1 Whole Onion
1 Bouillon Cube
1 tsp Worcestershire Sauce
1 tbsp Butter

Steps:

  • Using a paring knife cut out the core of the onion without cutting out the root.
  • Working in a circle make deep slits towards the onion's center but do not cut the outer layer. Cuts should be 1/2" apart.
  • Fill cut out hole with butter, bouillon and Worcestershire sauce.
  • Wrap onion in heavy duty tin foil.
  • Place on grill in indirect heat and grill for 1 hour, or until onion is soft.

Steps:

  • Trim the a thin slice off the side of the whole, unpeeled onion. Set the onion flat on the cut surface for stability. Cut the onion into 4 (1-inch thick) slices. Remove the outer ring of skin from each slice. Drizzle the sliced onion with light colored oil and season both sides with steak seasoning or salt and pepper, to taste. Grill on hot grill or on a nonstick griddle for 5 to 7 minutes on each side until onion is tender and has begun to caramelize.

4 large onions (sweet, such as Vidalia)
Dash salt
Dash pepper
4 tablespoons butter

Steps:

  • Gather the ingredients.
  • Slice the stem from the onions and peel them, leaving the root intact. Slice a bit of the root off, just enough to provide a flat end so they won't wobble.
  • Working from the top and using a sharp knife, a small melon baller, or apple corer, cut the cores from the onions. You should have a cavity about 1-inch across and almost through to the bottom of the onion without piercing it. Use the cored-out onion pieces for another purpose.
  • Salt and pepper the onion cavities and then fill each onion with 1 tablespoon of butter. Sprinkle the onions lightly with a bit more salt and pepper.
  • Wrap the onions in foil, gathering at the top and twisting to seal.
  • Cook in a closed grill for about 1 to 1 1/2 hours over medium indirect coals .
  • Untwist top of foil and spread open about 10 minutes before serving.
  • Leave them on the grill for more smoked flavor, if you like.
  • Remove the onions to a serving platter.

Steps:

  • Preheat grill for medium heat.
  • Peel outer layer off onions. Slice a small section off of one end of each onion, and make a small hole in the center. Fill the center of each onion with a bouillon cube and 2 tablespoons butter or margarine. Replace the top of the onion, and wrap in aluminum foil.

One night my neighbor was placing on the grill what appeared to look like a giant Hershey kiss. When he gave me the recipe and I tried it, I was hooked. This is the easiest and best tasting way to prepare a whole sweet onion on the grill. He just used the bouillon cube but I made a few additions which really enhances the flavor. You can substitute a packet of powdered beef bouillon if you like.

1 large sweet onion
1 beef bouillon cube
1 large whole garlic clove
grated Italian cheese

Steps:

  • Peel the onion and cut off both ends.
  • With a knife or an apple corer hollow out the center of the onion about 1/2 way through.
  • Place the bouillon cube or granules and the garlic clove in the hole. Press in enough cheese to fill the hole to the top.
  • Place the onion on a large sheet of heavy duty foil and gather. It will resemble a "giant Hershey Kiss"
  • Turn grill to med. high and place onion on grill. I use indirect heat side so the onion doesn't burn. You can also use the top shelf. Close the lid (if it pushes down top of foil, that's ok)
  • Grill for 1 hour or till tender.

ROASTED (OR GRILLED) WHOLE ONIONS

There are some similar recipes, but none using Worcestershire sauce - the secret to my whole onion recipe. Everyone loves them, no one believes how simple they are. You can roast in the oven or on the grill.

4 medium onions, peeled but left whole (baseball size)
4 teaspoons beef bouillon granules
1 1/2-2 teaspoons Worcestershire sauce
2 tablespoons butter

Steps:

  • Preheat oven to 400F or get a heap of coals glowing in your grill.
  • Carefully make 8 cuts down to, but not through the root end of each onion. To keep from cutting too far, it helps to put the onion inside a canning ring.
  • Working with one onion at a time, place an onion onto a square of heavy duty aluminum foil.
  • Very gently, push your finger into the top of the onion, to loosen the wedges enough to pour the bouillon granules into the center of the onion.
  • Drizzle the onion with 1/4 - 1/2 teaspoons Worcestershire sauce.
  • Smear 1/2 tablespoon of butter on top of the onion and into the cuts.
  • Gather the corners of the foil and wrap tightly. It will look like a giant hershey kiss.
  • To bake in the oven:.
  • Place all wrapped onions into a baking dish so that they will stay upright.
  • Roast in a 400F oven for 45 to 70 minutes or until soft.
  • To roast on a grill:.
  • Place the onions, individually on the grill grate. Rotate the location of the onions occasionally, being careful to keep them upright. Roast in a covered, hot grill 45 to 70 minutes or until soft.

