3 tablespoons unsalted butter
1 small onion, thinly sliced
12 ounces mixed mushrooms, such as cremini, shiitake and oyster, stemmed and chopped
Kosher salt and freshly ground black pepper
4 cups chicken broth
1 1/2 teaspoons Marsala, optional
About 1/4 cup creme fraiche, for serving
1 tablespoon sliced chives (1/2-inch pieces)
Olive oil, for drizzling

Steps:

  • Melt the butter in a small Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened, about 12 minutes. Increase the heat to medium high, add the mushrooms, 1/4 teaspoon salt and a few grinds of pepper and cook, stirring often, until the mushrooms release their liquid but do not brown, about 8 minutes. Add the chicken broth and bring to a simmer. Simmer, partially covered, for 30 minutes.
  • Transfer to a blender and puree until smooth (be careful when blending hot liquids). Add the Marsala if using and season with salt and pepper.
  • Pour the soup into 4 bowls. Dollop with the creme fraiche and sprinkle with the chives. Drizzle a tiny bit of olive oil over top.

5 ounces fresh shiitake mushrooms
5 ounces fresh portobello mushrooms
5 ounces fresh cremini (or porcini) mushrooms
1 tablespoon good olive oil
1/4 pound (1 stick) plus 1 tablespoon unsalted butter, divided
1 cup chopped yellow onion
1 carrot, chopped
1 sprig fresh thyme plus 1 teaspoon minced thyme leaves, divided
Kosher salt
Freshly ground black pepper
2 cups chopped leeks, white and light green parts (2 leeks)
1/4 cup all-purpose flour
1 cup dry white wine
1 cup half-and-half
1 cup heavy cream
1/2 cup minced fresh flat-leaf parsley

Steps:

  • Clean the mushrooms by wiping them with a dry paper towel. Don't wash them! Separate the stems, trim off any bad parts, and coarsely chop the stems. Slice the mushroom caps 1/4-inch thick and, if they are big, cut them into bite-sized pieces. Set aside.
  • To make the stock, heat the olive oil and 1 tablespoon of the butter in a large pot. Add the chopped mushroom stems, the onion, carrot, the sprig of thyme, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, until the vegetables are soft. Add 6 cups water, bring to a boil, reduce the heat, and simmer uncovered for 30 minutes. Strain, reserving the liquid. You should have about 4 1/2 cups of stock. If not, add some water.
  • Meanwhile, in another large pot, heat the remaining 1/4 pound of butter and add the leeks. Cook over low heat for 15 to 20 minutes, until the leeks begin to brown. Add the sliced mushroom caps and cook for 10 minutes, or until they are browned and tender. Add the flour and cook for 1 minute. Add the white wine and stir for another minute, scraping the bottom of the pot. Add the mushroom stock, minced thyme leaves, 1 1/2 teaspoons salt, and 1 teaspoon pepper and bring to a boil. Reduce the heat and simmer for 15 minutes. Add the half-and-half, cream, and parsley, season with salt and pepper, to taste, and heat through but do not boil. Serve hot.

I've made this with and without the Madeira and it's good both ways. It's low in carbs but very filling for lunch if you add a salad. Takes a little bit of work to prepare since you have to roast the mushrooms but it's worth it. And quite honestly, I don't think it's that good as leftovers. I prefer it right off the stove. 1 lb cremini mushrooms or 1 lb wild mushroom (i've also used portabellas)
1 tablespoon fresh lemon juice
4 cloves garlic, chopped
2 tablespoons butter
1 tablespoon safflower oil
salt and pepper, to taste
2 1/2 cups chicken broth
1/2 cup creme fraiche or 1/2 cup heavy cream
6 tablespoons madeira wine

Steps:

  • Preheat oven to 300 degrees F.
  • Wipe mushrooms clean with a damp cloth and slice thin.
  • Spread them out in a shallow ovenproof dish in a double layer.
  • Add the lemon joice, garlic, butter and oil and lightly season with salt and pepper.
  • Bake for about an hour or until they are completely cooked and the juice is dark and thick.
  • Set aside a few mushrooms for garnish if you desire.
  • Put the remaining mushrooms in a blender or food processor, add the broth and blend smooth.
  • In a heavy saucepan, heat the broth mixture for about 5 minutes.
  • Add the cream and cook for 5 more minutes but don't let it boil.
  • Put a tablespoon of Madeira in the bottom of each soup cup and add hot soup.
  • Garnish with chives and reserved mushrooms.

