THE BEST BANANA BREAD

The Best Banana Bread image

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

Provided by Food Network Kitchen

Time 1h30m

Yield 1 loaf

Number Of Ingredients 13

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

Time 1h5m

Yield 1 loaf, 1 serving(s)

Number Of Ingredients 11

1 1/2 cups all-purpose flour
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
2 extra large eggs, lightly beaten
1/4 cup sour cream
1 teaspoon vanilla
2/3 cup mashed banana
1/3 cup pecans or 1/3 cup walnuts, finely chopped

Steps:

  • Into baking pan measure flour, sugar, baking powder, soda, and salt.
  • Add oil, eggs, sour cream, and vanilla.
  • **(follow your machine's instructions).
  • Insert pan securely into unit; close lid.
  • Select"Cake" setting; press"Start."**.
  • When beep sounds after about 5 minutes, add mashed banana and nuts.
  • Press"Start" again.
  • The"Complete" light will flash when cake is done.
  • Using hotpads, remove pan from unit.
  • Turn bread out onto cooling rack.
  • Cool; slice thinly to serve.
  • Makes 1 5x4-inch loaf.
  • Banana-Chocolate Chip Bread: Prepare bread as above through"Cake" setting.
  • When beep sounds, add mashed banana and 1/3 cup chopped chocolate chips.
  • Omit nuts.
  • Continue as directed.
  • **If Bread machine on "Cake Setting" does not mix ingredients follow these steps.
  • Place ingredients in pan of bread machine.
  • Select Dough setting, and press Start. Mix bread for 3 to 5 minutes until bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push dough from sides of bread pan. When 3 to 5 minutes have passed on clock display, press Stop. Do not continue mixing.
  • Select "Cake" setting, and press Start. Cake cycle time may vary with machines, but should be about "50 minutes". Test bread for doneness, insert a toothpick into center top. Remove toothpick. If bread is done, toothpick will come out clean. If there is dough on toothpick, reset machine on "Cake" setting and continue to bake an additional 10 to 15 minutes. Test again with toothpick to assure the bread is completely baked.
  • Remove pan from machine, but allow bread to remain in pan for 10 minutes. Remove bread to cool completely on a wire rack.

BANANA BREAD BY WILLIAMS-SONOMA

Banana Bread by Williams-Sonoma image

This banana bread is "number one" to me. I used to throw banana bread away after the first couple slices, since it never lived up to my expectations. I save the last sliver of this one, carefully wrapped in plastic, and savor the last bite. The loaf bakes up evenly in the pan, making less of a peaked top. I believe it is the 3 eggs that does this. You will not find a gummy center in the middle of this loaf. Look on the Williams Sonoma website for a photo. To ensure consistency I use very ripe bananas and measure them mashed.

Time 1h5m

Yield 1 loaf, 6 serving(s)

Number Of Ingredients 11

6 tablespoons unsalted butter (softened)
1 cup sugar
3 very ripe bananas, mashed (1-1/2 cups measured)
3 large eggs, lightly beaten
1/2 cup buttermilk (you can substitute "homemade" by letting milk plus tablespoon vinegar set for 10 minutes)
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon fresh nutmeg (or 1/2 tsp. dried- I use about 1/2 fresh) (optional)
1/2 teaspoon salt
3/4 cup coarsely chopped walnuts

Steps:

  • Preheat an oven to 350°F.
  • Grease and lightly flour a 9-by-5-inch loaf pan.
  • In the bowl of an electric mixer fitted with the flat beater, beat together the butter and sugar on medium speed until creamy, about 1 minute.
  • Add the bananas and eggs and beat until smooth. Add the buttermilk and beat just until combined.
  • In a bowl, stir together the flour, baking soda, baking powder, nutmeg, salt and nuts.
  • Add the flour mixture to the banana mixture and beat just until combined.
  • The batter should be slightly lumpy. Scrape down the sides of the bowl.
  • Pour the batter into the prepared pan.
  • Bake until the loaf is dark golden brown and dry to the touch and the edges pull away from the sides of the pan, 55 to 60 minutes.
  • A toothpick inserted into the center should come out clean.
  • Let the bread rest in the pan for 5 minutes, then turn the loaf out onto a wire rack and let cool completely.
  • Cut into thick slices to serve. Makes one 9-by-5-inch loaf.
  • Storage Tip: Wrap the bread tightly in plastic wrap and store at room temperature overnight or in the refrigerator for up to 5 days.
