Although, the chicken was scrumptious, my most vivid memory is of the corn fritters that they served. Fried to a golden brown and then dusted with confectioners sugar, they came to the table warm and were crunchy on the outside. Inside the fritter batter was sweet and laced with kernels of corn. Theirs was an heirloom recipe....

Steps:
- 1. Preheat the oil to 350 degrees F in a deep fryer or a deep electric skillet. There should be at least 2 inches of oil. In a large bowl, beat the eggs, salt and pepper together. Add the corn and blend thoroughly. Add the baking powder and flour, but do not over stir; some of the flour should be visible. Drop the batter by tablespoons into the hot oil and fry for 2-3 minutes on each side, or until a light brown. Drain on paper towels and sprinkle immediately with sifted confectioner's sugar. Serve with warmed maple syrup, if desired.

Steps:
- Drain and rinse kidney beans. Put them in a very large mixing bowl.
- Add the onion, celery, bell pepper and stir to combine. Add the mayonnaise, relish, onion powder, seasoning salt, black pepper, and Red Pepper Flakes. Stir all ingredients together, and taste. Adjust seasoning if needed.
- Cover bowl, and refrigerate 4 hours before serving, or preferably overnight.
- Store in an airtight container. Leftovers will keep for 3-4 days.
RED KIDNEY BEAN SALAD
This is a complimentary dish served by a local upscale restaurant. They serve it before you receive your salad along with a dish of fresh vegtable sticks and olives. I can make a meal on just on the veggies and this bean salad. (Prep time does not include the overnight chilling).

- Add onions and stir well.
- Then add the celery, beans and relish.

WHITE KIDNEY BEAN SALAD
A great Mediterrean-inspired bean salad. Beans can be cooked over the stove as well, I used the microwave for convenience. Also, fresh parsley can be used. I'm not sure of the actual can size, but I made a guess. :)

KIDNEY BEAN SALAD WITH LEMON GARLIC …

- Put the drained and rinsed beans in a large salad bowl. Add the chopped cucumber, onion and parsley.
- There are 2 ways to make the dressing. You can simply whisk all of the dressing ingredients together, or put them in a jar and give them a good shake. Note that if you omit the oil you will need to add a touch of water instead. If you want a creamier dressing and don't mind a much sharper lemon flavour then you can use the whole lemon rather than just the juice. Cut the peel from it with a sharp knife. I cut each end off first then you can stand it on a board and easily cut down and around. Cut it in half and remove any seeds you can see, then add the whole lemon with the other dressing ingredients to a blender and blitz until smooth. Add enough water to thin it to the consistency you like. You might want to add a touch more sugar or maple syrup too.You will end up with more dressing than you need by making it this way but you can store leftovers in the fridge for 4 to 5 days.
