Wild Rice, Chicken of the Woods, and Chicken Casserole (Easy Home Version) image

A simple casserole made with chicken of the woods mushrooms, real wild rice, and chicken.

Provided by Alan Bergo

Categories     Main Course

Number Of Ingredients 14

½ cup breadcrumbs or panko (lightly toasted)
3 tablespoons sunflower seeds (lightly toasted)
Small handful of chopped parsley or similar (optional)
2 cups of leftover chicken
8 ounces young, tender chicken of the woods mushrooms (cut into 1 inch pieces, as you would chicken meat)
2 cups chicken stock or equivalent (like mushroom stock)
¾ cup Chopped onion (1 medium-small onion) ((green garlic makes a good substitute, and is what I actually used here) )
2 large cloves Fresh garlic, finely chopped or pressed, etc
4 ounces lard or unsalted butter + more for drizzling over the top and sweating the mushrooms
1/3 cup all purpose flour or equivalent (for the roux)
1 cup heavy cream (sour cream, or half and half)
1 tablespoon chopped fresh thyme or similar
4 cups cooked wild rice
Kosher salt and fresh ground black pepper (to taste)

Steps:

  • Mix the panko and sunflower seeds with the parsley if using and reserve.
  • Mix the stock and cream. Cook pieces of chicken of the woods in some fat, adding the onions or other alliums after the mushrooms have wilted and the edges of the pan are starting to color.
  • Season with salt and pepper and cook for a few minutes until the onions are translucent, then add the 4 oz of butter, melt, sprinkle over the flour and stir to make a roux. stir in the stock and cream in batches, stirring well after each one to prevent lumps and cook until thickened.
  • In a large mixing bowl (or the cooking pan) mix the wild rice, cooked chicken, thyme, stock and mushroom-allium mixture, taste and double check the seasoning, adjusting and tasting a few times to make sure the seasoning is dead-on, then put into a baking dish, like a 9x11 casserole size, or a 10 inch cast iron skillet.
  • Top with the crumb-seed mixture, criss cross with melted lard or dot with butter and bake for 20-25 minutes at 450F, or until the crust is well browned and the mixture is hot.

WILD RICE CHICKEN CASSEROLE

My husband of 51 years loves to eat and I love to cook, so we're both happy when I make this casserole. It's nice and creamy with a little crunch from almonds. The chicken is canned, but you'd never know it from the taste.-Mrs. Darrell Plinsky, Wichita, Kansas

CHICKEN & WILD RICE

Chicken & Wild Rice image

This another of my mom's recipes, and one of my all time favorites. It just takes a few minutes to put together, and gives you time to relax etc, while it bakes. I make this when I need something special, but don't have the time to invest in "fancy". I think the best type of pan to use for this, is the bottom part of a broiler pan, but a 13x9 works fine too. One final note - for some families, once box of the rice might be enough. We just love the rice so much, that I use 2 - the leftovers are fabulous, even if it's just rice leftover, and no chicken.

Time 1h5m

Yield 4-5 serving(s)

Number Of Ingredients 5

4 chicken breasts or 4 one chicken, cut up
2 (8 ounce) boxes uncle ben's long grain and wild rice blend (not the instant version)
water
1 (1 ounce) envelope dry onion soup mix
butter (margarine, etc)

Steps:

  • Rinse chicken and pat dry. Pour contents of Rice mix in pan (there will be an spice mix in the box - add that too). Lay chicken on top of rice. Add the amount of water listed on the rice mix, I think it's 2 ¼ cup, for each box. Sprinkle on dry soup mix. Dot with butter. ( I use about 3 tablespoons butter - my Mom used an entire stick - your choice :).
  • Cover with foil or lid, and bake for about 45 minutes - remove cover and bake another 20 minutes. Cooking time will vary based on type of chicken parts used. If you use boneless skinless chicken be sure to to adjust time or chicken will be very dry.

This goes well with a salad and some crusty rolls. A nice light dinner. Make sure you stir half-way through cooking as stated or may come out runny (found this out after making it a few times).
