1 tablespoon yellow mustard seed
1 teaspoon fennel seed
8 medium bone-in chicken thighs, trimmed
1 teaspoon coarse sea salt
1/2 teaspoon fresh ground black pepper
2 tablespoons olive oil
1 cup coarsely chopped onion
2 garlic cloves, finely minced
1/2 cup dry white wine
1 tablespoon parsley flakes
14 1/2-ounce can diced tomatoes, undrained

Steps:

  • Heat a large skillet on medium high heat. Add mustard and fennel seeds to toast; cook and stir until fragrant (about 2 minutes). Transfer from hot pan to avoid over-toasting. Crush toasted seeds and set aside.
  • Sprinkle chicken with salt and pepper. Heat oil in the same skillet on medium-high heat. Cook chicken in batches, 5 minutes per side or until golden brown. Remove chicken from skillet; cover and keep warm.
  • Add onion; cook and stir about 5 minutes or until softened. Add minced garlic and cook stirring for 2 minutes. Stir in wine, parsley, tomatoes, crushed toasted seeds and chicken. Bring to a low boil. Reduce heat to low; cover. Let simmer on low for at least 20 minutes, stirring occasionally.
  • If serving right away, remove cover and simmer an additional 10 to 15 minutes or until chicken is cooked through. If time permits, cover and transfer to warm oven (about 250-degrees F) to continue to braise for 2-3 hours until ready to serve.
  • Serve over rice or pasta, if desired.

1 (4- to 5- pound) whole chicken, cut up, including the backbone
Kosher salt, to taste
Freshly ground black pepper, to taste
3 to 4 slices of bacon , about 1/4 pound, diced
1/2 cup onion, chopped
1/2 cup leek, white and light green parts, chopped
4 to 5 garlic cloves, peeled
1 cup white wine
1 tablespoon tomato paste
2 cups chicken stock, or water
2 to 3 sprigs fresh rosemary
1 bay leaf

Steps:

  • Gather the ingredients and heat the oven to 300 F.
  • Dry the chicken well with paper towels and season generously with salt and pepper.
  • Heat a Dutch oven over medium-high heat. Cook the bacon until it's crispy and the fat has rendered out. Remove and set aside.
  • Add 1 breast (skin-side down), 1 thigh (skin-side down), 1 drumstick, and 1 wing. Brown the chicken for 4 to 5 minutes, then remove to a platter and repeat with the other 4 pieces. Finally, brown the backbone, skin-side down, and remove.
  • Add the onion, leek , and garlic and sauté until the onion is translucent, about 3 to 4 minutes. Add the wine and boil, scraping any roasted bits from the bottom of the pan. Stir in the tomato paste.
  • Return the chicken and bacon to the pot. Add the chicken stock or water. Season with salt (if needed). Add the rosemary and bay leaf and bring to a boil.
  • Cover with a tight-fitting lid and transfer to the oven. Cook for one hour, or until an instant-read thermometer registers at least 165 F . Remove the lid and let the chicken cool in the pot for 15 minutes before serving.

2 cups long-grain white rice
12 boneless, skinless chicken thighs (3 1/2 pounds total)
Coarse salt and ground pepper
2 tablespoons olive oil
1 cup dry white wine, such as Sauvignon Blanc
1 tablespoon fresh thyme leaves, plus sprigs for garnish
1 box (10 ounces) frozen peas
1 pint grape tomatoes, halved
2 tablespoons fresh lemon juice

Steps:

  • In a medium saucepan, cook rice according to package instructions. Spread 3 cups cooked rice on a rimmed baking sheet to cool; refrigerate for Chicken Fried Rice, up to 1 day. Cover remaining rice in pan to keep warm; set aside.
  • While rice is cooking, season chicken with salt and pepper. In a 5-quart Dutch oven or heavy pot, heat oil over medium-high. Working in batches, cook chicken until browned, 4 to 5 minutes per side; transfer to a plate (reserve pot).
  • Return chicken and any juices to pot; add wine and thyme. Bring to a boil; reduce to a simmer, and cook, partially covered, until chicken is opaque throughout, 10 to 15 minutes. Remove 4 chicken thighs; refrigerate for Chicken Fried Rice, up to 1 day.
  • Add peas and tomatoes to pot; cook, stirring occasionally, until tomatoes are softened, 4 to 5 minutes. Stir in lemon juice; season with salt and pepper. Serve chicken and vegetables over rice, garnished with thyme sprigs.

