I just recently started eating Coach's 'steel-cut, cracked and toasted' Oats and it's got me hooked. It's nutty and full of flavor. The original recipe from the package the brown sugar is packed and the table salt is regular salt. Please note that I'm not sure how this will work with regular oatmeal. The number of cookies will depend on the size you make them. Okay, I bought another brand of 'steel-cut' oatmeal to see if there was a difference. There was enough difference in the texture, flavor, cook-time and overall quality (to me) that I recommend you use the Coach's brand for this recipe.

3/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1 3/4 cups all-purpose flour
1/4 teaspoon sea salt
2 eggs
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
2 cups coach's 'steel-cut' oats
3/4 cup pecans, chopped
3/4 cup dried cranberries (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Cream butter.
  • Add both sugars, salt, baking powder, baking soda, eggs, vanilla, cinnamon and half the flour. Beat to combine.
  • Beat in the remaining flour.
  • Add oats, pecans and cranraisins.
  • Drop by rounded teaspoon on ungreased cookie sheet.
  • Bake at 375 degrees for 12-15 minutes or until edges are golden brown. Cool on wire rack.

2 cups buttermilk
1 ½ cups rolled oats
½ cup all-purpose flour
½ cup cornmeal
2 teaspoons baking powder
1 ½ teaspoons white sugar
½ teaspoon baking soda
½ teaspoon salt
2 eggs, beaten
¼ cup vegetable oil

Steps:

  • Mix buttermilk and oats in a large bowl; allow to rest about 5 minutes. Stir flour, cornmeal, baking powder, sugar, baking soda, and salt into oat mixture. Add eggs and vegetable oil; mix until just combined.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle; cook until bubbles form and the edges are dry, about 3 minutes. Flip and cook until browned on the other side, about 3 minutes more. Repeat with remaining batter.

I use butter for greasing ... I know, but I love the flavor of butter! Please note that I'm not sure how this will work with regular oatmeal. 2 cups flour
1 cup coach's 'steel-cut' oats
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon sea salt
1/4 cup sugar
2 eggs
2 teaspoons pure vanilla extract
1 cup whole milk
1 cup water
butter (Optional. For greasing)

Steps:

  • Combine dry ingreadients in a large mixing bowl.
  • Combine wet ingredients in another bowl.
  • Add wet ingredients to dry ingredients. Mix until well blended.
  • Pour 1/4-cup batter onto a hot, lightly greased griddle for each pancake. Cook until golden brown on each side.

  • Pour water (4 cups) into a medium size sauce pan, add salt (1/2tsp). Bring water to boil. Pour in uncooked steel cut oats (1cup). Cook for 1 minute. Watch it closely, it can overboil if you let it without supervision. After 1 minute remove from the heat, cover and let sit on the counter overnight.
  • In a bowl whisk together flour ( 1 cup and 1/2 cup), baking soda (1/2tsp) and salt (pinch), set aside.
  • To cook pancakes heat a skillet or a griddle. Add a small amount of coconut oil or use other oil, butter etc.Use a brush to spread the oil if needed. Heat it up to medium-high and then drop 1/3 cup measure of pancake batter onto the heated pan. Pancake batter is thick, gently spread it with a back of the spoon. Cook on medium heat for 2 minutes then flip and continue cooking for additional 1 minute. Slide a spatula under cooked pancakes and transfer it onto plate. Repeat until you you are done will all of the pancake batter. Enjoy plain or with your favorite topping.TIP - 1/3 cup of batter makes about 5-6 inch pancakes