If the word "mushroom" conjures for you white buttons in little supermarket tubs, you're not alone. But there is a big world of mushrooms out there, and you don't have to be a forager to live in it. Wild mushrooms can be found in spring, summer and fall, but farmed mushrooms, grown mostly in the dark, are always around and a little easier to find than the ones hiding in the woods. So are dried mushrooms, which may be domesticated or truly wild and which are among the most flavorful ingredients you can keep in your pantry. This lovely soup is made with a combination of dried and fresh. It's delightfully simple - it comes together in about a half hour - which allows the complex flavors of the mushrooms to really shine through.

2 to 3 ounces dried mushrooms (like cremini, morel; whatever you like)
1/2 stick butter
1 sprig fresh thyme or rosemary
1 large yellow onion or 3 or 4 shallots, chopped
1 tablespoon minced garlic
1 pound fresh mushrooms like shiitake or button, sliced (a variety is nice)
Salt and freshly ground black pepper
1/3 cup sherry or Madeira
5 cups chicken stock, mushroom-soaking liquid or a combination
1 cup cream (optional)
Chopped fresh parsley leaves for garnish

Steps:

  • Soak the dried mushrooms in 5 cups very hot water until soft, anywhere from 5 to 15 minutes. When they are tender, remove mushrooms from the soaking liquid with a slotted spoon, reserving the liquid; slice or chop if the pieces are large.
  • Meanwhile, put the butter in a large pot that can later be covered over medium heat. When it melts, add the herb, onions and garlic and sauté, stirring occasionally, until soft, about 5 minutes. Turn the heat to medium high, and add the fresh mushrooms; add the soaked mushrooms when they're ready. Sprinkle with salt and pepper, and cook until the mushrooms have given off their liquid and begun to brown, about 20 minutes, stirring occasionally.
  • Add the sherry or Madeira to the pot and cook, scraping up any browned bits from the bottom as the liquor starts to bubble. Add the stock or soaking liquid and bring to a boil, then lower the heat to a steady simmer and cook, covered, until flavors have melded, about 15 minutes.
  • Discard the herb. Reduce the heat to low, and purée the liquid with a hand-held mixer to desired consistency. (I like it half-puréed.) Add the cream if you're using it; stir to combine and let simmer for a few minutes. Taste and adjust the seasoning; garnish with parsley and serve.

1 1/2 cups warm water
1 ounce dried japanese shiitake mushroom
1 lb fresh cultivated mushroom
4 tablespoons butter
1/3 cup coarsely chopped shallot (about 2 oz.)
1 small carrot, diced (1/2 c.)
1 large stalk celery, diced (1/2 c.)
1/4 lb peeled diced potato (2/3 c.)
3/4 teaspoon dried thyme
1/2 teaspoon dried marjoram
2 cups cooked wild rice
4 cups chicken stock, preferably homemade
salt, pepper to taste
1 tablespoon tomato paste
1 cup light cream
3 drops Tabasco sauce
3 tablespoons madeira wine
snipped fresh chives (to garnish) (optional)

Steps:

  • In a small bowl, pour the warm water over the dried mushrooms, weighting them down so that they are completely submerged and can soak for 30 minutes. Do not discard the soaking liquid! When soaking time is up, cut off and discard the tough stems (or freeze them for making stock). Squeeze the excess liquid from the mushrooms back into the soaking liquid, then strain the liquid through a dampened coffee filter to remove any fine grit. Slice the shiitake caps into thin shreds and set them aside.
  • Wipe the cultivated mushrooms with a damp towel, trim off the stems (save for stock), and slice the mushrooms thickly. Set aside.
  • Melt the butter in a 7-qt. Dutch oven and saute the shallots in it over medium heat, stirring frequently, for 2 minutes. Add the carrots through the marjoram and cook, stirring, 2 minutes longer. Add both the mushrooms and saute, stirring, for 5 minutes (shiitake should never be eaten uncooked).
  • Add the cooked rice, the reserved mushroom soaking liquid, and the chicken stock. Bring to a boil, then lower heat, season with salt and pepper, and stir in the tomato paste. Cover and simmer 30 minutes, then let cool slightly.
  • Puree the soup in several batches in a blender or food processor. The soup should NOT be too smooth. Return pureed soup to the pot, stir in the cream, and reheat gently on low heat. Stir in the Tabasco and the Madeira, and taste to adjust seasonings. Serve hot, garnished with a few chives.

