This has been a favorite of my husband's since I can long remember. His mother always manages to bake him one every year (she's 75) for Christmas...though she claims it's always his last.

2 pounds dates, pitted and chopped
2 pounds English walnuts, coarsely chopped
1 cup white sugar
1 tablespoon baking powder
1 ¼ cups all-purpose flour
4 large egg yolks egg yolks
4 large egg whites egg whites

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour a 10 inch tube pan.
  • In a large bowl, combine dates, walnuts, sugar, baking powder and flour. Stir in egg yolks. In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold the whites into the fruit/nut mixture until no streaks remain. Spoon into prepared pan.
  • Bake in the preheated oven for 90 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

1 cup all-purpose flour
1 cup whole wheat flour
1 tablespoon brown sugar
2 teaspoons baking powder
1 teaspoon salt
2 large egg whites
1 large egg, lightly beaten
2 cups fat-free milk
2 tablespoons canola oil
1 medium apple, peeled and chopped
1/2 cup chopped walnuts
Maple syrup

Steps:

  • In a large bowl, whisk flours, brown sugar, baking powder and salt. In another bowl, whisk egg whites, egg, milk and oil until blended. Add to dry ingredients, stirring just until moistened. Fold in apple and walnuts., Heat a griddle coated with cooking spray on medium heat. Pour batter by 1/4 cupfuls onto griddle. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with syrup. Freeze option: Freeze cooled pancakes between layers of waxed paper in a resealable freezer container. To use, place pancakes on an ungreased baking sheet, cover with foil and reheat in a preheated 375° oven 6-10 minutes. Or place a stack of three pancakes on a microwave-safe plate and microwave on high for 1-1/4 to 1-1/2 minutes or until heated through.

WE have enjoyed this recipe for many years. It was given to me by a college friend. It looks like a standard fruit cake, but the rich, moist texture of apples, dates, raisins and nuts makes it a very satisfying dessert. A slice of this cake, topped with whipped cream, whipped topping or a big scoop of ice cream will have your guests coming back for more.

1 package (8 ounces) chopped dates
1 cup raisins
2-1/2 cups all-purpose flour, divided
1/2 cup butter, softened
2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 teaspoons baking soda
1 teaspoon salt
1-3/4 cups boiling water
1 cup chopped peeled tart apple
1 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • In a small bowl, combine dates and raisins. Add 1 tablespoon flour and toss to coat; set aside. , In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the baking soda, salt and remaining flour; add to creamed mixture alternately with boiling water. Stir in the apple, walnuts and reserved date mixture., Transfer to a greased and floured 10-in. fluted tube pan. Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

300 g whole wheat flour
1 tablespoon baking powder
2 teaspoons ground cinnamon
125 g soft brown sugar
4 tablespoons clear honey
250 g dates, stoned and choppped
175 ml apple juice
120 ml vegetable oil
2 eggs, beaten
250 g apples, peeled, cored and chopped
50 g shelled walnuts, chopped

Steps:

  • Grease a 20cm square cake tin, line with greaseproof paper, then grease the paper.
  • Mix the flour, baking powder and cinnamon together in a bowl. Put the sugar, honey, dates (stoned and chopped) and apple juice in a pan and heat gently until the sugar has dissolved. Remove from the heat and leave to cool slightly, then add the flour with the oil. Beat until smooth. Add the eggs (beaten) and apples (peeled, cored and chopped) and mix thoroughly.
  • Turn the mixture into the prepared tin, then sprinkle with the walnuts. Bake in a preheated moderate oven (180C/350F/Gas Mark 4) for 1hr to 1hr 15 mins until the cake springs back when lightly pressed in the centre. Turn out onto a wire rack, peel off the paper, turn the cake the right way up and leave to cool.
  • To freeze: Wrap the cake in a polythene bag, seal and label and freeze for up to 4 months.
  • To thaw and serve: Unwrap, place on a serving plate and leave to stand at room temperature for 4 hours.

