These easy to make, buttery shortbread cookies with classic chai spices are a great recipe for holiday cookie trays and gift giving.

1-3/4 cups all purpose flour
2 teaspoons finely-ground black tea leaves
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1/4 teaspoon freshly-ground black pepper
1/4 teaspoon ground cardamom
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
pinch ground cloves
3/4 cup unsalted butter ((1-1/2 sticks), room temperature)
1/2 cup granulated sugar (, plus additional for sprinkling cookies)
1 teaspoon vanilla extract
4 ounces white chocolate (melted)

Steps:

  • In a bowl, whisk together flour, tea, salt, and spices. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and 1/2 cup sugar until light and fluffy. Mix in the vanilla.
  • Add the flour mixture in 3 additions, mixing on medium-low speed until just combined. Scrape the bowl between additions.
  • Turn dough out onto a lightly-floured surface and shape into a rectangle about 1-inch thick. Wrap in plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 325 degrees F and line a baking sheet with parchment.
  • Roll chilled dough between two pieces of waxed paper into a 9x10-inch rectangle (about 1/4-inch thick). Cut into 24 rectangular pieces. Transfer dough to baking sheet, spacing them about 1 inch apart. Sprinkle the top of each cookie with granulated sugar.
  • Bake 15-20 minutes, until the edges of the cookies are light golden brown. Cool cookies completely on a wire rack.
  • Place cooled cookies on a piece of parchment and drizzle the tops with melted white chocolate. Let the chocolate set at room temperature for about 10 minutes. Store cookies in an airtight container for up to 5 days.

1-3/4 cups all-purpose flour
1/2 cup sugar
1/3 cup cornstarch
1/4 cup vanilla chai tea latte mix
1 cup cold butter, cubed
1/2 teaspoon vanilla extract
3/4 cup finely chopped almonds
1/3 cup miniature semisweet chocolate chips
4 ounces semisweet chocolate, melted

Steps:

  • Place flour, sugar, cornstarch and latte mix in a food processor; pulse until blended. Add butter and vanilla; pulse until butter is the size of peas. Add almonds and chocolate chips; pulse until blended., Transfer to a lightly floured surface; knead until dough forms a ball. Divide dough into 6 portions; wrap separately. Refrigerate at least 30 minutes or until firm enough to roll., Preheat oven to 375°. On a lightly floured surface, roll each portion of dough into a 5-in. circle. Cut into 8 wedges. Place 2 in. apart on ungreased baking sheets., Bake 15-18 minutes or until edges begin to brown. Cool 1 minute before removing from pans to wire racks. Drizzle with melted chocolate; let stand until set. Store in airtight containers.

4 ginger tea bags
1 1/2 cups sugar
2 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground ginger
3/4 teaspoon baking powder
1/2 teaspoon ground allspice
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon finely ground black pepper
1/4 teaspoon kosher salt
2 sticks unsalted butter, at room temperature
1 large egg
1 teaspoon pure vanilla extract
1 cup dark chocolate chips

Steps:

  • Bring 2 cups water to a simmer in a small saucepan and add the tea bags and 1 cup sugar. Simmer 3 minutes, then remove and discard the tea bags (to keep the syrup from getting too bitter). Boil the tea until reduced to a syrup, about 10 minutes. You should have about 1/3 to 1/2 cup tea syrup. Let cool completely.
  • Whisk together the flour, cinnamon, ginger, baking powder, allspice, cardamom, cloves, pepper and salt in a medium bowl. Beat the butter and remaining 1/2 cup sugar together in a bowl using an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in 1/4 cup tea syrup, then the egg and vanilla, until smooth. (Reserve the remaining tea syrup for another use; see Cook's Note.) Reduce the mixer speed to low and beat in the flour mixture until just combined. Divide the dough in half, wrap in plastic and form into two 7-by-2-inch logs. Refrigerate until firm, at least 4 hours or up to overnight.
  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper.
  • Slice the logs into rounds about 1/3-inch thick, discarding the very end pieces. Arrange on the baking sheets about 1 inch apart.
  • Bake the cookies, switching and rotating the baking sheets halfway through baking, until crisp and light golden on the edges, 14 to 16 minutes. Let the cookies cool completely on racks.
  • Melt the chocolate in a small bowl in a microwave on 50 percent power, stirring every 30 seconds, until melted. Stir until smooth. Pour the chocolate into a sandwich-size resealable plastic bag and snip a tiny piece off one corner with scissors. Drizzle the chocolate in a zigzag pattern over the cookies. Let the chocolate harden before serving.

1 cup sugar
2 cups all-purpose flour, plus more for flouring
1 scant cup cornstarch
12 ounces white chocolate (not almond bark), chopped
Rainbow sprinkles, to decorate

Steps:

  • Preheat the oven to 325 degrees F. Line baking sheets with parchment paper or baking mats.
  • Cream the butter and sugar together. Sift in the flour and cornstarch and blend using a pastry cutter until the ingredients all come together. (If the mixture seems excessively dry, cut in 1 more tablespoon of butter--but only if you really need it.) Form the dough into a big ball, wrap in plastic wrap and refrigerate 20 minutes.
  • Roll onto a lightly floured surface and cut into rounds with a 3- or 4-inch round or fluted cookie cutter. Place on the prepared baking sheets. Bake for 20 minutes. Do not allow the shortbread to brown; check your oven sooner if it runs hot. Let cool.
  • Melt the chocolate in a bowl over a pan of boiling water, or in a microwave. Once the shortbread cookies have cooled, spoon a little chocolate onto each cookie, spread it out and sprinkle over some sprinkles! Allow the chocolate to harden for an hour before eating, storing or packaging.
