2 large eggs
¾ cup white sugar
3 ripe bananas, mashed
1 tablespoon canola oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly spray a 9x5 inch loaf pan or 16 muffin cups with cooking spray. Stir the skim milk and lemon juice together in a glass measuring cup; let stand until curdled, about 30 minutes. Whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, cinnamon, nutmeg, and salt; set aside.
  • Beat the eggs and sugar together with an electric mixer until smooth. Mix in the mashed bananas, the milk mixture, canola oil, and vanilla extract. Stir in the flour mixture just until all ingredients are moistened. Pour the batter into the prepared pan or muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour for a loaf, or 30 minutes for muffins. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

¾ teaspoon baking soda
¼ teaspoon salt
3 bananas (ripe, mashed)
¼ cup plain yogurt
¼ cup honey
2 eggs
1/3 cup coconut oil ((or another mild oil of your choice))
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F and grease pan.
  • Whisk together the flour, baking soda, and salt.
  • In a separate bowl mix mashed bananas with yogurt, honey, eggs, oil, and vanilla.
  • Fold the banana mixture into the flour mixture until blended. Do not overmix.
  • Pour batter into prepared pan.
  • Bake large loaf for 40 - 50 minutes or until it comes clean with a toothpick.

½ cup Greek yogurt
1 ¾ cups whole wheat flour

Steps:

  • Heat the oven to 360°F. Grease a 9x5 inch loaf tin.
  • Whisk together all wet ingredients in a large bowl. Sprinkle flour, cocoa powder, baking powder and salt on top. Gently fold in, do not overmix!
  • Fold in chocolate chips and place the batter in the prepared loaf tin.
  • Bake for 55-60 minutes, or until a toothpick inserted comes out clean.

2 cups white whole wheat flour
3/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sugar
1/4 cup butter, softened
2 large eggs or 1/2 cup egg substitute
2 cups mashed ripe bananas
1/3 cup plain fat-free yogurt
1 teaspoon vanilla extract
3/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Spoon flour gently into measuring cups and level with a knife.
  • Stir flour, baking soda and salt together in a medium bowl. Put aside.
  • Place sugar and butter in a large bowl and beat at low speed with a mixer until well blended.
  • Add one egg at a time and blend well after each one.
  • Add in mashed banana, yogurt and vanilla extract, and beat until blended.
  • Add chocolate chips and mix until they are spread throughout the batter.
  • Add flour mixture and blend until just moist. Do not over-mix.
  • Spray an 8 1/2 x 4 1/2-inch loaf pan with nonstick cooking spray.
  • Pour batter into pan.
  • Bake at 350 degrees for 60-70 minutes (until a toothpick inserted in the middle comes out clean).
  • Remove from pan after 10 minutes or so and cool on a wire rack.

1/2 cup honey
2 eggs
3 bananas (mashed)
1/4 cup milk (I used 1%, but almond milk or soy milk works great)
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 3/4 cups white whole wheat flour (or regular whole wheat flour)
1/2 cup mini semi-sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees and grease a 9 × 5 inch loaf pan.
  • In a large bowl, beat the oil and honey together together with a whisk.
  • Add the eggs and beat well, then whisk in the mashed bananas (you want about 1 cup of mashed banana) and milk. (If your coconut oil starts to solidify, warm it for about 10 seconds in the microwave until it's liquid again.)
  • Mix in the baking soda, vanilla, salt and cinnamon, and whisk to blend.
  • Using a large spoon, stir in the flour, just until combined (It's okay if it's a little lumpy!)
  • Fold in the chocolate chips.
  • Pour the batter into your greased loaf pan and and if desired, sprinkle lightly with cinnamon and additional chocolate chips.
  • Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing.

1/2 cup unsweetened applesauce
2 tablespoon canola oil

1/2 teaspoon baking powder

1 cup unsweetened flaked coconut

Steps:

  • Heat oven to 350°F. Spray a 9 by 5-inch loaf pan with nonstick cooking or baking spray, set aside.
  • In a large bowl, mash bananas (I use a potato masher). Add sugar, applesauce, oil, vanilla, and eggs. Stir to combine.
  • On top of the banana mixture, add flour. Make a small well in the flour and add baking soda, baking powder and salt. Stir gently to mix the dry ingredients into each other on top of the wet ingredients.
  • Stir everything together until just combined. Fold in coconut and chocolate chips. Pour into loaf pan and bake for 50 minutes to an hour or until a knife or toothpick inserted in the middle comes out clean.
  • Transfer loaf pan to a wire rack and let cool 5 minutes. Run a knife around edges of bread to loosen from pan. Invert onto rack and turn bread out of pan. Let stand until cooled completely before slicing (if you can wait that long).

1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon kosher salt
3 very ripe bananas
1/2 cup light brown sugar
1/2 cup granulated sugar
1/2 cup canola oil
1 large egg
1/2 cup milk
1/2 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Coat the sides and bottoms of 4 mini loaf pans (5 3/4 by 3 1/4 by 2 1/4 inches) with nonstick cooking spray.
  • Whisk together both flours, the baking powder, baking soda, cinnamon, ginger and salt in a medium bowl. Set aside 1 tablespoon of the dry mixture in a small bowl.
  • Using a fork, mash 2 1/2 bananas with both sugars in a large bowl until the mixture is mostly smooth with a few small pieces of banana. Add the oil and egg and stir until combined. Stir in the dry ingredients until just combined and then stir in the milk. Toss the chocolate chips with the reserved flour mixture and fold into the batter. Divide the batter among the prepared mini loaf pans. Thinly slice the remaining 1/2 banana and place 4 to 5 slices in an overlapping line down the center of each mini loaf on top of the batter.
  • Bake until the tops of the loaves are golden and a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool the breads in the pans for 10 minutes and then turn each pan upside down to release the breads. Cool completely, banana slice side up, on a wire rack.
  • Cook's Notes: To freeze for later use, wrap each loaf first in plastic wrap and then foil. Take out the frozen loaves the night before using and thaw in the refrigerator.
  • You can also bake the batter as 1 large loaf in a greased 9-by-5-inch metal loaf pan for 55 to 60 minutes, covering the bread in the last 10 minutes with a piece of foil if it browns too quickly. Cool in the pan 10 minutes and then turn out and cool completely on a wire rack.