3 cups walnut halves
3/4 teaspoon ground cinnamon
1/2 cup sugar
4 large eggs, separated
2 teaspoons finely grated orange zest
1 teaspoon vanilla extract (optional)
Pinch of kosher salt
3/4 cup chopped pitted dates
For the Glaze:
2 ounces bittersweet chocolate, chopped
4 tablespoons unsalted margarine (for kosher) or butter, cut into small pieces
1 teaspoon honey
Chopped toasted walnuts, for topping

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Coat the bottom and sides of a 9-inch-round cake pan with cooking spray and line with parchment paper. Put the walnuts, cinnamon and 1/4 cup sugar in a food processor; pulse until finely ground but not powdery. Whisk the egg yolks, orange zest and vanilla, if using, in a small bowl.
  • Beat the egg whites and salt in a large bowl with a mixer on medium-high speed until foamy. Beat in the remaining 1/4 cup sugar, 1 tablespoon at a time, until soft peaks form, about 8 minutes. Fold in the yolk mixture and dates, then fold in the ground walnut mixture. Scrape the batter into the prepared pan. Bake until the cake is golden and a toothpick comes out clean, 23 to 25 minutes. Let cool in the pan on a rack, then run a knife along the sides and invert the cake onto a platter.
  • Make the glaze: Put the chocolate, margarine and honey in a microwave-safe bowl, cover with plastic wrap and microwave until the margarine melts, about 2 minutes. Whisk until smooth. Cool slightly, then pour over the cake. Top with walnuts.

1/4 cup brown sugar
1/2 teaspoon bicarbonate of soda
1 teaspoon hot water
3/4 cup apple puree
1 cup wholemeal self-rising flour
1/4 cup chopped walnuts
1/4 cup chopped pitted dates
2 teaspoons slivered almonds

Steps:

  • Set oven at 180dg c .
  • Grease and line a 200mm bar tin.
  • Cream butter and sugar until light and fluffy.
  • Mix bi-carb and water. Stir bi-carb mixture into all other ingredients (except almonds)and mix well.
  • Place in pan and sprinkle with the slivered almonds.
  • Bake for 45 minutes or until a skewer comes out clean.
  • Cool on rack and cut into bars.
  • Serve warm with whipped cream or cold.

1 cup pitted dates (cut into 1cm size)
1 1/4 cups walnuts (roughly cut)
3/4 cup rolled oats
2 ripened bananas (mashed)
1 apple, chopped (without the skin and core)
1 1/4 cups plain flour
1 teaspoon baking soda
1/4 cup soft brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine Ingredients A and soak for 15 minutes.
  • In another bowl, combine Ingredients B and mix well.
  • In a separate bowl, sieve flour and baking soda. Ensure baking soda is not lumpy. Add in soft brown sugar. Mix well and put aside.
  • Add Ingredients B to Ingredients A. Mix well.
  • Then add Ingredients C and mix well.

300g plain flour
1 tsp ground cinnamon
½ tsp bicarbonate of soda
140g dark brown soft sugar
50g golden caster sugar
250ml rapeseed or sunflower oil
4 eggs
3 unpeeled apples , coarsely grated
100g walnuts , roughly chopped
100g butter , softened
50g dark soft brown sugar
1 tbsp black treacle
200g tub full fat soft cheese

Steps:

  • Heat oven to 150C/130C fan/gas 2. Line two 20cm cake tins. Put the flour, cinnamon and bicarbonate of soda in a big bowl, then stir in the sugars, making sure there are no lumps of sugar. Add the oil, eggs and apples, and beat everything together. Fold in the walnuts then divide the mixture between the tins and bake for 45 mins or until a skewer comes out clean. Allow to cool for a few mins in the tin then remove and cool completely on a wire rack.
  • For the icing, beat all the ingredients together then chill until the mixture is thick but spreadable. Spread half the icing on top of one cake, sandwich with the other and spread the remaining icing on top

2 egg substitute, equivalent to 2 egg or 1/2 cup soft silken tofu