10 chicken thighs (about 3 3/4 pounds, bone-in, skin removed, trimmed)
4 slices bacon (cooked ~ reserve 2 tablespoons bacon fat)
1 large onion (thinly sliced)
4 garlic cloves (minced)
1 teaspoon dried thyme
1 teaspoon fennel seed
1 teaspoon fresh ground pepper
1 bay leaf
1 cup dry white wine (Or, substitute 1 cup reduced-sodium chicken broth mixed with 1 tablespoon fresh lemon juice)
1 (28 ounce) can tomatoes (with juice, coarsely chopped)
1 teaspoon salt
1/4 cup fresh parsley (finely chopped ~ optional, for garnish)

Steps:

  • Place the skinless, bone-in chicken thighs in a 4-quart (or larger) crock pot.
  • Cook bacon ~ drain well ~ crumble bacon over chicken in crock pot.
  • IF YOU HAVE THE TIME, cook onion, over medium heat, in 2 tablespoons reserved bacon fat, stirring, until softened, 3 to 6 minutes. Add garlic, thyme, fennel seeds, pepper and bay leaf and cook, stirring, for 1 minute. Add wine, bring to a boil and boil for 2 minutes, scraping up any browned bits. Add tomatoes and their juice and salt; stir well.
  • Pour the tomato-wine mixture over chicken.
  • IF YOU DON'T HAVE THE TIME, place the following into crock pot over the chicken: crumbled bacon, sliced onion, garlic, thyme, fennel seeds, pepper, bay leaf, wine, tomatoes and their juice, and salt!
  • Cover and cook until the chicken is very tender, about 3 hours on High, or 6 hours on Low. Remove the bay leaf.
  • Serve chicken and sauce over cooked noodles, or rice ~ garnish with chopped parsley.

1 teaspoon finely chopped fresh thyme leaves
1 bay leaf
1/2 cup dry white wine

1/4 cup heavy whipping cream

Steps:

  • 1. Season chicken with salt and pepper. In 5-quart Dutch oven, heat oil over medium-high heat. Add 4 chicken thighs; cook 5 to 6 minutes, turning once, until browned. Transfer to plate. Repeat with remaining 4 chicken thighs. Add bacon; cook 5 to 7 minutes, stirring frequently, until crispy. With slotted spoon, transfer bacon to paper towel-lined plate. Drain off all but 2 tablespoons drippings from Dutch oven.
  • 2. Add mushrooms to Dutch oven with drippings; cook over medium-high heat 5 to 6 minutes, stirring occasionally, until browned. Add onions; cook 3 to 4 minutes, stirring frequently, until softened. Add garlic, thyme leaves and bay leaf; cook and stir 1 minute. Add wine; cook 1 to 2 minutes, scraping up any browned bits on bottom of Dutch oven, until liquid is almost evaporated. Stir in tomatoes, browned chicken and bacon. Reduce heat to low; cover and simmer 30 to 35 minutes or until juice of chicken is clear when thickest part is cut (at least 165°F). Add whipping cream; cook uncovered 3 to 5 minutes, stirring occasionally, until slightly thickened. Remove bay leaf. Garnish with parsley.

