EGGS AND BACON PANCAKES

Eggs and Bacon Pancakes image

Pancakes serve up a helping of bacon and eggs for a filling breakfast that can be on the table in only 30 minutes.

Categories     Breakfast

Time 30m

Yield 4

Number Of Ingredients 6

1 lb sliced bacon
2 cups Original Bisquick™ Mix
1 cup milk
6 eggs
Salt and pepper to taste
Real maple or maple-flavored syrup

Steps:

  • Cut bacon slices into 1/2-inch pieces. Cook in skillet or microwave until desired crispness is reached.
  • Meanwhile, heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
  • In medium bowl, stir together Bisquick® mix, milk and 2 of the eggs until well blended. Stir three-fourths of the cooked bacon into batter.
  • For each pancake, pour about 1/3 cup batter onto hot griddle. Cook until bubbles break on surface and edges just begin to dry. Turn; cook until golden brown.
  • While pancakes are cooking, in 8- to 10-inch skillet, cook remaining 4 eggs and remaining one-fourth of the cooked bacon over medium heat until scrambled. Add salt and pepper to taste.
  • Remove pancakes from griddle. Using biscuit cutter or round cookie cutter, cut a circle in center of every other pancake. Stack cut pancake over whole pancake on serving plate. Fill hole with eggs and bacon. Serve warm with syrup.

WHOLE-GRAIN PANCAKES

Whole-Grain Pancakes image

Using a combination of different grains, these hearty pancakes have a deeper, more interesting flavor, along with more fiber and nutrients, than those made from only white flour. If you want to add fruit, like blueberries or sliced peaches, or chocolate chips, sprinkle them on top of the pancakes just before flipping. Serve these straight out of the pan; pancakes don't like to wait.

Time 45m

Yield About 10 pancakes

Number Of Ingredients 12

1 cup whole-wheat flour
3/4 cup all-purpose flour
1/2 cup cornmeal
1/4 cup rolled oats
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
2 1/4 cups buttermilk or plain yogurt (not Greek)
3 large eggs
1/4 cup unsalted butter, melted, plus more for serving
1 tablespoon honey
Maple syrup, for serving

Steps:

  • In a large bowl, mix together whole-wheat flour, all-purpose flour, cornmeal, oats, baking powder, salt and baking soda. In a medium bowl, mix together buttermilk, eggs, melted butter and honey. Mix the egg mixture into the flour mixture until smooth.
  • Heat a griddle or large cast-iron skillet over medium heat. Check to see if it's hot by sprinkling a few drops of water on the surface. They should sizzle and evaporate immediately.
  • Add a little butter to the pan and let it melt. Pour about 1/3 cup batter onto skillet; repeat to cook as many at one time as you can, leaving space for each pancake to spread.
  • Cook until bubbles form and start to burst, about 3 minutes. Flip and cook until golden on the other side, 2 to 3 minutes. Transfer to a plate as they finish, and serve immediately with maple syrup and more butter on top, if you like.
  • Repeat with the remaining batter, adding more butter to the skillet as needed.

BACON PANCAKE DIPPERS

Bacon Pancake Dippers image

Skip the forks and use your fingers to dip these pancake-coated bacon strips into maple syrup. Something magical happens when a crispy piece of bacon gets a warm hug from a pillowy soft pancake... A flavor and texture explosion takes place. In this recipe, I spoon pancake batter around and then directly on top of the cooked bacon strip so the bacon remains crunchy while the batter cooks all the way through.

Provided by Kelly Senyei

Time 20m

Yield 6 servings

Number Of Ingredients 11

12 slices bacon
1 1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk of choice
1/2 cup sour cream
1 large egg
2 tablespoons unsalted butter, melted, plus more for cooking
Maple syrup, for serving

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Arrange the bacon in a single layer on the prepared baking sheet, spacing the slices apart so they aren't touching.
  • Bake the bacon until it reaches your desired level of crispiness, 10 to 15 minutes. Remove from the oven and set aside.
  • In a large bowl, whisk together the flour with the sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the milk, sour cream, egg and 2 tablespoons melted butter.
  • Add the wet ingredients to the dry ingredients and mix just until combined. (The batter should be lumpy.)
  • Grease a griddle or large nonstick skillet with butter.
  • Working in batches, arrange slices of the cooked bacon on the griddle, spacing them at least 3 inches apart. Spoon the pancake batter around and on top of each bacon strip and cook until bubbles form across the outside edges of the batter. Flip the pancake dippers once and continue cooking until they are cooked through. Repeat with the remaining bacon and pancake batter.
  • Serve the pancake dippers warm with maple syrup for dipping.

SPELT PANCAKES

Spelt Pancakes image

These pancakes and fluffy, delicious, and easy to digest. Regular wheat makes my stomach hurt and, for some reason, makes me spacy and lethargic. The spelt flour is a great substitute for the highly hybridized wheat flour. Hopefully, others with similar wheat sensitivites like mine can enjoy a great pancake without having to suffer afterwards.

Time 20m

Yield 4 large pancakes, 4 serving(s)

Number Of Ingredients 7

1 3/4 cups spelt flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 egg, slightly beaten
1 1/2 cups oat rice or 1 1/2 cups milk
3 tablespoons cooking oil

Steps:

  • In a large bowl, stir together flour, sugar, baking powder, and salt. In another small bowl, mix with a fork the egg, milk, and oil. Add egg mixture all at once to flour mixture. Stir until just moistened (still lumpy).
  • Heat a skillet on medium heat and grease the pan with a little oil or butter. Add the desired amount of pancake batter and wait for the bubbles to arise. When the bubbles cover the whole surface of the pancake and the opposite side is golden brown, flip the cake and cook the other side till it's done.
