I actually abandoned my "family" banana bread in favor of this one... It's more a like a cake than a bread. I have increased the bananas from the original recipe, and I prefer to omit the nuts. I like mine warm with butter on top. Yummy!

1/2 cup butter or 1/2 cup margarine
1 cup sugar
2 eggs, slightly beaten
3 medium bananas, preferably frozen, then defrosted (1-2 cups mashed)
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup whole wheat flour
1/3 cup hot water
1/2 cup chopped walnuts

Steps:

  • Melt butter.
  • Put the butter, sugar, bananas and eggs in a blender. Blend until nice and smooth.
  • Now transfer to a mixing bowl.
  • In a separate bowl, stir together flours, salt, and baking soda.
  • Add dry ingredients to banana mixture alternately with hot water.
  • Stir in chopped nuts.
  • Cut a piece of waxed or parchment paper the size of the bottom of your loaf pan.
  • (This helps the loaf come out in one piece while still warm).
  • Put the paper in the loaf pan and spray the pan well with non-stick spray.
  • Scoop the batter into the pan.
  • Bake in a preheated 325 degree F oven for one hour and 10 minutes.
  • Test with a cake tester to make to make sure it's done.
  • Sometimes it takes a little bit longer.
  • If the top gets too brown, cover it with a piece of aluminum foil so it doesn't get too much darker.

Whole wheat banana bread is easy to make, yet delicious and healthy. It also freezes well. I like using all whole wheat flour and using 3 smaller loaf pans so that the bread bakes more evenly.

3/4 cup whole wheat flour
3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup sugar
2 tablespoons margarine, melted
4 medium bananas, mashed
2 egg whites, slightly beaten
cooking spray

Steps:

  • Prepare (3) small loaf pans or (1) large loaf pan with the cooking spray.
  • Combine first 4 ingredients in a large bowl.
  • Combine sugar and next three ingredients in another bowl; add to flour mixture until dry ingredients are moistened.
  • Pour batter into prepared pans.
  • Bake at 350 for 30-50 minutes or until a tooth pick inserted in center comes out clean.
  • Cool in pan for 10 minutes, remove and cool completely on wire rack.
  • ENJOY.

Nonstick cooking spray
3/4 cup all-purpose flour, plus extra for dusting the pan
2 ounces bittersweet chocolate, chopped
2 medium very ripe bananas
2/3 cup sugar
1/4 cup canola oil
2 large eggs
3/4 cup white whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup buttermilk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Lightly mist a 9-by-5-inch metal loaf pan with nonstick cooking spray and dust well with all-purpose flour to cover the pan completely, tapping out the excess. Put the chocolate in a medium microwave-safe bowl and microwave on high in 30-second intervals, stirring, until melted and smooth, 1 minute to 1 minute 30 seconds. Set aside to cool slightly while preparing the batter. Combine the bananas and sugar in a large bowl and mash with a potato masher or fork until mostly smooth with just a few small pieces of banana left. Add the oil and eggs and stir until combined. Using a wooden spoon or rubber spatula, mix in both flours, the baking powder, baking soda and salt. Stir in the buttermilk and vanilla. Stir 1 cup batter into the melted chocolate. Fill the loaf pan with half the banana batter and then half the chocolate batter. Repeat the layers and gently swirl together using a spoon or knife. Bake until golden brown on top and a toothpick inserted in the center comes out clean, about 45 minutes. Cool in the pan 15 minutes, and then turn out onto a wire rack to cool completely. Serve warm or at room temperature. Cook's Note: To prepare your loaf pan for baking, you can also use a nonstick spray with flour already in it. Flouring the pan helps the bread rise well and prevents any collapse after it comes out of the oven. With this healthy banana bread recipe, you're only a few simple ingredients away from the best banana bread ever! It's made with whole wheat flour and naturally sweetened with honey or maple syrup. You can easily make this banana bread vegan or gluten free-check the recipe notes for details. Recipe yields 1 loaf (about 10 slices).

1/3 cup (75 grams) melted coconut oil or extra-virgin olive oil or high quality vegetable oil*
1/2 cup honey (168 grams) or maple syrup (155 grams)
2 eggs
1 cup (225 grams) mashed ripe bananas (about 2 1/2 medium or 2 large bananas)
1/4 cup (56 grams) milk of choice or water
1 teaspoon baking soda (NOT baking powder; they aren't the same!)
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon, plus more to swirl on top
1 3/4 cups (220 grams) white whole wheat flour or regular whole wheat flour**
Totally optional: 1/2 cup mix-ins like chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit, fresh banana slices...

Steps:

  • Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease a 9×5-inch loaf pan.
  • In a large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. (If your coconut oil solidifies on contact with cold ingredients, simply let the bowl rest in a warm place for a few minutes, like on top of your stove, or warm it for about 10 seconds in the microwave.)
  • Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok! If you're adding any additional mix-ins, gently fold them in now.
  • Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. If you'd like a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.
  • Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean (typically, if I haven't added any mix-ins, my bread is done at 55 minutes; if I have added mix-ins, it needs closer to 60 minutes). Let the bread cool in the loaf pan for at least 10 minutes. You may need to run a butter knife around the edges to loosen the bread from the pan. Carefully transfer the loaf to a wire rack to cool before slicing.

Very gooey and yummy, this is my favorite Banana bread recipe. TIPS: Buy whole wheat flour that has NOT been bleached. Use only PURE honey. Use Almond, Rice or Soy milk (try not to use cow milk). Extra virgin cold pressed olive oil has the best taste and has no extra junk in it. Use real vanilla extract, imitation has too many chemicals and not as good a flavor. Has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle.

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Lowering the oven rack prevents the top of your bread from browning too much too soon. Spray a 9×5 inch loaf pan with non-stick spray. Set aside.
  • You can use an electric mixer or mix everything by hand. I like to use an electric mixer because I use it to mash the bananas. Using a handheld or stand mixer fitted with a paddle or whisk attachment on medium-high speed, beat the mashed bananas, applesauce, and eggs together until combined. (Or whisk by hand.) Add the honey, brown sugar, milk, and vanilla extract. Beat on medium-high speed (or whisk) until combined. Set aside.
  • Whisk the flour, baking soda, cinnamon, and salt together. Pour into the wet ingredients and beat on medium speed (or by hand) until combined. Fold in the walnuts.
  • Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, making sure to loosely cover the bread with aluminum foil halfway through to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. This may be before or after 60-65 minutes depending on your oven, so begin checking every 5 minutes at the 55 minute mark or so.
