EASY WHITE WINE SAUCE
This white wine sauce is easy to make and full of tangy, savory flavor from dry wine and Parmesan. Serve as a sauce for pasta, chicken or fish.

Steps:
- Mince the garlic. Finely chop the shallot.
- In a saucepan, melt the butter over medium low heat. Add the garlic and shallot and saute for 1 minute, stirring, until fragrant but not browned. Add the flour and cook 1 more minute.
- Add white wine and cream and cook on a low simmer for 3 to 4 minutes.
- Add the Parmesan cheese and salt and whisk until it melts. Taste and adjust salt if needed. If desired, serve with 8 ounces pasta of any shape.

HOMEMADE CHEESE SAUCE

- Place a double boiler over medium heat. Add the cubed cheese and milk and heat, stirring, until the cheese is melted and the mixture is combined, about 5 minutes. Stir in the mustard, vinegar and salt. Grate the garlic into the mixture using a rasp grater; stir to combine. Cook until the flavors meld, an additional 3 to 5 minutes.
CHEESE SAUCE

- In the medium pot, bring the cream to a gentle simmer over medium heat. Whisk in the mustard. Stir in the Gruyère, Parmesan and garlic and cook until the cheeses are melted and combined and the sauce has a smooth consistency, 3 to 4 minutes. Season with salt and pepper. Serve warm.
SALSIFY TAGLIATELLE WITH CHEESE AND WINE SAUCE
Salsify is a root vegetable that looks similar to a parsnip, with a white flesh and thick skin. Here it makes a tasty pasta alternative.

- To make the salsify tagliatelle, wash the salsify well in cold water. Use a vegetable peeler to make tagliatelle ribbons by shaving along the length of the salsify. Leave the ribbons to soak in a bowl of ice cubes for at least 30 minutes.
- To make the cheese and wine sauce, sweat the shallot in a frying pan with the butter. Deglaze with the wine and cook until the liquid has evaporated. Add the cream and bring to the boil. Remove the pan from the heat and stir in the cheese. Use a handheld blender to blitz, then push the mixture through a conical strainer or sieve. Season to taste with salt and pepper.
- Drain the salsify ribbons. Gently reheat the cheese sauce in a deep saucepan and add the salsify ribbons. Cook for 1 minute, cover with a lid and cook for 1 more minute. Taste and adjust the seasoning. Coat the salsify tagliatelle in the sauce.
- To serve, divide the cooked buckwheat between wramed bowls and spoon over the salsify tagliatelle. Drizzle with olive oil and add a twist of pepper and a grating of truffle. Serve immediately.
WINE AND CHEESE SAUCE RECIPE

- In a small saucepan bring milk to a simmer. In a separate saucepan melt butter over medium heat. Add flour and stir until well combined. Slowly add the hot milk to the flour/butter mixture stirring constantly until the sauce thickens. Add the wine, cayenne and salt and continue to simmer and stir over a very low heat for about 10 minutes. Add the cheese and stir well. Remove from the heat when cheese is melted through.

- Pour the fat out of the pan you cooked your steaks in, but don't clean it. Place the pan back on the heat with half the butter and the shallots and sizzle for 2 mins to soften. Stir in the flour and cook to a sandy paste, then splash in the vinegar and simmer for a moment. Pour in the wine and stir, scraping any sticky bits off the bottom of the pan. Bring to the boil and bubble for a minute, then whisk in the mustard and then the stock.
- Boil the sauce down to about 200ml in total, then taste and season. Whisk in the remaining butter and the parsley, plus any resting juices from the steaks. Serve the steaks on warm plates and spoon the sauce over the top.
