Here's an eye-catching salad that my mother makes for Christmas dinner each year. You can choose different flavors to make other color combinations for specific holidays or other gatherings. -Jan Hemness, Stockton, Missouri

4-1/2 cups boiling water, divided
7 packages (3 ounces each) assorted flavored gelatin
4-1/2 cups cold water, divided
1 can (12 ounces) evaporated milk, divided
1 carton (8 ounces) frozen whipped topping, thawed
Optional: Sliced strawberries and kiwifruit

Steps:

  • In a small bowl, add 3/4 cup boiling water to 1 gelatin package; stir 2 minutes to completely dissolve. Stir in 3/4 cup cold water. Pour into a 3-qt. trifle or glass bowl. Refrigerate until set but not firm, about 40 minutes., In a clean bowl, dissolve another gelatin package into 1/2 cup boiling water. Stir in 1/2 cup cold water and 1/2 cup milk. Spoon over the first layer. Refrigerate until set but not firm., Repeat 5 times, alternating plain and creamy gelatin layers. Refrigerate each layer until set but not firm before adding the next layer. Refrigerate, covered, overnight. Serve with whipped topping and, if desired, fruit.

Whenever I invite my big family for dinner, my grandchildren request this favorite fruit salad. My sons have always liked it, too - maybe the taste runs in our family! This salad is also good for potluck gatherings.

2 cups boiling water, divided
1 package (3 ounces) lemon gelatin
2 cups ice cubes, divided
1 can (20 ounces) crushed pineapple, liquid drained and reserved
1 package (3 ounces) orange gelatin
2 cups miniature marshmallows
1/2 cup sugar
2 tablespoons cornstarch
1 cup reserved pineapple juice
1 large egg, lightly beaten
1 tablespoon butter
3 large bananas, sliced
1 cup whipped topping
1/2 cup finely shredded cheddar cheese

Steps:

  • In a large bowl, combine 1 cup water and lemon gelatin. Add 1 cup ice cubes, stirring until melted. Stir in pineapple. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until set but not firm., Repeat with the orange gelatin, remaining water and ice. Stir in marshmallows. Pour over lemon layer; refrigerate until firm. , Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in reserved pineapple juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in butter. Cool to room temperature without stirring. Refrigerate for 1 hour or until chilled., Arrange bananas over gelatin. Stir whipped topping into dressing. Spread over bananas. Sprinkle with cheese.

½ cup white sugar
1 (.25 ounce) envelope unflavored gelatin
⅓ cup boiling water

Number Of Ingredients 8

6 oz box of blueberry gelatin (2 small boxes)
6 oz box of strawberry gelatin (2 small boxes)
1-2 c fresh cleaned and rinsed blueberries
1 can(s) prepared sweet cherry pie filling
8 oz package of cream cheese
16 oz frozen whipped topping (2 regular tubs)
1/2 c powdered sugar
1 tsp lemon juice

Steps:

  • 1. The day before making the fruit gelatin, put the frozen whipped topping in the refrigerator to thaw. Also, put the cherry pie filling and the trifle bowl in the refrigerator to chill.
  • 2. An hour before making the recipe, set the cream cheese out on the counter to reach room temperature.
  • 3. Make the blueberry gelatin as directed on the package except use 2 cups of boiling water and only 1 cup of cold water. Place the mixture in the refrigerator.
  • 4. Save a few blueberries for garnish. When the blueberry gelatin just beginning to congeal (consistency of egg white), stir in the rest of the fresh blueberries. Pour the blueberry mixture into the trifle bowl. Place it in the refrigerator to set.
  • 5. In the bowl of your stand mixer beat the cream cheese until fluffy. Turn the mixer to low speed and gently add 8 ounces of frozen whipped topping. Don't over mix. Add the powdered sugar and lemon juice.
  • 6. Scoop the mixture into the trifle bowl on top of the blueberry layer when it has set. Refrigerate until firm.
  • 7. Once the cream cheese layer is firm, begin making the next layer.
  • 8. Make the strawberry gelatin using 2 cups of boiling water and only 1 cup of cold water. Chill until it begins to congeal. Then, stir in all the contents of the cherry pie filling.
  • 9. Gently pour this mixture on top of the cream cheese layer.
  • 10. Once the cherry/strawberry layer is firm, top it with the rest of the whipped topping. Garnish with the reserved blueberries. Keep cold until serving. Cherries and strawberries would also be excellent garnish!
  • 11. This recipe is good for 2-3 days in the refrigerator. It is a good idea to make it the day ahead of service.

This is a very versatile salad that can be used in a jello mold, put into a springform pan with a graham cracker crust, served in a 9X13" pan or used to fill individual ramekins. My mother has made this recipe for nearly every holiday dinner at the request (more like demand) of my daughter! The fruit topping is just a canned fruit filling that would typically be used as pie filling. Any flavor will work well. Cooking time is chiilling time to ensure a good set. Enjoy!

1/2 ounce unflavored gelatin (such as 2 envelopes of Knox gelatine)
1 1/2 cups granulated sugar
1 1/2 cups boiling water
16 ounces sour cream
8 ounces Cool Whip
fruit pie filling, such as Thank You brand

Steps:

  • Dissolve gelatin in 1 cup cold water. Set aside.
  • Mix sugar into boiling water, stirring until dissolved.
  • Add gelatin mixture to sugar water.
  • Add sour cream and mix until lumps have disappeared.
  • Fold in Cool Whip.
  • Pour into mold or dish. (May lightly grease mold with mayo. This will not affect the flavor at the end.).
  • Chill overnight.
  • Serve with pie filling as topping or in center of round mold.

2 cups hot water

3 bananas, sliced
1 ½ cups cold water

¾ cup white sugar
2 tablespoons all-purpose flour
1 egg
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Dissolve gelatin completely in 2 cups hot water and pour into desired mold. Mix crushed pineapple, bananas, and 1 1/2 cup cold water into gelatin mixture; top with miniature marshmallows. Chill until firm.
  • Whisk reserved pineapple juice, sugar, flour, and egg in a saucepan over low heat and cook, whisking constantly, until mixture almost comes to a simmer and becomes thick, about 5 minutes.
