¾ cup brown sugar
½ cup unsalted butter, softened
2 large eggs
½ tablespoon vanilla extract
1 ½ cups almond flour
¾ teaspoon baking soda
¾ teaspoon baking powder
1 cup white chocolate chips
½ cup peanut butter

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix brown sugar, butter, and eggs together in a bowl until light and fluffy. Add vanilla extract.
  • Stir almond flour, baking soda, and baking powder together in a separate bowl. Add to butter mixture until well blended. Stir in white chocolate chips and peanut butter.
  • Place tablespoonfuls of batter 2 inches apart onto ungreased cookie sheets.
  • Bake in the preheated oven until golden, about 20 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

This delicious cookie has a very similar taste to white chocolate REESE'S Peanut Butter Cups. They don't last long in my house. These were inspired by my husband that loves white chocolate. I made him plane peanut butter cookies and he wondered how they would be like with white chocolate in them. NOTE: this recipe does NOT contain flour!!!

1 cup crunchy peanut butter
1 cup sugar
1 tablespoon vanilla extract
1 egg
1/2 cup white chocolate chips

Steps:

  • Preheat oven at 350°F.
  • Mix all ingredients together well. Roll into balls made from 1 tbs of dough and place on baking paper covered cookie sheet. Place 1 inch apart. Bake in the oven for 16-18 minutes. Leave on the cookie sheet for 5 minutes before placing them on a wrack to finish cooling.

1 cup 2 sticks cold butter, cut into cubes
1 1/2 cups packed light brown sugar
2 eggs
1 1/4 cups smooth peanut butter
1 1/2 teaspoons vanilla extract
2 1/3 cups all-purpose flour
1/4 cup cornstarch
3/4 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup white chocolate chips
1 cup frozen white chocolate peanut butter candies (chopped)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine cold cubed butter and brown sugar until well combined. This takes slightly longer than with room temperature butter. Once fluffy, add in your peanut butter, vanilla and eggs, mixing until well combined.
  • In a separate bowl, combine flour, cornstarch, salt, baking soda and baking powder. Combine these ingredients with your wet ingredients, as well as white chocolate chips and candies, stirring until just combined. This is a fairly dry dough.
  • Scoop or drop cookies by spoonfuls onto cookie sheets. Because this is a fairly firm cookie dough, they will will not spread out a great deal, and instead somewhat hold their shape while baking.
  • Bake for approximately 9-12 minutes or until edges start to turn slightly brown. Remove from oven and let cool on cookie sheets for approximately five minutes, then transfer to wire racks to finish cooling. Store in an airtight container.
  • Makes approximately 4 dozen cookies, about 1 1/2" in diameter.

I love these rich, very sweet, addictive cookies. I adapted this recipe from one I found and loved on allrecipes.com. I have altered it somewhat to suit my tastes and my preferred baking techniques but this is based on the recipe known there as Aunt Cora's World's Best Cookies. Cook time is per batch, cooking one sheet at a time.

1 cup sweet unsalted butter, at room temperature
1 cup sweet creamy peanut butter (do not use reduced fat versions - I use Jiff or Peter Pan brands)
1 cup granulated sugar
1 cup brown sugar or 1 cup light muscovado sugar, packed
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F.
  • Have ready at least 2 baking sheets lined with parchment paper.
  • Cream butter until smooth.
  • Add peanut butter and both sugars and beat until combined well.
  • Add egg and beat well.
  • Stir in flour and baking soda gradually until well combined.
  • Stir in chocolate chips by hand.
  • Using a meatball scooper or a spoon, scoop out small portions of dough and drop onto parchment lined cookie sheets, leaving 2" gap between each cookie.
  • Bake for about 15 minutes or until cookies are just firm around the edges- don't overbake- if you wait until they are brown on top, they will be too hard.
  • Slide parchment sheet, cookies and all, carefully off pan and onto your counter, set a new piece of parchment paper onto your baking sheet and repeat until all dough is baked.
  • Meanwhile, as the next batch bakes, remove baked cookies from the parchment and let cool completely on wire racks.
  • Wipe off the crumbs from the old sheet of parchment and you can reuse it for your next batch.
  • These will keep about 3 days stored in a cookie tin (for crisp cookies) or an airtight plastic container (for softer cookies).

6 tbsp unsalted butter (softened)
1/2 cup granulated (white) sugar
1/2 cup light brown sugar
3/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda

1 1/4 cup all-purpose flour
1 cup semi-sweet chocolate chips (I use Ghirardelli brand)
1 cup peanut butter chips (I use Reese's brand)

Steps:

  • Preheat oven to 350 degrees and line two baking sheets with parchment paper or silicone baking mats.
  • In the bowl of a stand mixer fitted with the paddle attachment, add the butter, sugars, baking soda, baking powder and salt. Beat on high until light and fluffy.
  • Add the egg and vanilla and beat until combined.
  • Add the flour and both the chocolate and peanut butter chips and mix on low speed until the cookie batter is well combined with no streaks of flour remaining.
  • Use a cookie scoop to form 24 cookies (it might make a few more than 24). Place 12 cookie balls on each baking sheet. Bake cookies for 10 - 12 minutes, rotating sheets halfway through baking.
  • Remove cookies when they are just set at the edges. Cool for 10 minutes on pans. Then transfer to a cooling rack to finish cooling.
  • Cookies will stay fresh in an air-tight container for up to 3 days. These cookies freeze well too - for up to 1 month.

1 large egg

1/2 teaspoon baking soda
pinch of salt
1 cup white chocolate chips (, plus more for placing on the tops of cookies)

Steps:

  • In a large bowl using an electric mixer, cream the butter and peanut butter on medium speed until combined.
  • Mix in the sugar, egg and vanilla.
  • Add in the flour, baking soda and salt and mix on low speed until combined.
  • Turn of the mixer and fold in the chocolate chips with a large rubber spatula or wooden spoon.
  • Cover and chill in the refrigerator for at least 2 hours or up to 2 days.
  • When ready to bake, preheat the oven the 350F degrees.

1 egg yolk

1/3 cup roughly chopped honey-roasted peanuts