6 large sweet white onions, such as Vidalia
12 strips bacon
2 tablespoons butter
Salt and pepper

Steps:

  • Peel and wash the onions. With the point of a small, sharp knife, cut a 1-inch core from the top of each onion and make shallow slits in a circle around the top. Wrap 2 slices of bacon horizontally around each onion, and secure them with toothpicks. Then put 1 teaspoon of butter in each core. Season with salt and pepper.
  • Place each onion on a square of aluminum foil and bring the edges together at the top, leaving a small opening for steam to escape. Put the foil-wrapped onions on the grill and cook for 1 hour, or until the onions are tender when pierced with the tip of a knife. You can also bake in the oven at 350 degrees F for 1 hour. Cool the onions for a few minutes then unwrap and cut into quarters to serve.

A man from Georgia told my husband about this idea. He wasn't sure about measurements or times but I made this and just used my own judgment. It's a nice departure from the same old stuff on the grill. It tastes like French Onion Soup!

1 vidalia onion (medium or large)
1 teaspoon butter, to taste
1 chicken bouillon cubes or 1 beef bouillon cube
aluminum foil

Steps:

  • Slice the ends off the onion and peel the outer skin off.
  • Place the onion on the aluminum foil (you could spray it first with nonstick spray).
  • With a sharp paring knife, scoop out some of the onion in the center to make an indentation.
  • Place the butter in the hollowed out area.
  • Then place the bouillon cube in the butter.
  • Wrap the onion up in the foil, sealing it tightly and place on a medium to low temperature grill and cook 30 to 40 minutes.
  • The onion is done when it feels soft to the touch.
  • Open the foil packet and put the onion in a shallow bowl or right on your plate.
  • Be careful, it's juicy!
  • You can leave out the butter (although this might alter the flavor) or use a beef bouillon cube if you want.
  • If you find the bouillon flavor to be too strong, use half a cube per onion.

These are amazing. Right on the grill or even in your oven. A sweet flavor with savory and spicy tones makes this such a nice side dish. If you use smaller onions you can serve one per person which is what I prefer to do, but either way you make it - they are great. The important thing is the vinaigrette. Fresh herbs is the way to go. But ... if you only have a bottled dressing ... they will be just fine.

4 onions, top sliced off and peeled. bottom stays on for stability (medium or small soft ball size)
8 slices bacon, cut in half
4 teaspoons olive oil (1 tablespoon per onion)
2 teaspoons salt (1/2 per onion)
1/2 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1 tablespoon shallot, minced (onion will work)
1 tablespoon fresh parsley, chopped fine
1 teaspoon fresh chives, chopped fine
1 teaspoon fresh basil, chopped fine
1/2 teaspoon fresh tarragon, chopped fine
salt
pepper
1 pinch red pepper flakes

Steps:

  • Vinaigrette -- Mix all the ingredients in a small baggie, bowl or tupperware container. Refrigerate until ready to serve. You need to heat slightly before serving. Just 10 or 20 seconds on medium in the microwave - just to warm it up.
  • Onion -- Cut the top off, just a small slice so you can peel easily. You can cut a small bit off the bottom if it doesn't set well. Peel the sides and it is ready. Drizzle with olive oil and season with salt and pepper.
  • Top with 4 half slices or 2 full slices of bacon and wrap well in foil, keeping the top with bacon standing up.
  • Bake or Grill -- A 400 degree oven takes around 40-50 minutes and the grill about 30-40 minutes. This really is dependent upon the heat of your grill or oven and the size of your onions. Make sure to close the foil pouch on the top so after 30 minutes or so, you can easily pull it open a bit and test to see if the onion is done. I just stick a knife in the onion and it should be tender.
  • Serve -- Remove from the foil, and I also remove the bacon -- it is more for the flavor, not presentation, and it has done it's job. As I said, I like using a small to medium onion, so everyone gets one, but the large onions are wonderful and can be sliced in half.
  • Heat up the vinaigrette in the microwave for just a few seconds to warm up and drizzle over the onion. ENJOY!
  • NOTE:. Keep the leftover vinaigrette. Great over potatoes, any meat, even vegetables, or seafood.