2 pounds mixed wild mushrooms, such as cremini, shiitake, porcini, and portobello
1/2 cup good olive oil
1 cup chopped shallots (4 large)
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped garlic (6 cloves)
1 cup chopped flat leaf parsley

Steps:

  • Brush the caps of each mushroom with a clean sponge. Remove and discard the stems. Slice the small mushrooms thickly and cut the large ones in a large dice.
  • Heat the olive oil in a large (11 - inch) Dutch oven or saucepan. Add the shallots and cook over low heat for 5 minutes, or until the shallots are translucent. Add the butter, mushrooms, salt, and pepper and cook over medium heat for 8 minutes, until they are tender and begin to release their juices, stirring often. Stir in the garlic and cook for 2 more minutes. Toss in the parsley, sprinkle with salt, and serve warm.

REALLY WILD MUSHROOM SOUP



Really Wild Mushroom Soup image

1/2 pound domestic mushrooms, washed and sliced
1/2 pound shiitake mushrooms, stems removed, washed and sliced
1/2 pound oyster mushrooms, stems removed, washed and sliced
1/2 pound chanterelle or similar mushrooms, washed and sliced
3 tablespoons olive oil
4 shallots, peeled and chopped
1/4 cup dry vermouth
1 quart skim milk
1 branch fresh thyme
4 whole garlic cloves
Pinch freshly grated nutmeg
Salt and pepper, to taste
1/4 pound black trumpet mushrooms, washed and torn into strips
1/4 pound enoki mushrooms
Small bunch chives, cut into 1-inch sticks

Steps:

  • Wash all the mushrooms in lukewarm water in a deep bowl. Mix the mushrooms well to loosen the dirt. Remove them from the water by hand, leaving the dirt in the bottom of the bowl. Repeat until there is no dirt. Remove the stems from the oyster and shiitake mushrooms, then slice all the mushrooms. Keep the domestic mushrooms separate from the other types.
  • Heat an 8-quart sauce pot over moderately high heat. Add the olive oil, the domestic mushrooms, and the minced shallots, and cook until the mushrooms are soft. Add the remaining mushrooms, and saute for 5 minutes, stirring occasionally. Add the vermouth, and reduce for 5 minutes.
  • Add the milk, fresh thyme, garlic, and nutmeg. Bring to a boil, and lower to a simmer. Cook for 30 minutes, then remove the thyme sprig, and season with salt and pepper. Allow to cool slightly, then puree in the blender.
  • Meanwhile, quickly blanch the strips of black trumpet mushrooms in salted water. Cool and add to enoki mushrooms and chives.
  • To serve, reheat the soup in a sauce pot or in the microwave. Divide the tossed Enoki and black trumpet mushrooms into 6 equal portions, and place them in the center of 6 bowls. Pour the soup into the bowls at the table, pouring over the mushroom mixture to heat it up.

CREAMY MUSHROOM SOUP

1 ounce dried porcini mushrooms
6 cups boiling water, to soak the mushrooms or 6 cups vegetable broth
4 tablespoons butter

3 garlic cloves, minced
1/8 lb wild mushroom, cleaned and coarsely chopped
1/4 cup madeira wine or 1/4 cup cognac
2 tablespoons all-purpose flour
1 tablespoon fresh parsley, chopped, for garnish
1/4 cup heavy cream
salt and black pepper

Steps:

  • Place dried mushrooms in a medium bowl and pour in the boiling water. Let stand 15 minutes, or until mushrooms are softened. Remove mushrooms with a slotted spoon, chop and set aside. Pour the mushroom liquid through a fine sieve or cheesecloth into a bowl; discard solids and remaining sand. Reserve.
  • Melt butter in a medium saucepan over medium heat. Add the onion and garlic and cook until softened and translucent. Add the wild and reserved mushrooms, in two batches if necessary, and cook stirring occasionally until they have released their juices and most of the liquid has evaporated. Add the wine and cook scraping any browned bits from the bottom of the pan. Cook until all the liquid has evaporated. Sprinkle mixture with the flour and stir to coat.
  • Stir in the reserved mushroom liquid or vegetable broth and bring to a boil. Lower heat and cook for 30 minutes, stirring occasionally. Remove one cup of mushrooms and toss with parsley, set aside.
  • Puree the rest of the soup in small batches in the food processor or blender. Carefully! Retur to sauce pan and stir in cream and salt and pepper. Serve hot, garnished with the mushrooms and parsley.

