WHITE CHOCOLATE TRUFFLES

Make these chocolates to give as gifts or for a fun weekend project. Split the ganache into a few bowls and add a couple of different flavourings, if you like

Yield Makes 30 truffles (easily halved)

Number Of Ingredients 6

300g white chocolate , chopped
120ml double cream
30g unsalted butter
½ tsp rose water , 2 tsp vanilla paste, or 1-2 tbsp liqueur of your choice (brandy, Cointreau or hazelnut liqueur work well)
200g white chocolate , chopped
finely chopped pistachios , desiccated coconut, cocoa, or sprinkles

Steps:

  • Melt the chocolate, cream and butter in a heatproof bowl over a small pan of just simmering water, or in the microwave in short blasts, stirring regularly. Stir in any flavourings you like (add them gradually and taste the mix, the flavour will be stronger when chilled). Transfer to a small baking dish or shallow container and chill until set, about 4 hrs or overnight.
  • Using a large melon baller or a heaped teaspoon, scoop truffles from the set mixture, or using clean hands briefly roll between your palms, then transfer to a lined baking tray. Chill in the freezer for 30 mins to firm up.
  • To decorate, melt the chocolate the same way as in step 1, leave to cool a little, then drop the chilled truffles into the chocolate and lift out with a fork. Put back on a lined baking tray and sprinkle over any toppings, if using, and chill again in the fridge for 1-2 hrs, or freeze for 30 mins if you're in a rush, until set. Store in a cool place or in the fridge until giving as a present or eating.

White Chocolate Mint Truffles image

Delicious white chocolate mint truffles that you would think you have picked up from the local chocolate shop. Super easy to make, and perfect for gifting.

450 grams (1 lb) white chocolate (| good quality eating chocolate, not cooking chocolate)
125 mls (½ cup) thick cream
¼ teaspoon mint flavouring (| see notes below)
3 tablespoons icing sugar/confectioners's sugar
3 tablespoons vanilla sugar

Steps:

  • Grate or finely chop white chocolate. The smaller the pieces the easier they will melt with the heated cream. Place in a medium bowl and set aside.
  • Heat cream and mint flavouring in a small saucepan. Heart until it just starts to simmer.
  • Remove from heat and pour over the prepared white chocolate. Let the chocolate and cream sit for 1 minute.
  • After 1 minute, using a spatula, mix chocolate and cream slowly until it is smooth and shiny.
  • Taste for mint flavour. If you feel you need to add more, do so now.
  • Cover bowl with plastic wrap and place in the fridge to chill for 4 hours or overnight.
  • Once the truffle mixture has chilled, spoon out teaspoon size balls. Roll truffle mixture in your hands to form round balls. Place on a lined tray.Note: Wipe hands with kitchen towel every 2-3 truffles as hands will get greasy, and truffles will be hard to roll.
  • Roll the truffle balls in the prepared truffle coating and place them back on the tray covered with baking paper.
  • Once all balls are rolled in coating place in the fridge to keep chilled until ready to serve. They can also be stored in the freezer.

PEPPERMINT TRUFFLES RECIPE



Peppermint Truffles Recipe image

Refreshing peppermint and velvety ganache are the perfect match in this deep, rich truffle recipe that will cure every chocolate craving.

16 ounces semi-sweet chocolate chips
1 cup heavy cream
1 1/2 teaspoons McCormick Pure Peppermint Extract
6 ounces good quality dark chocolate melting wafters
1 ounce good quality white chocolate melting wafers
2 tablespoons crushed peppermint candies

Steps:

  • In a medium-sized glass bowl, combine the chocolate chips with the heavy cream. Microwave for 1 minute, then stir. Microwave for an additional minute if needed, until chocolate is completely smooth when stirred.
  • Stir in the peppermint extract.
  • Cover with plastic wrap and refrigerate overnight.
  • When ready to mold, let sit on the counter for about 5 minutes. Prepare a tray, cutting board or plate by lining it with parchment paper.
  • Use a 1-inch scoop to make the balls. Gently roll them in the palms of your hand until round. Place a toothpick in the top of each ball and freeze for at least 30 minutes and up to overnight.
  • In a coffee cup or deep jar, melt the chocolate wafers in the microwave in 30-second increments, stirring each time, until the wafers are completely melted.
  • Holding the toothpick, dip the truffle into the chocolate, swirling until it is completely covered. Shake the truffle into the cup of the extra chocolate on the truffle and gently scrape the bottom of the truffle on the side of the jar then place back on the parchment paper.
  • Once the chocolate has hardened (about 5 minutes), gently remove all of the toothpicks from the truffles.
  • Add the white chocolate wafers to a small plastic baggie and microwave in 30-second increments until the chocolate has melted. Twist the baggie so all of the chocolate moves to one corner of the bag, then make a very small snip with scissors to that corner. Drizzle the white chocolate on the top of the truffle, covering the hole the toothpick left.
  • Immediately sprinkle the white chocolate with a pinch of the crushed peppermint pieces.

