BBQ BAKED BEANS
BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

- Preheat the oven to 350 degrees F.
- Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
- Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
- Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

Bacon, molasses and bourbon add depth and flavor to our classic recipe that's perfectly spiced with paprika, mustard and Worcestershire. A bit of brown sugar adds just the right amount of sweetness and to keep things easy, the beans require no soaking! They get tender and delicious right in the oven.

- Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
- Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
- Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.
OLD FASHIONED FRENCH CANADIAN BAKED BEANS
This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

Steps:
- Cover beans with water and soak overnight.
- Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
- Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
- Mix together remaining ingredients (excluding beans and bacon).
- Add beans to bean pot (or any covered dish).
- Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
- Arrange bacon on top.
- Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
- Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

A quick and easy recipe for smokey, tangy-sweet baked beans to accompany anything smoked. Designed to be smoked in a smoker, Hey you got the smoker fired up anyway, why not throw on some beans. While not my original recipe, this recipe has received hundereds of rave reviews.

- Crisp bacon in a skillet, remove, leaving grease in skillet.
- Saute' bell pepper, jalapeno,and onion until tender.
- Combine all ingredients. If mixture looks drier than desired, add additional ketchup.
- Pour into a 12x9 aluminum baking pan, or deep 9x9.(We like to use disposables).
- Smoke @ 225*-250* for 2 1/2 hours uncovered.
- Remove to oven and bake 1 hour @ 350*, or until beans reach a temp of 160*.
- Note: Between the peppers and the mustard, these beans are on the warm side. If desired, adjust the heat up or down with peppers, and mustard.

BAKED BEANS WITH A KICK
Found online, these baked beans are really simple to make, and have a lovely balance of flavors. The bacon adds texture and a savoury sweet deliciousness. Since these beans are cooked uncovered, everything gets caramelized and the beans are not mush. Since every oven is different, check your beans at an hour and a half.

Steps:
- 1. Preheat the oven to 350 degrees.
- 2. Cook the chopped bacon in a pot over medium heat until browned (about 10 minutes).
- 3. Remove the bacon with a slotted spoon, reserving the bacon grease in the pan. Drain the bacon on paper towels.
- 4. Add the chopped onions to the pot with the bacon grease and cook for 15 minutes over medium-low heat, or until caramelized.
- 5. Remove the pot from the heat. Add the bacon back to the pot as well as the remaining ingredients.
- 6. Stir it all together.
- 7. Pour the beans into a greased 8" baking dish and bake at 350 degrees for 2 hours.
- 8. Remove the beans from the oven and let sit for 5 minutes before serving.
WICK BRANDON'S BAKED BEANS
A Brandon family classic. He always made these on the 4th of July, along with his bacon/potato chip deviled eggs, and ribs. Sometimes he would substitute chopped green chiles for the green pepper. He was always fiddling with the recipe! I also have this recipe in his own handwriting. It is precious to me.