2 tablespoons (1/4 stick) butter
1/3 cup minced shallots
1 1/2 pounds fresh wild mushrooms (such as stemmed shiitake, oyster and crimini), coarsely chopped
1 tablespoon minced fresh thyme
3 garlic cloves, minced
8 cups (about) canned low-salt chicken broth
1 pound russet potatoes, peeled, cut into 2-inch chunks
1/4 cup dried porcini mushrooms,* brushed clean of any grit
5 tablespoons Madeira
*Available at Italian markets, specialty foods stores and many supermarkets.

Steps:

  • Melt butter in heavy large pot over medium-high heat. Add shallots; sauté 1 minute. Add fresh mushrooms; sauté until tender, about 5 minutes. Add thyme and garlic; sauté until mushrooms are golden, about 8 minutes. Stir in 6 cups broth, potatoes and porcini. Bring to boil. Reduce heat, cover and simmer until potatoes are very tender, about 25 minutes.
  • Working in batches, puree soup in blender. Return soup to pot. Mix in Madeira and enough chicken broth to thin soup to desired consistency. Season with salt and pepper. (Can be prepared 2 days ahead. Refrigerate.)
  • Bring soup to simmer and serve.

WILD MUSHROOM AND BUTTERMILK SOUP

I got this recipe 10 years ago from one of the old cooking BBS Fidonets. (remember those?!) It was posted by Eleanor Creighton. I hope she doesn't mind my re-posting it here. Use dried chantrelles, cepes, morels or a mixture.

15 dried wild mushrooms
1/4 cup chicken broth, boiling
4 tablespoons madeira wine
1/4 cup butter
2 tablespoons onions, chopped
3 cups button mushrooms, sliced
3/4 cup shiitake mushroom, sliced (stems removed)
1/3 cup all-purpose flour
4 cups chicken broth
1/4 teaspoon fresh ground black pepper
3/4 cup buttermilk

Steps:

  • In a small bowl combine dried mushrooms, 1/4 cup broth and 2 tbs. of the Madeira. Let stand 20 minutes stirring occasionally. Drain off liquid and discard.
  • Squeeze out excess liquid. Coarsely chop mushrooms. In a large saucepan melt butter. Add onion and cook until tender 2 to 3 minutes or until most liquid has evaporated. Stir in flour. Add 4 cups broth and pepper.
  • Bring to boiling stirring constantly. Reduce heat simmer uncovered, 30 minutes stirring occasionally. Remove 2 cups soup mixture and puree in blender or food processor.
  • Return to saucepan. Stir in buttermilk and remaining Madeira and heat through. Do not boil.
  • Serve with hot, crusty bread.

WILD MUSHROOM & MADEIRA GRAVY

Make this gravy in the lead-up to Christmas to save you time on the big day. It can be frozen for up to three months

2 tbsp olive oil
6 whole shallots , peeled
1 large carrot , peeled and chopped
3 thyme sprigs
2 bay leaves
30g dried wild mushrooms
½ tbsp light brown soft sugar
2 tbsp plain flour
4 tbsp brown miso
1 tbsp balsamic vinegar
1 tbsp tomato purée
100ml madeira
700ml fresh vegetable stock

Steps:

  • Heat the oil in a frying pan. Add the shallots, carrot, thyme, bay leaves and dried mushrooms and fry over a medium heat for 5-7 mins or until deep golden brown. Scatter over the sugar and cook until beginning to caramelise. Stir in the flour and combine well, then add the miso, balsamic vinegar, tomato purée and madeira and cook for 2 mins. Pour over the stock a little at a time, stirring as you go.
  • Simmer everything together, uncovered, for 30 mins or until you have a fairly thick gravy. Sieve into a clean saucepan. Season to taste and warm through when ready to serve. Leave to cool completely, then freeze for up to three months or chill for up to three days. Reheat thoroughly in a pan to serve.
