffy, scraping down sides of the bowl often. Sift in cornstarch or rice flour and blend in. Sift in all purpose flour and salt and mix until dough comes together (it will be soft). Stir in vanilla.
  • Spoon large teaspoonfuls of cookie dough (or use a small ice cream scoop) onto an un-greased cookie sheet, leaving 2 inches between cookies and bake for 18 to 20 minutes, until bottoms brown lightly. Remove from cookie sheet to cool.
  • Prepare shortbread recipe as above and spoon onto an ungreased baking sheet. Press a triangle piece of chocolate nougat candy into the center of each cookie and bake for 18 to 20 minutes, until bottoms brown lightly.

1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
2/3 cup (135g) granulated sugar
1 and 1/2 teaspoons pure vanilla extract
1/2 teaspoon salt
2 cups (250g) all-purpose flour (spoon & leveled)
1/4 cup (28g) cornstarch
optional: coarse sparkling sugar

Steps:

  • Preheat oven to 325°F (163°C). Line two 8-inch cake pans with parchment paper leaving enough overhang around the sides to easily lift shortbread out. (Tip: Parchment is used so you can easily remove the shortbread and not cut it while it's in the pan. I like to use a square of parchment and I cut a 1-inch slit in the center of each side. This helps reduce the amount of creases when lined in the pan.)
  • Using a hand mixer or a stand mixer fitted with paddle attachment, beat the butter and granulated sugar together on medium-high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl as necessary. Add the vanilla and salt and beat until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl as necessary. Add the flour and cornstarch and beat on low speed for 1 minute as the mixture begins to combine. Turn the mixer up to medium speed and beat for 1-3 minutes or until the dough clumps together. (It will eventually, just keep mixing it.) If you're adding dry add-ins (see above), this is when you'll add them.
  • Divide dough in half. If you want to be totally accurate, weigh the halves to make sure they're even. Recipe makes almost 1.5 lbs of plain dough (will weigh more if you added add-ins). Press each half of dough into a prepared cake pan. You want it nice and compact in the pans. Sprinkle with optional coarse sugar. Dock the surface all over with a fork to prevent air bubbles.
  • Bake the shortbread for 28-30 minutes or until very lightly browned on top and around the edges.
  • Remove from the oven, place pans on a wire rack, and cool shortbread for 10-15 minutes. Carefully remove the shortbread from the pans by picking it up with the parchment paper on the sides. Cut each into 8 large, 12 medium, or 16 small wedges. You want to make sure you cut the shortbread while it's still warm. Enjoy warm or cool shortbread completely on wire racks.
  • Cover and store shortbread at room temperature for up to 1 week. If you added a topping such as glaze, icing, buttercream, or melted chocolate, refrigerate after 2 days.

2 cups (272 grams) all-purpose flour
1 cup (136 grams) all-purpose flour
1 cup (136 grams) whole wheat flour
2 sticks (8 ounces; 226 grams) unsalted butter, at room temperature
⅔ cup (80 grams) confectioners' sugar
¼ tsp. fine sea salt
Grated zest of 1 lemon
2 large egg yolks, at room temperature
2 tsp. pure vanilla extract
3 Tbsp. wheat germ
1¼ (170 grams) all-purpose flour
1 cup (120 grams) rye flour

Steps:

  • All of the shortbreads are made in the same manner using an electric mixer. If you're making a shortbread with two kinds of flour, whisk the flours together.
  • Working in the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, beat the butter, confectioners' sugar, salt and zest, if using, together on medium speed until soft, creamy and homogenous, scraping the bowl as needed. One by one, beat in the yolks, followed by the vanilla.
  • Turn off the mixer, add the flour(s) all at once and mix on low speed only until incorporated. If you've got wheat germ, chocolate or flax seeds or nuts, mix in now.
  • Scrape the dough out onto the work surface and divide it in two; the dough will be soft and sticky. Put each piece on a sheet of parchment and cajole it into a log that's 6 to 6 1⁄2 inches long, tightening the log with the paper and twisting the ends. Refrigerate the logs for at least 3 hours (overnight is better) or freeze them for 2 hours. (The logs can be frozen for up 2 months; slice when they're still frozen. You might need to add a minute to the oven time.)
  • When you're ready to bake: Center a rack in the oven and preheat it to 350°. Line a baking sheet with parchment paper or a baking mat.
  • Using a chef's knife, cut each log into 1⁄2-inch-thick rounds. Lay them out on the baking sheet, leaving about an inch between them.
  • Bake, rotating the cookie sheet after 10 minutes, for 21 to 23 minutes, or until the cookies are golden brown around the edges and set. The cookies will still be soft, so leave them on the sheet for 5 minutes before transferring them to a wire rack and allowing them to cool to room temperature. DO AHEAD: The cookies can be packed in an airtight container and kept at room temperature for at least 5 days.

These savory cookies have always been a favorite of mine. They are great appetizers, since they can be made ahead, but I eat them as snacks too. In Vermont I have access to great flavored Cabot cheese which I like to use to give these some variety. Onion-Chive and Habanero both work well. This recipe came from my grandmother, Winnie.

1 cup very soft butter or 1 cup margarine
2 cups grated cheddar cheese (5 oz)
2 cups flour
2 cups Rice Krispies
2 teaspoons Worcestershire sauce
1 teaspoon Tabasco sauce

Steps:

  • Mix butter and cheese together well with mixer.
  • Add Tabasco and Worcestershire sauce.
  • Slowly add flour.
  • When mixed, add rice crispies.
  • Roll into small (1 inch) balls.
  • Place on ungreased cookie sheet.
  • Flatten with fork.
  • Bake at 325°F for 25 minutes.
  • They should look lightly brown, but may still be soft until they cool.
  • Cool on baking rack.
  • These freeze well.

These cookies are a shortbread type cookie that are fantastic for cookie cutters. We use them for all special holidays using festive cutters and use colored sugars depending on the season. This was my grandmother's recipe so it has been passed down to at least the third generation. My daughters help me with cutting them out and decorating. Great family activity. Enjoy

1/2 cup cornstarch
1 lb butter
1 cup icing sugar
3 1/2 cups pastry flour

Steps:

  • Thaw butter to room temperature.
  • Cream butter and all dry ingredients.
  • Use your hands and work dough kneading it together into a smooth consistency.
  • Roll out dough on well-floured surface to about 1/4 inch thick.
  • The more you work the dough the easier it will be to work with.
  • Using floured cookie cutters, cut out your desired shapes.
  • Use a floured spatula to pick them up and place on parchment paper lined cookie sheet.
  • Using the parchment paper allows for easy clean up of sugar sprinkles.
  • Add desired colored sugar sprinkles to each cookie and press lightly.
  • Bake in oven at 325°F for approximately 15 minutes.
  • They cook faster if they are more spaced out and ensure room for some expansion.