8 ounces good-quality bittersweet chocolate
8 ounces good-quality semisweet chocolate
One 14-ounce can sweetened condensed milk
3 to 4 drops mint extract
8 ounces meltable milk chocolate
Decorator's sugar
Green food coloring

Steps:

  • Heat the dark chocolates and condensed milk in a double boiler over medium-low heat until the chocolate is melted and the mixture is smooth. The mixture will have a slight marshmallow texture. Stir in the mint extract to your taste.
  • Remove from the heat, and then cover and refrigerate until completely cool, at least 2 hours.
  • Once chilled, roll in teaspoon-size balls, and then dip into the melted milk chocolate coating, using a fork to let the excess chocolate drip off.
  • Color the decorators sugar with a small amount of green food coloring and sprinkle on top of the truffles.

200g milk chocolate , broken into pieces
¼ tsp peppermint essence (we used Sainsbury's)
icing sugar , for rolling

Steps:

  • Bring the cream just to the boil in a pan. Turn off the heat and stir in the chocolate. Stir until melted, then add the peppermint. Cool, then chill until the mixture is solid, about 2-3 hrs.
  • Scoop out teaspoons of the mixture and roll into small walnut-size balls with your hands, then roll in icing sugar. They will keep chilled for 3 days or freeze for up to 1 month.

9 tablespoons butter, cubed
2 tablespoons heavy whipping cream
1/4 cup confectioners' sugar
Additional confectioners' sugar

Steps:

  • In a microwave, melt the candy coating, butter and cream over low heat until smooth, stirring frequently. Stir in sugar. (If mixture separates, beat with a mixer for 30 seconds.) Pour into an 8-in. square pan. Chill for 20 minutes or until slightly hardened. , Using a melon baller or spoon, scoop out and shape into 1-in. balls. Roll in sugar. Store in an airtight container in the refrigerator.

These are so good. Just the right touch of mint. There's a 2 hour refrigeration period for the chocolate mixture to become firm enough to shape. Other than that, they're quick to make.

1 cup semi-sweet chocolate chips
2 tablespoons butter
1/4 cup heavy cream
3 tablespoons peppermint schnapps
3 tablespoons unsweetened cocoa powder
2 tablespoons icing sugar

Steps:

  • In a saucepan, combine the chocolate, butter, cream and schnapps and heat over moderately-low heat, stirring, until it is smooth.
  • Transfer to a small bowl and chill, covered, for 2 hours, or until firm.
  • In a small bowl, sift together cocoa and icing sugar and combine well.
  • Put bowl of truffle mixture in a bowl of ice and cold water.
  • Form the mixture into 1 inch balls, coating fingers with cocoa mixture to keep truffle from sticking, and roll balls in cocoa mixture.
  • Chill on a baking sheet lined with wax paper for atleast 1 hour, or until firm.
  • Serve in a dish garnished with fresh mint leaves.

Moist, rich, chocolaty truffles made with brownie mix that taste like a soft Thin Mint® cookie. Fancy enough to serve for company or at a party, yet super easy and affordable.

1 (18.4 ounce) package brownie mix
⅔ cup vegetable oil
¼ cup water
2 large eggs
1 (4.6 ounce) package creme de menthe thins (such as Andes®)
1 (12 ounce) bag semisweet chocolate chips
1 tablespoon coconut oil
green and while candy sprinkles (optional)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a glass 9x13-inch pan with cooking spray.
  • Combine brownie mix, oil, water, and eggs in a large bowl. Stir 50 strokes with a spoon. Spread into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 28 to 31 minutes. Remove from the oven and allow to cool slightly, about 10 minutes.
  • Break up warm brownies into a large bowl. Roughly chop mint thins and add to the bowl; stir until well combined, allowing the brownies' heat to slightly melt the chocolate.
  • Form mixture into 1 1/2-inch balls, pressing firmly so they hold together. Chill in the refrigerator for 20 minutes.
  • Combine chocolate chips and oil in a small microwave-safe bowl; microwave in 30-second intervals, stirring after each one, until melted and smooth.
  • Dip each brownie ball into the melted chocolate and turn with a fork to coat. Lift and allow excess chocolate to drip off. Place dipped truffles onto a tray lined with waxed or parchment paper. Top with sprinkles, if desired.
  • Refrigerate for 5 minutes (or let sit at room temperature for 20 minutes) until chocolate has set.