3 lbs chicken, cut into 8 pieces
1 large onion, chopped
1/4 cup olive oil
2 slices bacon, chopped
3 ounces chicken livers, chopped
1 teaspoon dried rosemary, crumbled
3 bay leaves
4 whole cloves
1 cup dry white wine
1 1/2 cups chicken broth
4 teaspoons tomato paste
polenta

Steps:

  • Season chicken pieces lightly.
  • Heat oil in large skillet over medium-high heat.
  • Add chicken and cook until light brown, about 5 minutes per side.
  • Transfer chicken to bowl with slotted spoon.
  • Add onion, livers, bacon and spices and saute until onion is tender, about 10 minutes.
  • Mix in wine and tomato paste.
  • Add broth and bring to the boil, scraping up any browned bits.
  • Return chicken and any juices to skillet, turning chicken to coat with sauce.
  • Reduce heat, cover and simmer until breasts are cooked through, about 15 minutes.
  • Transfer chicken breasts to bowl.
  • Cover and simmer remaining chicken about 15 minutes longer.
  • Transfer pieces to bowl.
  • Boil down liquid remaining in pot until thickened to sauce consistency, adding any juices in bowl, about 20 minutes.
  • Strain sauce through fine sieve.
  • Degrease.
  • Return sauce and chicken to skillet (can be prepared 1 day ahead to this point. Reheat gently over low heat.) Serve with polenta poured into center of large serving platter.
  • Place chicken pieces around and spoon sauce over all.

1/2 teaspoon kosher salt or 1/2 teaspoon salt
3 tablespoons butter
1 tablespoon olive oil
2 onions, chopped
1 shallot, finely chopped

3/4 teaspoon dried thyme

Steps:

  • Sprinkle salt on the chicken drumsticks. In a large skillet, heat butter and oil at medium-high heat until butter has melted. Add chicken and cook for 10 minutes (flip often). With a pair of tongs, remove the chicken from the skillet and put it in a plate.
  • In the skillet, add onions, shallots and garlic. Cook, scraping the bottom of skillet to remove the bits, for 5 minutes or until onions are tender.
  • Put back the chicken in the skillet and sprinkle with thyme and 1/4 teaspoon pepper. Add white wine, chicken stock and bay leaf. Bring to boil. Reduce heat, cover and let simmer for 45 minutes or until chicken is tender (drizzle with cooking liquid from time to time). Put the chicken in a serving dish, cover and keep warm. Let reduce the cooking liquid, uncovered, for about 10 minutes or until it has the consistancy of a gravy. Add salt and pepper. Remove bay leaf.
  • When ready to serve, garnish each serving with the onion gravy and sprinkle with mint, if wanted.

3 tablespoons olive oil
1 tablespoon unsalted butter
1/4 cup onion, chopped
3/4 cup dry white wine

2 tablespoons parsley, chopped
12 pitted black olives (sliced, if you prefer)

Steps:

  • Wipe chicken dry, season them with salt and pepper, and dip lightly in flour.
  • In a broad sauté or large heavy pan brown chicken on all sides in hot olive oil.
  • Add onion and let it cook slowly until it is golden.
  • Add white wine, scraping up meat bits to incorporate, cover and cook until this is reduced by about half; about 20 minutes. Add tomatoes, garlic, and parsley, cook about 5 minutes to heat thoroughly.
  • DO NOT OVER-COOK at this point-tomatoes should be firm.
  • Just before serving, add a dozen pitted black olives.
  • Serve topped with sauce or with rice.

8 skinless chicken thighs, bone-in (about 2 3/4 pounds)
salt and pepper, to taste
4 garlic cloves, thinly sliced
1 cup dry white wine
1/4 teaspoon dried thyme
1 lemon, cut into 8 thin slices (plus juice below)
1 tablespoon fresh lemon juice
1 tablespoon butter, cut into pieces (cold butter)
2 tablespoons flat leaf parsley, chopped

Steps:

  • In a 12-inch skillet with a tight-fitting lid, arrange thighs, bone side up; season with salt and pepper. Add garlic, wine, and thyme.
  • Bring to a boil; reduce to a simmer. Cover and cook, 30 minutes.
  • Turn chicken over. Place a lemon slice on each piece; cover and continue simmering until tender, about 15 minutes.
  • Leaving garlic and liquid in skillet, transfer chicken and lemon slices to a platter. Cover tightly with foil to keep warm.
  • Bring liquid in skillet to a boil; cook until reduced to 1/2 cup, about 5 minutes.
  • Remove skillet from heat. Add butter, parsley, and lemon juice; stir until butter has softened and sauce is smooth.
  • Season with salt and pepper. Serve chicken with sauce.
